#toy txt post#while i was away i began my journey into coffee snobbery. im doing my best. i have a lot to learn#i have a fancy hand grinder that all the ppl on reddit hemmedvand hawed andaid it would probably be somewhat#Acceptable for pour over coffee that I got for less than $100. i want you to understand the coffee grinder ppl are insane.#there are grinders for sale that cost like more than my car did brand new. these ppl are insane? i got a chemex pour over#and a glass stovetop gooseneck kettle cos i couldnt find an electric kettle that didnt have the metal touching the water. prolly cos it#would make them less energy efficient and defeat the purpose but i dont fuck w metal water vessels cos historically They Keep Betraying Me#by making my drinks taste like ass. i got some genetic fuckery going on ig. like the cilantro soap gene but its the metal makes water taste#like ass gene? idk. but i wanted a kettle that didnt have metal and i wanted that gooseneck pour so i found one on Amazon. surprisingly#hard to find? annoying. mostly bc every search engine is bad and kept showing me metal kettles anyway. i got a grinder i got a pour over i#got a kettle i got fancy beans from a local small business i started drinking it black. im going to unlock these flavors. i will get it#but also. im still a goblin. i put garlic powder in with the grounds and made garlic coffee. its interesting. it tastes like garlic. and#coffee. but actually the garlic is mostly an aftertaste?#so it feels very similar to drinking a cup of black coffee to accompany your garlic bread actually. the first time i made it i think it#underextracted the coffee tho. second time i extracted the coffee enough but i didnt like it as much? both times. fascinatingly#i did not get strong aromas! which was weird: i find both garlic and coffee have pretty strong scents already#i wouldve thought combining them would make it stronger? it was a little stronger while brewing the second time but smelled good to me#i find the flavor of it compelling enough that id like to try to refine it a bit more and see if i can make it good#ive come a long way since my first garlic coffee haha#(adding garlic salt to black coffee out of a keurig. dont reccomend this: garlic salt has too much salt and it overpowers everything.#could not get a garlic flavor without overpowering salt flavors. so it mostly tasted like seawater with a hint of coffee. garlic powder is#the way to go. anyway next i want to try it with a lighter roast. i was using medium roast#of a local brand that i would name for exposure but wont name lest it doxxes me haha#also want to try egg coffee sometimes? the vietnamese one. looks..intriguing. robusta beans scare me a little tho#anyway. if youre interested in interesting flavors i recc garlic coffee. it was intriguing. if i find a methodology i think tastes best#ill update yall#im also interested in other things. i want to experiment with spicy coffee. chili powder or cayenne#make the paprika dracula coffee haha#im also admittedly intrigued by butter coffee? as a flavor profile tho not for fad diet reasons.

me: oh i'll buy my brother in law some fancy coffee because he is a coffee snob! i did that last year and it was a hit so might as well do it again. i am not really a coffee person, so i'd better check on what to buy him. now, dear google, what are the best coffee beans i can buy online?
me, two weeks later, well into the rabbit hole with at least twenty tabs open: hm, i'm not sure about this washed ethiopian single-origin with notes of cherry, roses, and pomegranate. maybe the other anaerobic processed ethiopian beans would be better even though they can come out a lot funkier due to the experimental processing. oh, but this particular roaster has been degrading in quality over the past few months, so maybe it'd be better to go somewhere else.
me, a week later: wow i've bought myself a pour over drip brewer and some fancy coffee and i now have Strong Opinions about the best independent coffee roasters in the U.S. oh and i finally bought the two bags of coffee i originally planned to get that started all of this nonsense in the first place.

Dialing in Espresso Grinders
What is it?
“Dialing in” refers to a process wherein a barista will adjust the dosage (amount of grounds in the portafilter), grind size (fine to course), weight (in grams), and extraction time. All four of these variables combine depending on your particular coffee shop’s espresso beans and recipes to make the perfect espresso shot. 
Extraction:
Once the coffee grounds have been tuned to your shop’s specifications, the “extraction” process begins. Simply put, this is just when hot water is forced through your grounds (now a coffee puck) at a certain pressure to produce the espresso. This is typically at “nine bars” of pressure. 
Depending on the extraction time, your coffee can come out in one of three ways:  under-extracted, perfectly extracted, or over-extracted. The easiest extraction time to recognize is under-extraction. If your espresso has come out under-extracted, it will taste overly acidic and sour. It may appear watery and light as well. A perfectly extracted shot can balance acidity, sweetness, and the bitter taste we normally associate with coffee to produce a beautifully rounded flavor profile. An over-extracted shot will have an ashy, burnt flavor. The bitterness will be the overwhelming flavor profile.
Specifications: 
Specifications can vary depending on the espresso beans used and each coffee shop’s own flavor profile preferences. It can also vary between regular and caffeine-free espresso beans. That said, an ideal starting place for practicing baristas is a dosage of 18g-21g. With normal espresso beans (caffeinated), start at 18g and then add more if necessary (we’ll go over how to determine when you need more later). Once you have 18g of espresso in your portafilter, we want an extraction time of anywhere from 25–32 seconds. Again, this depends on your espresso. Regular espresso may need less extraction time than decaf espresso. 
Pulling the shot:
Assuming we are starting at 18g, we can begin pulling shots. Tamp the grounds accordingly in your portafilter. The grounds should be smooth and level before you put the portafilter into the group head and pull the shot. Now, observe how quickly the espresso comes out after hitting the start switch above your group head. We want to see about 3-5 seconds between pressing the start button and when the espresso actually comes out of your portafilter. If the espresso comes out of the portafilter immediately, we know that either the tamp wasn’t hard enough or the espresso grounds need some fine-tuning. Fast usually means the grinds are too coarse, so the easiest way to fix it is to simply fine-up the espresso grinds. If the espresso is still coming out too fast, it’s time to adjust your dosage a few grams at a time. During this process, it may be the case that you need to coarsen up the espresso again and just add some more grounds to your portafilter. It’s all a balancing act. 
Now, what happens if you do all of this and the espresso takes too long to come out? Well, we take the opposite approach to the process that we did above. Suppose the espresso comes out like molasses and smells like burnt popcorn. In that case, make sure you aren’t tamping the puck too hard and increase the coarseness of your grounds until the time between hitting the start button and the espresso coming out is in the 3-5 second range. 
Tasting:
First, examine the shot visually. How does it look? Is there a layer of crema on top, and what color is it? Is the espresso itself orange or yellow? A good espresso shot will have a beautiful dark brown color paired with a thin layer of crema (the foam) on top. The crema should be an orangish brown. Not too light and not too dark. 
We also take into consideration the beans themselves. If the espresso beans are too fresh, it may mean the CO2 still present in the beans will cause more crema to form at the top of your shot. This can also mean that the espresso becomes more acidic, making it more difficult to dial in. 
Now, take your espresso shot and pour it back and forth between two shot glasses. This works to cool the shot, so it’s at a good sipping temperature and combines all the layers of flavors. Once you have poured the shot back and forth enough, take a sip and identify the flavors. Is the shot sour or just acidic? Does it taste burnt or bitter?
Tasting the shot is just another way to inspect the extraction. If your espresso is over-extracted, you will taste the burnt notes. If your espresso is under-extracted, you will taste the sour notes. The more you practice dialing in, the easier it will be for you to detect the different tasting notes in your espresso. 
Conclusion:
When it comes down to it, a lot of the dialing-in process with espresso can feel intuitive and artistic. However, coffee, at its core, is science. More specifically, it’s chemistry, so assuming your espresso is properly rested and you follow these guidelines, you should be able to find the perfect ratio for your own espresso.

One of the most memorable interactions was Saturday. Into our booth strolls a small family, tempted by free samples of freshly brewed tea. We chatter and give them the spiel, that the tea is character merch and we’re a cozy health-based app called Forage Friends.
The young girl zeroes in on our pride pins.
“They have my pin!” She says excitedly. “They have my flag!”
The dad blinks. He is surprised, but also calm and positive when he sees it’s the lesbian flag. “Oh. That’s… different from what you told me.”
“That was months ago, dad.” And she rolls her eyes. Definitely a teenager.
I turn to him and say, “Yeah, dad.” And we share a little laugh about it.
He says, “No, it’s great. That’s amazing, honey. It was just news to me.”
“Well, I guess I just decided to stop lying to myself. About liking guys. Like right now.”
A little lesbian just came out to her dad and he was super cool about it.
I’m standing there in my tie-dye mask and my cheery blue apron pouring tea and making small talk and I’m trying really hard not to cry or compare it to my experience, the fire & brimstone, the disgust, the conditional acceptance as long as I never bring it up.
So as this beautiful bonding is going on, the girl’s even younger brother turns his gaze around. He’s in a snorlax hoodie and bored and wants to go look at the swords across the hall. But on the other side of our booth….
“WHY DO PEOPLE DRAW THAT?” He asks loudly, and we all turn to our neighboring booth.
Our neighbors were extremely lovely people. Every time we had a break we would talk, and we became good friends over the weekend. They kept apologizing that their booth was next to ours and we kept repeating that it was totally fine. Their booth was great. I even bought their merchandise.
The thing that was so contentious, that they felt the need to apologize for, was that they were selling explicit titty hentai stickers of popular characters. They were censored with little yellow R18 labels but the content was very clear.
So back to the family: I freeze and immediately go somewhere else to let dad handle this question. With adult customers I’ve been loud and positive about our neighbors. (“Man, how has it been boothing next to them?” It’s been great! They bring a lot of foot traffic and they’re kind and wonderful professional neighbors. If anything it’s a fun juxtaposition. We believe in artistic freedom. I bought a sticker too!)
But this is a kid, it’s not my place to explain anything…. But I was extremely curious about what this chill dad would say.
“Well,” dad says with a long measured silence between each word. “Sometimes people are horny.”

Excited to see Smoking Tiger open their first location in the SGV. I’ve been to two of their other locations and am a fan.
STCL is more coffee focused than the other branches that I visited and it’s also smaller. They have fewer types of pastries, unfortunately. I think the drink menu is the same as the one I saw in Whitter. Choose from espresso drinks, pour over coffee, drip coffee, cold brew, signature drinks, Jeju matcha, and Korean drinks like the banana milk latte, mugwort latte, and Korean honey oat.  They roast their own coffee beans and seem to take coffee seriously. Milk options include whole milk, oat milk, and almond milk.
Freshly baked offerings include scones, and scronkie (a cross between a scone and a cookie). They invented a cross between a cookie and a scone. They also had mochi. Maybe they’ll have more offerings later.
Sweet corn latte (served cold, $6.5): milk with corn cream top and espresso. The espresso was strong and the corn flavor was a bit unusual but still enjoyable. Their drinks are really good.
Purple sweet potato mochi ($2.50): Looked like a purple sweet potato. The filling was mashed sweet potato. It didn’t seem sweetened beyond the natural sweetness. It was surrounded by a thin mochi wrapper. Really enjoyed it.
Earl Grey lemon scronkie ($5): It was more like a scone than a cookie, maybe. It was thick and moist with some lemon cream cheese that wasn’t very lemony. The Earl Grey flavor wasn’t strong. Prefer their scones.
The shop has some seats. The logo and signs are very cute.  Coffee beans and coffee accessories for sale. The shopping center is a busy one, so parking might be an issue.

I didn’t realize that Stumptown closed their downtown (DTLA) location and probably shipped the roaster back to Portland. It’s nice to see that they’ve moved to the west side of Pasadena. It’s already a camping hot spot.
Score: 40/50
Food: 5/5 – There is no kitchen, so the food options are limited to pastries from Bread Lounge (croissants, Danish, muffins, kouign amann), Mush overnight oats, and fruit parfaits. Bread Lounge is an excellent local bakery. I enjoyed the pain au chocolat which had more chocolate than usual.
Coffee: 5/5 – For coffee, they have espresso drinks, drip coffee, cold brew, and pour over coffee. They also have Spirit Teas, hot chocolate, chai, and matcha. Espresso drinks feature double shots. Plant-based milk is not an extra charge. Milk options: Whole milk, skim milk, oat milk, almond milk. The cappuccino (6 oz, $5.25) featured excellent foam art and the flavor was stronger/bolder and less clean than your typical Portland espresso drink.
Wi-fi: 4/5 – Free, unlimited, no password required but you have to accept the terms and conditions before connecting
Ambiance: 5/5 – Modern, bright, stylish, like a hipster’s living room with art, plants, brick walls, and vinyl records
Noise: 4/5 – Music was loud but campers were quietly typing away
Plugs: 0/5 – Didn’t see any
Parking: 4/5 – Parking in the back, also easy to find in the neighborhood (though limited to 2 hours)
Comfort: 4/5 – New chairs, nothing was padded, smaller tables, some space between tables, lights are pretty bright
Bathroom: 4/5 – One nice gender neutral restroom
Art: 5/5 – Plenty
Tips: Ask for a drink stamp card. They also have an app that you can use to order ahead. And they sell Stumptown merch, coffee beans, and coffee brewing accessories.
