Avocado toast with egg - 4 ways! ⠀⠀⠀⠀⠀ Instructions • Toast the keto bread in a toaster until golden and crispy, place the quarter avocado over the toast, slice it and mash it on top of the toast. Top with eggs of choice, and season with salt and pepper, to taste. • For fried eggs: Heat butter in nonstick skillet over medium-high heat until hot. Break the egg onto the skillet and immediately reduce the heat to low. Cook uncovered until whites are completely set and yolks are thickened to your liking, about 5-7 minutes. • For scrambled eggs: Heat butter in nonstick skillet over medium-high heat until hot. Whisk the eggs in small bowl, then carefully pour into the center of the pan. When the edges start to set, start to gently fold the eggs until the eggs are cooked through, about 2-3 minutes. • For boiled eggs: Place the eggs in a saucepan. Pour cool water over the eggs until fully submerged. Bring the water to a rolling boil, then reduce the heat to low and cook according to the desired doneness: 4 minutes for SOFT boiled; 6 minutes for MEDIUM boiled; 12 minutes for HARD boiled. Prepare a bowl of ice water. Transfer the cooked eggs to the ice water to cool completely before peeling. • For poached eggs: Bring a large pot of water to a boil. Crack one egg into a small bowl. Stir vinegar into the water and create a vortex with the boiling water. Lower the heat so the water creates a rolling boil at the bottom of the pot. Then, carefully add the egg to the middle of the pot and cook for 3-4 minutes, according to desired doneness. Remove the egg with a slotted spoon. Falafel Flat Bread - No Oven and Oven both recipe of very popular Middle Easter snack, enjoyed with Hummus. Ingredients : To Make Falafel Bread : 1 cup chickpeas(chole - soak overnight) 1 chopped onion(medium size) 2 chopped garlic cloves Some finely chopped fresh green chillies Salt as per taste Crushed black pepper 1 tsp roasted cumin seeds(jeera) powder Some coriander powder 1/2 cup gram flour(besan) 1/2 tsp baking soda 1 tbs oil(any cooking oil) 2 tbs water To Make Hummus : 1 cup boiled chickpeas with some ginger 1.5 tbs Tahini paste(recipe of Tahini paste is in description) 1 finely chopped green chilli 2 chopped garlic cloves White sesame seeds (for Tahini paste) 3 tbs curd(2 tbs for Tahini paste) Some chilli flakes 1/2 lemon juice 4 tbs water used for boiling chickpeas 1 tbs olive oil (or 1/2 tsp sesame oil) Salt For Toppings : Hummus Chopped cherry tomatoes Chopped black olives Some fresh coriander/mint leaves Cream cheese Chopped boiled beetroot Chopped colourful bell peppers Some sesame seeds(til) Some chilli flakes Some roasted cumin seeds(jeera) powder Salt(to sprinkle) Method :- To Make Falafel Bread : Take a chopper/mixer jar, add 1 cup chickpeas(chole - soak overnight) Add 1 chopped onion(medium size) Add 2 chopped garlic clove Add some coriander powder and grind the mixture coarsely. Then add a small bowl of fresh coriander, again grind it to the rugged texture and transfer the mixture in a mixing bowl. Further to make bread, add 1/2 cup gram flour(besan) in the bowl(can be replaced with maida) Add 1/2 tsp baking soda Add 1 tbs oil(any cooking oil) Add 2 tbs water, mix it well and rest the mixture for 10-15 mins Pre heat oven for 10 mins at 190⁰ Further take a flat baking tray, and place a baking paper on it greased with oil. Many times I have tried to cut all sweet items from my diet only to cave in and binge😩. Nowadays I make my own sweet treats so I know exactly what goes in, I also eat and test to ensure I am not pushing my sugar levels up too much. Following recipe is a banana and blueberry bread with a few tweaks to keep the GI and GL down. Banana and blueberry bread 1 and a 1/2 cups of chickpea flour 2 ripe bananas mashed 1/2 cup of frozen blueberries thawed 1/4 cup sugar free maple flavoured syrup, I use Lakanto brand 1/3 cup light olive oil 1 or 2 tsp chia seeds 2 tsp vanilla extract 1/2 tsp ground cinnamon 2 eggs 1 tsp Bicarb soda 1 tsp apple cider vinegar 1 pinch of salt Preheat your oven to 155 degrees C. Simply throw all ingredients into a mixing bowl and use a large spoon to combine them, you don't need to overdo it, just so it is all mixed together. Grease and line a standard loaf tin and pour it in. Place on the middle rack of the oven and cook for 40 to 45 minutes till a wooden can be inserted in the middle and come out clean. There are lots of great brands popping up these days offering healthier premade sauce options. Enchilada sauce should only contain a few simple ingredients such as tomato sauce, vinegar, spices, herbs, garlic and onions. We definitely want to AVOID sugar, dyes, and oils like canola oil or vegetable oil. So flip those jars around and read the labels.
