Ale, a bit of a polemic question. How often in the ballet world, is romantic relationships with a big age gap? I don't know if this is a Russian thing, a ballet theater thing, but I see a lot at the Russian ballet, couples with big age difference, with the men being way older. Is it also common where you work? And is this also common in the ballet around the world as well?
I think a large part of age gaps in relationships in Russian companies is a cultural thing. The average age of marriage for Russia women is around 25, the youngest in Europe and significantly younger than most other developed countries. It's not unique to ballet, you can see similar age gaps and relationship trends where young, potentially vulnerable but conventionally attractive women end up with much older men in gymnastics, rhythmic, figure skating etc.
However, I do think that the power dynamic of men in ballet plays a role. Young girls often start partnering with older boys, simply because it's easier to start building pas de deux skills when the guy is a bit older and stronger. Guys know they're special because they're a minority and are often given additional privileges and this often gets to their heads and reflects in how they enter relationships- often choosing people who look up to them or allow them to feel the benefits of those privileges. It's also just the patriarchy of society as a whole that has been established throughout history......

I can still remember the day I walked into my first ballet class. 
I remember being the first one there. I remember walking into the studio and feeling awestruck. It was just like the ones on TV, all mirrors and wooden floors, and ballet barres wrapped around the whole room.
I remember running over to the barre and staring at myself in the mirror. Black leotard, pink tights, pink skirt, pink shoes, 4C hair pulled into a puffy bun because Mommy refused to use gel. 
I remember Mommy and Professora talking in the corner. Professora was shocked at how early we were and Mommy explained that I didn’t like to be late. I don’t remember what they talked about after that, I was busy at the barre, holding my balance in what I would soon come to know as relevé but at the time was just my tippy-toes. 
I remember them calling me over. Mommy and I followed Professora into a tiny storage room. Its walls were lined with shelves, the upper ones filled with boxes upon boxes of ballet shoes. The lower ones were for students to leave their bags. 
I remember there being a swing set, playhouse, and a picnic bench outside. I remember sharing snacks and playing outside with the other girls. 
The building is there, although it’s not a ballet studio anymore. 
The playhouse is still there too.

It seems like super tall ballerinas are getting much rarer—at one point it seemed like the Bolshoi had a minimum 5’8” height requirement for women (back in the day….) while nowadays a woman approaching six foot seems to be considered almost un-partnerable. Curious about why you think that is/if there has been as big of a shift from the ideal prima being tall to small as it seems on the outside.
I'm not sure it's been tall to small, but more tall to average?
There's still plenty of tall, leggy ballerinas but it's becoming much more common to see dancers who look tall due to exaggerated proportions, then dancers who are in the 170-175+ height range. I think it has somthing to do with the 'technical revolution' that's been happening. There's a push for more turns, crazier jumps etc as that's what competitions and the media have been largely rewarding.
It's physically easier for shorter dancers to do more pirouettes, shorter limbs are quicker and lighter to move and easier to place. This is not about weight or anything at all, this is just simple physics. How many tall, leggy guys do you see doing a dozen pirouettes or chucking triple tours or 540s. Think about gymnastics or skating for instance, all the quads are physically more possible with shorter, more compact body types.
Rewarding people who can do the technical feats results in a talent pool that favors average height dancers, I would say around 165cm (5'5"). Why not short dancers, if we're comparing to gymnastics? Ballet is comparatively less extreme, and also balances aesthetics more clearly. There has long been the perception (and has been often proved wrong) that shorter dancers do not have the line or the elegance of taller dancers, so the ideal has ended up someone in the middle as a compromise.
You are right that this espeically becomes problematic for taller girls because it becomes difficult to find them partners. Especially for classical ballet, pas de deux is much easier if the girl is shorter than the guy. A 5'10 girl will likely be taller or the same height as a guy who is 6'1" or 6'2." So she needs to dance with someone who is quite tall...and there's often not a lot of options. Not only are tall guys in high demand but many taller guys are now less attractive hires, because they lack the coordination to do the crazy tricks. Directors ideally want guys who can DANCE, in addition to partner. Sometimes it's simply hard to find or hire a partner for a very capable girl, so she just doesn't get hired.
However, taller guys with solid partnering skills get hired all the time just to partner with taller girls. But the numbers have to make sense, if a small company has just that one tall guy It's not smart to hire 5 or 6 girls if you only have one guy that can partner with them- there are hiring and financial constraints as well. Lots of factors here
