I tried this recipe for the first time and all Nick said was “omg.” over and over. I guess I will be adding this one to the rotation. ;) This recipe makes a pretty large quantity, but will make great leftovers, so we didn’t mind! 
Cheesy Chicken Pasta
Ingredients: • 2 Cups Cooked Diced Chicken • 2 Tbsp. Garlic, Minced • 1 Can Sloppy Joe Sauce + 1 Can Water • 2 Cups Chicken Broth • 1 Box of Pasta (I used whole wheat rotini, but any small pasta will do!) • 2 Cups Shredded Cheddar Cheese • 1 Tbsp. EVOO
Instructions: Heat a small amount of EVOO in a large pot. Add garlic and sauté for one minute. Then add cooked chicken and sauté for a couple of minutes. Add chicken broth, sloppy joe sauce, water, and pasta to the pot. Bring to a boil. Reduce heat and simmer for about 20-25 minutes or until pasta is cooked through. Remove from heat and stir in shredded cheddar until completely melted. Enjoy the cheesy goodness!

Tonight I made an awesome combo of two really yummy, healthy meals. Both warm up really well, so don’t be scared to make a large batch and eat these for leftovers!
Skinny Mashed Sweet Potatoes
Ingredients: • 4 Medium Sized Sweet Potatoes, cubed and boiled • 3/4 Cup Plain Greek Yogurt • 2 Tbsp. Agave Nectar • 1 Tbsp. Cinnamon
Directions: Cube peeled sweet potatoes and boil them until soft or cook until tender in the microwave. Remove the skins if cooked in the microwave. While warm, place potatoes into a medium sized bowl. Add Greek yogurt, agave nectar, and cinnamon and mash with a potato masher or wooden spoon. Mix well. Add more Greek yogurt as a topping if desired.
Mini Meatloaves
Ingredients: • 1 lb. Lean Ground Beef • ½ Yellow Onion, chopped • 2 Egg Whites • ½ Cup Quick Oats • ¼ Cup Ketchup • ¼ Cup Tomato Sauce • Pinch of Salt, Pepper, and Garlic Powder, to taste
Directions: Spray muffin tin with oil. Mix all ingredients minus the ketchup and then scoop into balls and place in the muffin tin. Drizzle ketchup on top of the meat. Bake at 400o F for 35-40 minutes or until meat is cooked through.

Lasagna Roll Ups
Ingredients: • 9 Lasagna Noodles, cooked • 1 ½ Cups Baby Spinach, torn into pieces • 2 Cups Ricotta Cheese • ½ Cup Parmesan Cheese • 1 Egg • ½ Tsp Minced Garlic • ½ Tsp Italian Seasoning • ½ Tsp Pepper • ½ Tsp Salt • ½ Pound Ground Turkey (or Lean Ground Beef), Cooked • 1 Cup Pasta Sauce • 1 Cup Mozzarella Cheese
Directions: Preheat oven to 350o F. Cook lasagna noodles according to package instructions. Cook ground turkey on a skillet with salt and pepper until cooked through.  Set aside. In a bowl, mix ricotta, spinach, parmesan, egg, garlic, Italian seasoning, pepper, and salt. Add in ground turkey. In a small baking dish, place 1 cup of pasta sauce around the bottom evenly. Lay lasagna noodles on a piece of wax paper and dab with a paper towel until the moisture is gone. Spread cheese mixture evenly over each piece of lasagna. Roll up the lasagna noodles. Place in the baking dish with the end at the bottom. Top lasagna rolls with remaining sauce and mozzarella cheese. Place aluminum foils over the top of the dish tightly and place the pan in the oven. Bake for 40 minutes or until cheese is slightly golden.

Today’s recipe is my all time favorite crockpot recipe! The beef and the carrots soak up so much juice and flavor that Nick does a little happy dance every time he takes a bite! THAT good! So without further ado....
Crockpot Balsamic Beef Roast and Carrots
Ingredients:
2 pound boneless beef chuck shoulder roast
2 pounds carrots, chopped (you can use a bag of frozen carrots, but fresh carrots are so much better in this recipe! Trust me!)
1/2 cup honey (I use pure unfiltered)
1/4 cup balsamic vinegar
1 Tbsp low sodium soy sauce
1 tsp salt
1/4 tsp red pepper flakes
3 cloves of garlic, minced
2 cups of beef broth
Directions:
Add ingredients to the crockpot. Cook on low for 8-12 hours or until the beef falls apart and the carrots are soft.

Green Smoothie Shakeo
I've been sneaking a serving of fruits and veggies into my shakeology lately and it's SO good!!
-Ice -Almond Milk -1 scoop or packet of Vanilla Shakeology -A handful of strawberries -A handful of spinach -Half a banana
Blend and enjoy!

I've been seeing these things all over Facebook from different coaches and challenger and why I haven't set aside the two minutes it takes to make these before, I have no idea! These are so GOOD! Perfect little 21 Day Fix approved treats!
No Bake Shakeology Balls
-1 Scoop of Shakeology (I used chocolate, but I'm sure vanilla would be yummy as well!) -1 cup All Natural Peanut Butter -1 cup of Old Fashioned Oats, uncooked (I used quick oats and they turned out just fine!) -2 Tbsp honey (I used raw, unfiltered)
Mix all ingredients in a large mixing bowl! I used my hands to mix them! Roll into 1 inch balls! Enjoy right away or throw in the fridge for later!

Just got done making these yummy, 21 Day Fix approved protein balls! Perfect for my sweet tooth! ;)
Chocolate Chip Cookie Dough Protein Balls
-2 scoops Vanilla Shakeology -1 cup Almond Meal -1/2 cup nut butter (I used natural peanut butter) -1/2 cup pure maple syrup -1/4 dark chocolate chips
Directions: First blend together vanilla Shakeology powder and almond meal. Then add nut butter and maple syrup. Lastly, add the chocolate chips. Take dough and form 2" balls. Refrigerate.

This recipe is a staple in our house! Who doesn’t love some good comfort food?? I’d say this one gets made almost once a week!
21 Day Fix Lasagna
Ingredients: -2 yellow containers of whole wheat lasagna noodles (or any whole wheat noodles you have on hand -1 red container of lean ground beef (or ground turkey) -1 red container of ricotta cheese -1 egg -2 loosely packed green containers of spinach -fresh chopped parsley -2 blue containers of mozzarella -2 purple containers of organic marinara sauce
Directions: Preheat oven to 375. Start to boil noodles and in a separate bowl, combine ricotta and egg. Tear up your spinach into tiny pieces and add to the ricotta mixture along with your parsley. In another bowl, combine marinara and ground beef. In a small pan (8"x8"), put a small amount of the sauce on the bottom. Add half of your noodles, half of your ricotta, and then 1 blue container of mozzarella. Repeat this order for a second layer. Bake for approx. 25-35 minutes or until cheese is starting to lightly brown.

Lean Ground Turkey and Sweet Potato Skillet
Who says eating healthy has to be boring??
Tried out this super yummy and QUICK skillet recipe tonight and it turned out AMAZING! I always get a little nervous trying new recipes because I’m scared they won’t turn out, but I’m such a foodie that I NEED to constantly change up my meals! I’ll never be a “chicken and veggies 3x per day every day” kind of girl….I LOVE comfort food! And this recipe definitely lives up to my standards! smile emoticon:)
Recipe below:
Lean Ground Turkey and Sweet Potato Skillet
-2 Tbsp EVOO -1 lb extra lean ground turkey -1 tsp garlic clove, minced -1/2 cup onions, diced -1/2 cup yellow pepper, diced -1 ½ cup sweet potato, diced -Salt and pepper -Pinch of chili pepper -1/2 cup shredded mozzarella cheese -Fresh parsley for garnish
In a skillet, heat olive oil over medium heat. Add ground turkey and garlic. Stir occasionally and cook for about 10 minutes. Add onions and peppers and cook until onions are golden brown. Add sweet potato, chili pepper, salt, and pepper. Cover skillet and cook until they are tender. Stir occasionally. If needed, add more olive oil or a little water to cook sweet potato. Top with mozzarella cheese and parsley. Enjoy!
