hi, fantastic cake, well done. How do you mould the pressed sugar to create a vase though?
Moisten granular sugar until it is the consistency of wet sand and just barely sticks together. Pack it into a mold and unmold while still wet as though you were making a sand castle. Depending on the the size it can take several days to dry out completely, so just leave in a dry place in the open air until it is hard as a rock.

Hi, I have a recipe asking for 25grams of glucose powder which I have not been able to find in Australia. Would you have any idea how much liquid glucose I should substitute? Thanks so much. Ursula
Depends on the recipe but personally i would just go with 25g of liquid glucose or if you cant find liquid glucose use corn syrup and maybe go with like 30 grams of that. Generally glucose is more of a stabilizer than anything to help stop crystallization so i doubt in such a small quantity it'll disturb the recipe. Like I said it depends on the recipe but in general I don't think it will make that big of a difference.

No unfortunately I kinda forget to take pictures of the process and by the time I remember I am almost finished:( But her body was made out of cake and her head was sculpted out of rice crispy treats. I covered that with a thin layer of butter cream and then covered her with the appropriate coloured fondants.

I am so happy to find out such a useful information. Could you please tell me what the ratio of glucose and water should be. Thanx and highly obliged.
I don't have an exact ratio but like I said in my post about it you just have to barely saturate it and then dissolve all the lumps over heat and its usually good to go.

Made my boyfriend a pretty sriracha cake for his birthday. He is a celiac so the entire cake is make out of gluten free rice crispy treat. Lots of fun to make, though not my tidiest work. I piped all the white on with royal icing.

Birthday cake I made for a friend.
All the decorations are made from gum paste, royal icing, sugar and fondant. The vase on top is made out of pressed sugar and covered in fondant. I hand painted porcelain inspired flowers onto gum paste and then framed them with piped royal icing. Once that dried I painted the icing gold to create the look of an antique frame.The gold accents on the top tier were all created individually by hand and then painted gold. I used gum paste for the fabric effects and piped the beaded border out of royal icing.
The only mold I used was for the border on the vase. All the painting was done with petal dust mixed with vodka. Overall a very time consuming cake but I really enjoyed creating it.

Swan Lake Ballet Cake
This cake was super fun to do because there is nothing more satisfying than painting things gold. It is a chocolate cake with vanilla butter cream covered in fondant. I made the ballerina out of modeling chocolate and did all the piping with royal icing. The little roses are gumpaste though and I used gold dust and lemon extract to paint on the gold accents. Love this cake it makes me happy and I really enjoyed having an excuse to do some string work even though its not really in style right now.

I had to do a horse themed cake that incorporated western and english riding as well as wildflowers. This was my interpretation, it was really a cake out of my comfort zone but I did my best and this is the final result. Overall i'm happy with it and its a formula I could easily change and customize to a different theme or colors.
It was fun playing with the tooled leather look and learning about the style to do the panels. All the flowers are handmade with gum paste and the panels and horse bit are modeling chocolate. I hand carved all the detail on and then added an antique finish with dark brown food coloring. I figure it will be good to have in my portfolio since I will be going down to Texas for a bit and Texans like horses right?

Cake decorated with modeling chocolate. The cake was painted pink then I used small individual cutters to create the lace effect on a separate piece of modeling chocolate to place over top. I love doing patterns like this and got carried away by adding 2 more tiers made of only modeling chocolate. The blue was was painted on the base of the  smallest one to help highlight the lace on the second one. It kinda reminds me of early 90's household decor when people stenciled everything.

Sculpted Hello Kitty cake. Body is cake with buttercream and fondant and the head is 1/3rd cake and 2/3rd rice crispy treat. I put some glitter on her clothes but you cant really tell in the photo.

Ivory wedding cake design inspired by Marie Antoinette . I kept the color scheme very simple to focus on the different textures. Also fewer colors makes it more reminiscent of a wedding dress which tend to be fairly monochromatic.  Fondant cake decorated with gum paste details, I really enjoyed manipulating the gum paste to create the fabric effect.
