Puerto Rican-style Sofrito Recipe

INGREDIENTS:
1 bunch Culantro or 1-1 1/2 bunch Cilantro
3 onions, peeled
2 bell peppers (either green or red), seeded
2 heads of garlic, peeled
DIRECTIONS:
Wash and prepare vegetables. Put everything in a food Processor and process until well crunched up. DO NOT Puree. This is suppose to be a little chunky.聽
This recipe, my amazing boyfriend introduced to me the first time I saw culantro in a supermarket (he was luckily with me). If it is unknown to you, it is a cousin of cilantro except it is much stronger in flavor and smell. He told me that in Puerto Rico they make Sofrito out of it. I looked at him weird since the only sofrito I had ever seen (mainly when I was cooking for him) was red.聽
Apparently the sofrito in Puerto Rico is GREEN.
This little gem I have learned about is absolutely amazing. A tablespoon or two goes a long way in any dish.聽

Smokey Plant-based Chili

Ingredients:
1 cup black beans
1 cup pinto beans
1 cup TVP
1 cup red lentils
1 cup corn
1 bell pepper, chopped
3 stalks celery, chopped
1 med onion, chopped
2 tbsp minced garlic
1 can (15 oz) petite diced tomatoes
1 can (4 oz) tomato paste
4 tbsp chili powder
1-2 tbsp garlic Powder
1-2 tbsp onion powder
1 tbsp smoked paprika
1 tbsp cumin
1 tsp cayenne pepper
1 tbsp liquid smoke *optional
INSTANT POT Directions:
Put everything in the instant pot. Stir. Put on manual for 35 minutes. Release immediately or whenever ready to eat. Can store for up to 7 days.
Right at the moment, I do not have stove top instructions. I will play around with that and get back to this post for those who do not have a pressure cooker.聽
MAKES 10+ Servings (depending on serving size)
This is my go to, once-a-month meal that helps with my health journey. My boyfriend loves this recipe so much that he likes to add my Potato Cheeze sauce聽to it and eat it with corn chips while playing Destiny. He鈥檚 so CUTE!聽
But really I could eat this meal every day without getting bored. I could probably eat the whole pot within a day if I really felt like it.聽
Its high protein, low fat and packed with really good carbs for you to go go go!

Easy Potato Cheeze

Ingredients:
2 medium potatoes, peeled and roughly chopped
1 large carrot, peeled and roughly chopped
1 onion, any kind, peeled and chopped
2 cloves or 2 tbsp minced, garlic
1 tsp salt
陆 cup nutritional yeast
陆 or more cup water
聽Optional Ingredients
1/4 cup cashews, soaked
Smoke paprika, adobo, jalapeno, lime pepper, lemon pepper, (really anything!)
Directions:
1. Peel and chop potatoes, carrot and onion. Add to a pot and boil until tender. Or if using an instant pot put it on manual for 8 minutes.
2. Once the potatoes, carrot and onion are finished place cashews in a blender with the root vegetables, garlic, jalapeno, salt, nutritional yeast, and water. Blend. Add in more water until desired consistency.
Makes 10-15 servings
This cheeze Sauce that I made is highly influenced by High Carb Hannah from her youtube channel. She is the first person that I saw suggest to make a cheesey sauce with potatoes. I was astounded the first time I tried her rendition. It was good! So I started to play around with it. I found a good balance in flavors for my self and that is what I usually stick to, only adding extra things when I鈥檓 looking for a specific flavor.聽
The boyfriend devours this sauce so fast I have to reserve my own jar just to have some for my later meals. This sauce is good with almost eveything!

Puerto Rican-Style Cauliflower Rice and Seasoned Jackfruit

Plant-based Puerto Rican-Styled Cauliflower Rice with Pink Beans Recipe
Ingredients:
1lbs riced cauliflower (I had the steamable microwave bags)
1 15oz can Goya pink beans
1 ear of corn or 3/4 cup of corn
1/2 medium onion, chopped
1/2 tbsp garlic
1 tbsp Recaito or Puerto Rican Sofrito
1 pkt Sazon
1-2 tsp Adobo (optional)
Directions:
1. Put a large ban or wok on medium-high heat. Place onion, garlic and sofrito in pan. Mix well. Cook until onion is tender.
2. Add in corn (off the cob), pink beans and adobo. Stir well and let cook for about 5 minutes.
3. While corn and beans are warming up, Steam the cauliflower rice.
4. Add Sazon and cauliflower rice to the bean and corn mixture. Stir well. Cook for another 5 minutes.
Serve hot!
Makes 4 servings.
Puerto Rican Style Seasoned Jackfruit
ingredients:
1 can jackfruit
1 tsp olive oil (or coconut oil)
1/2 tsp onion powder, garlic powder, smoked paprika, liquid smoke, adobo
dash of pepper and salt (to taste)
1 tbsp water
Directions:
1. Drain the jackfruit. Cut large pieces into smaller ones. Rinse. Squeeze out excess liquid. Rinse again. Squeeze out all excess liquid and place in a medium sized bowl.
2. Preheat oven to 400 degrees.
3. pour 1 tsp of olive oil over the jackfruit. Mix well. Add all seasoning and mix thoroughly.
4. Place jackfruit on a parchment lined baking tray. Sprinkle the water over the jackfruit.
5. Bake Jackfruit in oven for 12 minutes.
Serve hot!
Makes 2 servings.
My boyfriend just happens to be Puerto Rican and I just happen to be handy in the kitchen, and that makes for a lovely combo. He talks about all the different foods that they have, Pernil, Rellenos de papas the size of an infants head, mofongo (although he isn鈥檛 a big fan of that one), and many many more.
I just happen to be on a health journey that was set back, so I decided I wanted to make my versions of the food he knows and loves, and create a plant based version so I can experience them too.
I made these recipes in quite a hurry, but DANG! did they come out so delicious!
