Chocolate Zucchini Bread🍫🥒

What a great use for summer squash and a delicious treat to boot, right??😋 This quick bread is simple to make and has just the right amount of moisture and sweetness. Cinnamon and ground coffee add an interesting kick to the flavor that will keep you coming back for more.❤️
Directions:
Yields 2 loaves
-4 cups grated zucchini (3 large zucchini)
-2 1/2 cups all-purpose flour
-1/2 cup unsweetened natural cocoa
-2 tsp. baking soda
-1/2 tsp. salt
-1 tsp. cinnamon
-1 1/2 cups granulated sugar
-2 eggs
-3/4 cup butter, melted
-1/2 tsp. ground coffee
-2 tsp. vanilla extract
-1 cup chocolate chips
1) Drain excess moisture from grated zucchini - place in a sieve or strainer over a bowl to catch moisture while you prep the other ingredients.
2) Preheat oven to 350F, with rack in the middle. Grease two 9"X5" loaf pans.
3) Whisk together flour, cocoa, baking soda, salt and cinnamon in a large bowl. Whisk until there are no more clumps and ingredients are well combined.
4) Beat eggs and sugar in a mixer. Add melted butter, ground coffee and vanilla extract and beat until smooth.
5) Stir zucchini into egg mixture. Add the flour in three additions, stirring to combine after each addition. Add in chocolate chips.
6) Work quickly and divide batter between two loaf pans (leavening has begun). Place in oven and bake for 50 minutes or until a knife in the middle comes out clean.
7) Cool on a rack. After 5 minutes, remove from pans and let cool completely. Enjoy with morning coffee or as an after dinner dessert!

These cookies are a tried and true favorite at picnics, potlucks and parties and I finally made them myself! I was pleasantly surprised that they were incredibly easy to make (no flour, no baking) and turned out so delicious as well. I will definitely be making these again sometime when I need a quick and easy dessert full of rich chocolate and peanut butter flavor!🤤❤️

Greek Chicken Gyros with Tzatziki🥙❤️

This chicken gyro recipe is great if you want a light, healthy summer meal. The souvlaki marinade for the chicken is delicious - I only marinated it for an hour and it was enough time to seep in. The Tzatziki is delicious as well but I think next time I would get store bought Tzatziki because it was a lot of prep as well as the prepped veggies and marinade. However all that prep work is worth it for an amazing homemade meal!😋

Best Ever Apple Crisp🍎😋
I made this recipe in the summer but it would be perfect for fall as well. If you want an apple dessert that's easier to make than pie, this is the recipe for you. Perfect with a scoop of vanilla ice cream (and some caramel syrup on top🤤), this dessert is a definite crowd pleaser.❤️

Super Fluffy & Moist Coconut Cake!🥥🎂❤️
If you love coconut desserts, this is the recipe for you. This cake is deliciously fluffy, light and moist and I loved it! I will definitely be making it again. The only tweak I would do next time is to make a little extra frosting because I didn't quite have enough for the middle layer. Otherwise this recipe is perfect💯

Vanilla Bean Scones✨

It's been a while since I've posted on this blog but I wanted to share this recipe because it's one I've made many times because it's SO GOOD! If you've ever had the Petite Vanilla Bean Scones from Starbucks, these are basically just a larger version. Great for breakfast, with coffee or tea, these are a definite crowd pleaser. 😋☕🫖
Ingredients (yields 8):
-2.5 cups all-purpose flour
-1/2 tsp salt
-1 Tbsp. baking powder
-1/3 cup granulated sugar
-1 egg
-1/2 cup milk
-1 Tbsp. pure vanilla extract
-3/4 cup butter, cubed
Vanilla glaze:
-1.5 cups confectioners sugar
-4 Tbsp. water (may need more)
-2 Tbsp. butter, melted
-1 tsp. pure vanilla extract
1) Preheat oven to 425 degrees and line a baking sheet with parchment paper. Set aside.
2) In a stand-alone mixer filled with a paddle attachment mix together the flour, salt, baking powder and granulated sugar. Add cold cubed butter and mix on low-speed until coarse crumbs form - careful not to overmix.
3) In a small bowl, whisk together the egg, milk and vanilla then add it to the mixer and mix until dough comes together. It will be crumbly.
4) Flour a clean surface and knead dough just a bit until it comes together. Form it into a circle about 1 inch in thickness. Use a knife or pizza cutter to cut scones into 8 wedges. Use your fingers to smooth down any sharp edges or corners.
5) Place on baking sheet and sprinkle with granulated sugar. Bake for 10-14 minutes or until edges are slightly golden. Remove from oven and place on a cooling rack.
6) While scones are cooling, add all the glaze ingredients into a bowl and whisk - glaze will be slightly thick but should drizzle off a spoon. Use a spoon to spread glaze over cooled scones. Let stand until glaze is set.

Pumpkin Spice Sugar Cookies🎃🍪
These sugar cookies are an autumnal take on classic sugar cookies and they are soooo soooooo good!❤️ I opted for store-bought vanilla frosting instead of making the pumpkin spice frosting because I thought it would taste better. Also I didn't add pumpkin spice extract because the cookies already have pumpkin pie spice in them which was actually plenty of extra flavor. You can add sprinkles, candy corn or candy for decoration but either way, these cookies are the BOMB.

Salted Caramel Tartlets😋✨
These delicious cookie-cup tartlets are filled with salted caramel and then chilled. You need a mini muffin tin for this recipe but if you don't have a mini one, you could use a regular muffin tin and make the cookie cups a bit bigger. If you've made sugar cookies before these are very easy to make and a tasty treat for any party or fall gathering. Oh yeah and they're to die for!🤤

This is not my recipe but it's one I found online that's actually SO GOOD!😋If you're looking for a tasty fall pie to make this season, look no further. The only tweak is that the baking time took twice as long as the recipe said, almost 2 hours. But it is well worth the wait. Great with vanilla ice cream, whipped cream or just by itself, this pie is so good you'll wish there was more once it's all gone!❤️

Times are tough and mental health is not easy to deal with. Sorry it's been a while but here's a recipe I made this week. I've shared it before but it's delicious AF and semi easy to cook if you have the time. I will mention that the Tunisian spice blend is something I had to Google but it includes paprika, tumeric, chili powder, cayenne pepper, garlic powder and black pepper. Also the recipe I had is different than the linked recipe because it didn't call for pistachios.

This is another Hello Fresh recipe but it uses some ingredients you may already have at home, like romaine lettuce, peanuts, cilantro and ground pork. The wraps are like delicious little boats of flavor that are healthy as well. You can spice it up with some Sriracha but I didn't feel the need to. Definitely an easy recipe I'd love to make AND eat again!👍💯

This is the second recipe I've tried from his cookbook, 'From Crook to Cook' and it's sooo damn GOOD! Yes it does take 10 Tbsp. of butter and 5 minutes of beating at medium-high speed with a cup of sugar but the result is SO worth it! I was actually pleased with how easy this recipe was and that it came out so well. Delicious with strawberries and whipped cream (or just plain whipped cream), you'll love this pound cake cake cake cake!🍓🤪
Makes 6-8 servings
Ingredients
1 1/2 cups (210g) all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
10 Tbsp. (150g) unsalted butter, at room temperature
1 cup (200g) granulated sugar
2 large eggs
1 large egg yolk
1 1/2 tsp. pure vanilla extract
2/3 cup (160ml) buttermilk
Whipped cream
Fresh berries, for serving
1. Preheat the oven to 350 degrees F (180C), with a rack in the middle position. Coat a 9-by-5-by-3-in (23-by-12-by-7.5cm) loaf pan with nonstick cooking spray or softened butter. Line the bottom and the two short ends of the pan with parchment paper, letting the paper extend over the top edges of the pan, and coat again with the spray or butter. Dust the pan with flour, knocking out any excess, and set aside.
2. In a medium bowl, whisk the flour, baking powder and salt. Set aside.
3. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl and using a handheld electric mixer, cream together the butter and granulated sugar on medium-high speed until light and fluffy, at least 5 minutes, scraping down the bowl with a rubber spatula, as needed.
4. With the mixer running on medium speed, one at a time, add the eggs and egg yolk, beating for 1 minute after each addition. Scrape down the bowl with a rubber spatula, add the vanilla, and beat until just incorporated.
5. With the mixer running on low speed, add the dry ingredients in three additions, alternating with the buttermilk, beginning and ending with the dry ingredients. Scrape down the bowl with a rubber spatula, as needed. Stop the mixer when a few streaks of flour remain and finish mixing by hand until the ingredients are incorporated. Transfer the batter to the prepared pan, smoothing the top.
6. Place the loaf pan in the oven and bake for 55 to 60 minutes, rotating the pan halfway through the baking time to ensure even cooking. The pound cake is done when a toothpick inserted into the center of the cake comes out with a moist crumb or two attached. Remove the pan from the oven and let sit for 10 to 15 minutes, or until the pan is cool enough to handle. Remove the pound cake from the pan, place it on a wire rack, and let cool completely.
7. Serve with a dollop of lightly sweetened whipped cream and a handful of fresh berries.

This is the first recipe I've tried from his cookbook, 'From Crook to Cook' but it's one of many I've been wanting to try. I think I will be adding a few more posts once I've tried more of his recipes.😍🥵 The only tweak in my version is that I didn't have shredded pork unfortunately, but I just added more ham instead. Either way this is a delicious recipe for ham and pickle lovers alike and it was very very BUTTERY! So rich that I think I would use less butter next time I make it but you can use as much as you like, of course!😋🧈 An easy delicious meal💯
Makes 2 servings
Ingredients:
2 Tbsp pickle brine, plus 2 dill pickles, sliced
2 crusty soft rolls, split
Yellow mustard
Mayonnaise
8 slices Swiss cheese
8 thick slices ham (Black Forest works well)
2 cups leftover roasted shredded pork
4 Tbsp (55g) unsalted butter, plus more for spreading
1. Sprinkle the pickle brine on the insides of the sandwich rolls.
2. Spread the insides of the rolls with a thin layer of mustard and mayonnaise.
3. Lay 2 Swiss cheese slices on both sides of each roll. Top the cheese evenly with pickles on both sides.
4. Lay 2 ham slices on both sides of each roll. Top the ham evenly on each roll, on one side only, with 1 cup of pork. Press both sides of each sandwich together. Spread the top of each sandwich with a thin layer of butter.
5. In a large skillet over medium heat, melt 4 Tbsp (55g) of butter. Swirl the skillet to cover the bottom completely.
6. When the skillet is hot and the foam has subsided, add the sandwiches. Place a clean cast iron skillet on top of the sandwiches, or use a large weighted plate (you want to press the sandwiches down evenly to flatten them). Cook for 3 to 4 minutes. Lift the edge of the sandwich with a spatula to check that the bottom is golden brown and crisp and the cheese is completely melted. Flip and cook for 3 to 4 minutes more, checking again.
7. Remove the sandwiches from the skillet, cut in half and serve immediately.
