Beef and Egg Burrito With high calorie count for a simple steak burrito, it's still a burrito, which means the massive tortilla accounts for a lot of the calories and there's probably way too much cheese and meat tucked inside. It doesn't bad if I have this for breakfast, lunch and dinner. I mean just eat only this burrito for a whole day, and nothing else to take in beside water. (Diet!!!) .

Red Bean Mochi Cake

Red Bean Mochi Cakes Chapssalddeok used to be called “mochi” among Koreans, but these days everybody calls this particular kind of rice cake “chapssalddeok.” The word mochi is a Japanese word that simply means “rice cake.”. It could be a gift for someone special. The person who gets your rice cake made with your love will be instantly impressed! ... Make Sweet Red Bean Filling: 1/ Wash and drain 1 cup of dried red beans (azuki beans) and place them in a thick bottomed pot. 2/ Add 3 cups of water and bring to a boil over medium high heat for 10 minutes with the lid closed. 3/ Lower the heat and simmer for about 1½ hours. If the beans haven’t softened after 1½ hours, add more water and cook over low heat until they are soft and can be well mashed. 4/ Mash the beans with a wooden spoon (or food processor) until smooth. 5/ Put the beans back into the pot and add ¾ cup brown sugar, ¼ ts salt, 1 ts vanilla extract, and 2-3 tbs rice or corn syrup. 6/ Stir with a wooden spoon over low heat until the sugar is dissolved and the paste looks a little shiny. 7/ Divide the paste into 2 even halves. Keep one half of the paste in the fridge or freezer for future use. 8/ Divide the remaining paste into 8 equal pieces and roll each piece into a ball. Set them aside. Make Rice Cake With a Microwave Oven 1/ Place 1 cup of sweet rice flour (Mochiko powder), ¼ ts salt, 2½ tbs sugar in a microwave-safe bowl. 2/ In a bowl add a drop of pink food coloring to ¾ cup water and mix well. 3/ Add the pink water to the rice flour mixture and mix it well with a spoon. Push the dough to the center of the bowl. 4/ Cover the dough with Saran wrap and cook on high for 3 minutes in the microwave. 5 Remove the rice cake from the microwave and mix it with a wooden spoon for about 20 seconds. 6/ Cover it with the Saran wrap again and put it back in the microwave for another minute. 7/ Knead the hot rice cake with a wooden spoon vigorously in a circular motion about 100 times to make it chewy. 8/ Spread ¼ cup of starch powder on your cutting board and put the rice cake on it. 9/ Shape into a smooth 4×5 inch rectangle (10 cm x 12 cm) with wet hands and turn it over. 10/ Cut the rectangle into 8 even sized pieces with a wooden knife or spatula, and cover with Saran wrap to keep them from getting dried out. 11/ Take one piece of rice cake and flatten it into a round circle about 2½ inch (6.5 cm) in diameter. 12/ Add a sweet red bean ball to the middle of the piece of rice cake. Pull the rice cake over the ball and seal it by pinching the edges with your fingers. *tip: Use starch powder to keep the rice cake from sticking to your fingers. 13/ Repeat this until you’ve made 8 pieces of chapssalddeok. .

I shoot what I eat... Actually, I made this bites for my love (his lunch)... Kimbap is the Korean version of the Japanese “maki,” or rice rolls. The flavor comes from sesame oil and individually seasoned meats and veggies. But the one particular ingredient that is the heart of Kimbap is “danmuji,” or bright yellow pickled radish Maybe you’ve seen a Korean drama, where they show a mom waking up early at the crack of dawn to roll, slice, and pack these delicious bites for her kids. This is a labor of love, but once you have all the ingredients prepped, the assembling goes by pretty quickly, and it’s worth it because it’s like having a well balanced meal in every bite. Beef Kimbap Ingredients: 6-7 Sheets dried laver seaweed A 9 or 10 oz bag of ready to use spinach 1 log of yellow pickled radish, or “danmuji” 1 large carrot, or 2 medium sized carrots, peeled 5 Eggs Kosher salt, divided Sesame oil, divided Olive oil, divided Roasted sesame seeds, divided Beef Ingredients: 1 lb ground beef 2 cloves garlic, finely minced 3 Tbsp soy sauce 2 Tbsp sugar 2 tsp sesame oil Rice Ingredients: 6 cups cooked (3 cups uncooked) short grain or sushi rice ½ Tbsp Sesame Oil ½ Tbsp Olive Oil ½ Tbsp Sesame Seeds ¼-½ tsp kosher salt, or to taste Method: For the beef: In a bowl, combine all the ingredients for the beef. Mix everything together by hand and set it aside to marinate while you prepare the other ingredients. When all the other ingredients are prepped, and the beef has had time to marinate, heat a large pan with some olive oil and fry the beef until it is nicely browned. Remove the beef with a slotted spoon into a bowl and set aside. For the spinach: Add the entire 9 or 10 oz bag of ready to use spinach in salted boiling water. Boil for 30 seconds, and drain. Run cold water over it to stop the cooking, and squeeze out all the excess moisture with your hand. Transfer to a bowl and season with 1 teaspoon sesame oil, and a couple pinches of kosher salt. Mix well. Set aside. For the “danmuji,” or pickled radish: Slice the log of radish into ½” thick slices. Cut each slice into strips, so that you end up with thin long strips, about ½” thick in diameter. Set aside. For the carrots: Peel and slice your carrot(s) thinly on a diagonal. Lay the slices flat and run your knife through them lengthwise to create thin julienned slices. Saute them in a pan with some olive oil and season with a couple pinches of salt to taste. Set aside. For the eggs: Break 5 eggs and add a couple pinches of salt. Whisk well. Heat a large pan with olive oil over medium low heat. Use a paper towel to wipe the pan so that it is evenly coated. Pour in the eggs and let it cook until the bottom is firm and light golden brown. Flip the egg over and cook until light golden brown. Remove to a plate and cut the egg into half-inch strips. Set aside. For the rice: Mix the rice last. After all the ingredients are prepped and the beef is cooked, place the 6 cups of cooked rice into a large bowl, along with the other ingredients for the rice. Mix gently, and get everything ready for assembly. .

To me, baking and frosting a cake is not that hard, the hardest part of baking is how to make it moist, soft and bloom at right level. To frosting the cake is not hard but not easy either, if it's over beaten icing then it will cause of many bubbles air and didn't come out smooth.

OMG! My dearest Instructor pushes me to eat ice cream again. I'm not into these sweet thing, however it tastes so good on a hot day. He will never know how hard I was on this assignment since San Jose is getting hot and hotter (90°F degree) and the AC is broken down. I was so suck on scooping the ice cream. I hate it so much, and getting messy when it melting so fast, so quick ... so crazy. .

A quick toss in the pan and few slices of your knife and you’ll be grabbing your serving tray and looking for the wine opener. Shrimp and Avocado Ingredients: 1 tablespoon unsalted butter 1 pound shrimp - deveined and peeled salt 1/4 teaspoon red pepper flakes 2 tablespoons minced fresh cilantro 1 large avocado - pitted, and cubed Method: Into a saute pan heat butter over medium heat. Add shrimp, season with salt and red pepper flakes. Cook until shrimp are opaque. Remove from heat. Chop shrimp into bite sized pieces and place into a small bowl. Add cilantro, avocado and a squeeze of lime juice. Gently toss to combine. Spoon approximately 1 tablespoon onto each plate.

If Vietnamese egg rolls are one of your favorite foods, more than likely Vietnamese Sizzling Crepes, Bánh Xèo, will join the list of favorites. Bánh Xèo, literally means sizzling (xèo) pastry. It’s a crispy, lacey crepe usually stuffed with a mix of pork, shrimp, onions and bean sprouts. It’s served sizzling hot. It may look like an omelette but it will not taste anything like one. Similar to the Vietnamese preferred way of eating egg rolls, you wrap a piece of the crepe with lettuce of choice and numerous options of greeneries, and then dipped in the sweet fish sauce.

Plain Greek yogurt is one of the best foods that you can eat to improve your health. I've been eating it for a year. Now I try mixing it up by adding a little flavor with fruits.

Soba Noodle!

I like to have Japanese foods sometime. So today I decided to feed myself something light and no meet at all. If you want to taste something different, then you might want to try this soba noodle. It will take you about 15 minutes only . Ingredients: . 1 bundle of soba noodles . Salt and pepper as per taste . 1 tsp sesame seeds, lightly toasted . Little chopped scallion gree and cilantro. Ginger Sauce: . 2 teaspoons soy sauce . ½ teaspoon ginger, minced . 2 teaspoon sesame oil/grape seed oil/any neutral oil (I used olive oil) . ½ teaspoon chili oil . ½ teaspoon rice wine vinegar . 2 teaspoon honey . Salt and pepper as needed 1. Mix all the ingredients for sweet ginger sauce in the bowl, check for the seasoning. Keep it aside. 2. Boil the soba noodles as per the instruction on the package (cook for 4-5 min.), then drain into the cold water to serve cold. 3. Add the sauce, sesame seeds and toss the noodles well... then eat! :) Enjoy your noodle and have a great weekend! ♥
