Ingredients:
Rice Basmati 1 and 1/2 cups
2 medium carrots
Carrots 1/2 inch cubes 2 large French beans 1/2 inch cubes 10-12 florets Cauliflower 15 shelled green peas 1 quart
Season with salt to taste
8 green cardamoms,
1 black cardamom,
1 clove, 15 cinnamon Stick of 1/2 inch diameter
The bay leaf 1 teaspoon caraway seeds (shahi jeera) 1 1/2 tablespoons 1/2 teaspoon ginger-garlic paste
Turmeric Powder 1 tablespoon
Red chill Powder 1 teaspoon
Coriander powder 1 tbsp
Greek yoghurt 1/2 cup
Rose water 1/2 tsp
Saffron (Kesar) a few strands
Fresh tomato puree 1 cup
Garam masala powder 1 teaspoon
Fresh coriander leaves chopped 2 tablespoons
Fresh mint leaves chopped 2 tablespoons
Method to Make Vegetable Biryani:
Cook rice in four cups of salted boiling water with two green cardamoms, one black cardamom, five cloves, and a half-inch stack of cinnamon until it is three-fourths done. Set aside any excess water. Preheat a nonstick skillet. Roast the remaining green cardamoms, cloves, black cardamom, cinnamon, bay leaf, and caraway seeds. Combine the onions, carrots, French beans, cauliflower florets, and green peas in a large mixing bowl.
Sprinkle with salt, cover, and cook for two minutes on medium heat. Stir in the ginger-garlic paste with a little water. Cook for two minutes, covered. Cook with turmeric powder, red chilli powder, and coriander powder. Combine yoghurt, rose water, and saffron in a mixing bowl. Whisk in a small amount of water or milk. Mix in the tomato puree and half teaspoon garam masala powder with the vegetables. Allow for a two-minute simmer. Take a deep microwave-safe bowl.
Make a layer of rice at the bottom of the dish. Place half of the cooked vegetables on top, followed by another layer of rice. Half of the remaining garam masala powder, half of the coriander leaves, half of the mint leaves, and half of the yoghurt mixture should be sprinkled on top. Arrange the remaining veggies on top of the rice.
The remaining garam masala powder, coriander leaves, mint leaves, and yoghurt mixture should be sprinkled on top. Microwave on HIGH for four to five minutes, covered with a silicone lid (100 per cent). Allow it to stand for 5 minutes. Serve immediately.

How to Make Best Tea Masala:
To make a fine chai ka masala powder, ground cardamom, cloves, cinnamon, fennel seeds, and black peppercorns in a bowl. 
In a separate bowl, combine the dried ginger powder and chopped lemongrass.
Mix everything together thoroughly and store in an airtight container.
When making Indian tea, use this chai masala.
Monsoon Chai Recipe:
Ingredients:
2 cups of Whole Milk
2 Cups of Water
1.5 Tbsp of Sugar
4 Tsp of Black Tea
1.5 Tsp of Chai Masala Mix
How to Make Masala Chai Tea:
Add water, black tea, and chai masala mix to a deep pan.
Allow it to simmer until the strong decoction is ready.
Now add the milk and sugar.
Allow it to boil twice.
Strain the masala tea and serve alongside some biscuits.

A Quick Look Over My Personal Spice Box

Masala Dabba or Indian Spice box is a must-have item in practically every Indian household's kitchen. If you prepare Indian food regularly, you should have it. But, what should be included in this masala box of yours?? In this article, I'll share with you guys which Indian masala spices are included in my kitchen spice box and why, so read on. 
For those who are unfamiliar with an Indian spice box, it is stainless steel or wooden, flat container known as a Dabba with a tight-fitting cover of around 6-7 inches in diameter (sometimes 10-12 inch diameter). The box masala dabba contains seven little spherical containers into which you store spices. It also comes with one (or more) small spoons roughly the size of a teaspoon. I've seen my mom, my grandmother all use these spice storage masala box to keep the spices handy while cooking, and I've also used masala dabba since the beginning of my cooking journey. 
What Should You Put In Your Masala Dabba?
You should use the Indian spices that you regularly use in your cuisine on a regular basis. For example, if you generally make South Indian food, you should avoid using garam masala and amchur in your dabba. Instead, utilise the most generally used tempering lentils, urad dal and chana dal.
Keeping a traditional Indian spice box in the kitchen makes you more effective. It is far more handy than having to open each spice jar. Yes, putting spices in adorable looking little spice containers is stylish and visually appealing, but it is totally ineffective. Cooking Indian will be a snap now that you can get all of the spices you need in one spot.
What I Put In My Masala Dabba?
I'm Gujarati & so I mostly cook Gujarati food, and on the rare occasion North Indian food. And so, I put the spices that I need regularly in my spice box. Here are those spices:
Mustard     seeds
Cumin     seeds
Fenugreek     Seeds
Turmeric     powder
Red     chilli powder
Coriander-cumin     powder
Garam     Masala
I also keep a small container of strong Asafoetida on the side as I use that regularly as well. But when storing Asafoetida, make sure you are storing it in an airtight container because it has a very strong, overpowering smell.  
I believe that the Indian spice box is the key to mastering Indian-style cookery. Cooking Indian food is complicated, and time is everything, so having all of the required spices in one package makes it seem less frightening. The whole point of having a spice box is to have it next to your pot, so you don't have to scramble about hunting for different spice containers while tempering the food.
Most Indian cuisines start with heating oil, then adding tiny amounts of spices in rapid succession, so the mustard seeds burst, cumin seeds sizzle, and turmeric and red chilli powders lose their sharp edge without burning. And, in order for it to happen, the temperature of the oil must be correct, thus having a spice box on hand is the most effective and practical means of obtaining the necessary spices- Open one of the boxes, and everything you might need is right there.

Herbs and spices have been used since ancient times and are frequently used as valuable sources of currency in trading. Seasonings have since been used for medicinal purposes and as nutritional preservatives. Many spices have been discovered to have antimicrobial properties that inhibit bacterial development. 
While the words herb and spice are often used interchangeably, they are two distinct categories of seasonings made from various parts of plants and processed in different ways.

Spices VS Herbs- Definition

Spices may be used to enhance the colour, flavour, and taste of food. Spices are used to cure illnesses in addition to flavouring food. Asafoetida, for example, is used to cure coughs and gastrointestinal pains, bay leaf oil has antifungal and antibacterial effects, cinnamon is thought to decrease blood cholesterol, cloves are used to alleviate toothache, cumin boosts the immune system, fenugreek is used to combat diabetes and lower cholesterol, turmeric is pleasant for the face, and so on.
Spices VS Herbs- Storage
Herbs are better used fresh and have a limited shelf life and so they must be refrigerated or preserved in water. Herbs can be planted in your backyard; they are usually annuals that are simple to plant.
You can store your spices in an air-tight container for as long as a year. It is best to preserve spices in glass bottles in your pantry. Spices can certainly not be grown in the backyard.

Here are some herbal tea recipes that can strengthen your immunity:
 Masala Tea:

1/2Cup Water
1Tsp of Vasant Tea Masala
2Tsp of Black Tea Leaves (Chai Patti)

1Cup Milk
Method:
In a deep pan, take water and add tea masala and chai patti.
Let it boil for a few minutes.
Now add sugar and milk to it and let it boil for few more minutes. 
Strain the tea into a cup and drink it while it is still hot. 
 Ginger Tea:
Ginger contains antimicrobial properties, which can help to boost your immune system and keep you safe and healthy. Ginger is quite a common ingredient in both caffeinated and herbal teas. It has a slightly sweet, slightly spicy flavour to tea blends. 
 Ingredients: 
1Cup Water
1Tsp of Tea Masala
1Inch Ginger Root
Method: 
Boil a cup of water and grate ginger & add tea masala in it.
Close the lid and let it infuse for 5-10 minutes.
Strain into a cup and add some lemon, and it is ready to drink.
 Turmeric-Pepper Tea:
Turmeric and pepper have been long used in traditional Indian medicine for their curing properties. They both have some amazing anti-inflammatory properties and are loaded with antioxidants. 
 Ingredients:
1 Tsp of Turmeric Powder
1 Tsp of Black Pepper Powder
Lemon Juice
Honey
Method:
Take a pot and add turmeric, pepper and water to it.
Mix properly and let it boil on a medium flame for about 10 minutes. 
Strain the mixture into your favourite cup, add lemon juice and chug it down slowly.
 Mint Tea:
Fresh mint leaves give the tea an alluring herbal aroma and flavour, and it does not contain caffeine. Some researchers claim that mint tea helps relieve headaches, encourages relaxation, eases upset stomach. 
 Ingredients:
10-15Fresh Mint Leaves
2 Cups Water
Sugar to Taste
Fresh Lemon Juice
Method: 
In a pan, boil water and add mint leaves.
Let it boil for 5 minutes, and then add sugar.
Let the sugar melt. 
Pour the mixture into a cup and add lemon juice.
Drink while it still hot.
