I made samosas!!! I have never had them so I don't know what they should taste like, but these are delicious 😋 😍 it's a burst of flavor in every bite!!!! I used Indian spices that I've never experienced. They are delightful and sooooooo good. I'm gonna be making samosas as a regular part of my diet. They're vegetarian flavor bombs!! Ingredients:For the Potatoes:15-20 baby potatoes, boiled and peeledOil, for deep fryingFor the Gravy:1 cup yogurt (plain)1 cup tomatoes, pureed1 large onion, finely chopped1 teaspoon ginger paste1 teaspoon garlic paste1/2 teaspoon turmeric powder1 teaspoon red chili powder (adjust to taste)1 teaspoon fennel powder1/2 teaspoon cinnamon powder4-5 green cardamom pods4-5 cloves1 bay leaf1/2 cup milkSalt, to tasteFresh cilantro, chopped (for garnish)Chopped nuts (like almonds or cashews) for garnish (optional)Instructions:Deep-fry the Boiled Potatoes:Heat oil in a deep pan and deep-fry the boiled baby potatoes until they turn golden and crisp. Once fried, remove and keep aside.Prepare the Gravy:In a bowl, whisk the yogurt until smooth. Set aside.In a separate pan, heat some oil. Add the cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.Add the finely chopped onions and sauté until they turn golden brown.Add the ginger and garlic paste. Cook for a couple of minutes until the raw smell disappears.Mix in the tomato puree, turmeric powder, red chili powder, fennel powder, cinnamon powder, and salt. Cook the masala until the oil begins to separate from it.Add the whisked yogurt and mix well. Cook for a few minutes on medium heat.Simmer the Potatoes:Gently add the fried potatoes to the gravy and coat them evenly with the masala.Pour in the milk and stir. Cover the pan and let the potatoes simmer on low heat for about 10-15 minutes, allowing them to absorb the flavors.Serve:Once the potatoes are tender and the gravy is well infused with the spices, remove from heat.Garnish with chopped cilantro and chopped nuts if desired.Serve Kashmiri Aloo Dum hot with steamed rice, naan, or roti.

As a fun little experiment, I decided to rename the main characters of High Guardian Spice as actual spices. Rosemary, sage, parsley, and thyme are herbs.
Rosemary - Cinnamon
Often used in baking, it is a sweet and very popular spice. Good for branding.
Sage - Cardamon
Known as “the Queen of Spice” in India, it is used in both sweet and savory dishes. Its use in traditional medicine works with her caring and helpful personality.
Parsley - Paprika
Made from ground-up bell peppers, it can be sweet or spicy. The earthy flavor works with her being a dwarf.
Thyme - Saffron
The most expensive spice has a regal and mysterious nature around it, fitting for an elf. The bright orange color also complements her bright red hair.

However, the company's director, Rajiv Shah, emphasized that their exports undergo rigorous testing and approval from the laboratories of the Spice Board of India, ensuring their safety.
Addressing the recent incident, Shah clarified that Singapore authorities examined only one out of the 60 Everest products and found no cause for alarm. The focus was on Everest's fish curry masala, which allegedly contained high levels of a cancer-causing pesticide. Despite this, Everest maintains that its products meet safety standards and there is no need for concern.
The situation mirrors a similar case involving another popular spice company, MDH, which also faced sales halts and quality checks in India following regulatory actions in Hong Kong. Both Everest and MDH are under scrutiny due to allegations of high levels of ethylene oxide, a substance deemed unfit for human consumption and posing long-term health risks.
While Singapore's food agency advises consumers against consuming the implicated product and suggests seeking medical advice if worried, it's essential to note that spices from Everest and MDH have been staples in home and restaurant kitchens across the Indian subcontinent for years.
