Fresh Baby Spinach Topped with Smashed Potatoes, Tonnino Tuna, and Feta
Appetizer-inspired, healthy, and delicious Smashed Potatoes topped with Tonnino Tuna, Spinach, and Feta. Appetizer season is in full swing!

I've joined the Tonnino Tuna Challenge this year! I wanted to create a recipe using their Tuna Fillets with Garlic in Olive Oil. I'm a big appetizer fan so what better way to showcase this tasty tuna.
This recipe is super quick and might I add has a great presentation. The tuna fillets are chunks so when you lay them on top of the smashed potatoes you get a hefty bite. This appetizer comes together in under 45 minutes. And if you've been around here for a while you know I'm all about quick and easy recipes.

This week has been a hot one here in the Midwest and we've been spending a lot of time outdoors which means my time in the kitchen has been limited. This appetizer can also be a dinner option which is perfect in my book. Fresh baby spinach and feta only enhance the flavors in these tuna fillets. We had some tomatoes growing in the garden and I thought they looked lovely served with this appetizer.

These tuna fillets are made with 100% yellowfin tuna. Their tuna is low-mercury,  dolphin-safe, and wild-caught. It's available in eight delicious flavors using Mediterranean-inspired ingredients.

Serves 4-5
INGREDIENTS
1 (6.7 ounce) jar Tonnino Tuna Fillets with Garlic in Olive Oil
8 small potatoes
2 tablespoons olive oil
a sprinkle of salt and pepper
1 1/2 cups fresh baby spinach
1/2 cup feta cheese chunks
cherry tomatoes
DIRECTIONS
Preheat oven to 450 degrees Fahrenheit. Wash and dry potatoes and then place in a steam bag and steam in microwave for 9 minutes or until potatoes are soft. You may have to do them in two batches depending on the size of your steamer bag. You can also use a steamer basket if you prefer that method. Let potatoes cool for about 3 minutes before smashing.
Oil a baking tray with 1 tablespoon olive oil. Place steamed potatoes on a baking tray and using paper towel smash down each potato. Spread the other tablespoon of oil on top of each smashed potato. Sprinkle with salt and pepper. Bake in oven 16-22 minutes or until potatoes are slightly browned. Remove from oven and let cool a few minutes.
To a plate lay on fresh baby spinach, smashed potatoes, Tonnino tuna fillets, feta chunks, and cherry tomatoes. Serve immediately.
