This silly little orange guy
Did have a big sly grin
But once he learned of Pumpkin Pie
His grin dropped to his chin!
In an effort to escape his demise
He鈥檇 come up with a clever disguise
But his life back, he鈥檇 not win!
For he dressed up as a Pumpkin 馃巸
Pumpkins are not just for using as jack-o-lanterns and Halloween decorations! Pumpkins are also great for serving up in many different ways! From cakes and pies to soups and even pasta sauces! This spin on a meat sauce uses oven roasted pumpkin instead of tomatoes! We used a pretty large pumpkin in this video, but we only used a quarter for the recipe. The rest was cut into chunks and frozen to make other meals!
Ingredients:
6 cups of cut up pumpkin
4 tbsp of Olive oil
500g of lean ground beef (or pork)
1 onion (diced)
1 clove of garlic (diced)
A few sprigs of sage
4 cups of聽Rotini pasta
Salt and pepper to taste
Method:
Preheat oven to 425 degrees (F). Remove the hard skin from the pumpkin and cut it into chunks. Place the chunks in a large mixing bowl and add 2 tbsp of olive oil a dash of salt and pepper and mix well to coat the pieces. Transfer the pumpkin to a baking sheet and bake in the oven for about 25 - 30 minutes or until slightly browned. In a large sauce pan, add 2 tbsp of olive oil, the onion and garlic and let them slightly brown. Add the meat and mix until browned. Add the pumpkin and sage and mix well. Cover and let simmer for about 25 minutes. Meanwhile, bring the pasta water to a boil and adding salt to the water cook your rotini until aldente. Drain the pasta and add it directly to the sauce. Mix well and salt and pepper to taste.
