“My fondest memory of childhood is that of watching cooking shows with my Dadi. Our lazy afternoons were often spent watching Khana Khazana, Food Food and Amhi Saare Khavayye on the television. I was always very fascinated with cooking, and often used to request Dadi to let me help her out in the kitchen. Since I was only about ten years old at the time and wasn’t allowed to use the stove or even the knives, she gave me simpler chores like running the mixer, squeezing lemons, or shaping laddoos, to make me feel that I was contributing. I used to wear my own apron and felt very important doing those little tasks. Dadi used to take me shopping for vegetables too, and going to the sabzi mandi every Thursday to carefully pick out each fruit and legume became a beloved outing for me.
In school, we used to have a Skills Development period that offered Food Science as a subject option, which used to be my favorite class of the week. Almost all the students in the Food Science class used to be girls, and most of my male friends had opted for Computers. I was often teased by my classmates for being one of the few boys in the cooking class, but I never paid heed to their taunts. As I grew older, I started watching more continental cooking shows such as Masterchef and Hell’s Kitchen, and was intrigued by the stylish, exciting lives that chefs seemed to lead. I decided that I too wanted to have a career in cooking.
I’m training to be a chef now, and the fancy life that I’d drooled over is a far cry from the reality. The kitchen behind the curtain involves long shifts in the heat, and you need to be alert, agile and always on your feet. The job demands high conscientiousness and hard labour. Once, I was working a night shift in a hotel kitchen, and had to slice ten kilograms of onions. I started the task at midnight, and finished at six in the morning. When the head chef arrived, he told me that the onion slices were too thin, and told me to do it all over again.
There are other difficulties too, that come with working in the kitchen. Cuts and bruises are part of the deal - in fact, during my training period, I was told by a senior chef ‘As long as your fingers are intact, you can keep cooking.’ I’ve also singed off my forearm hair because of constantly putting my hand in the hot tandoor. But despite the downsides, I love cooking a lot. It is an almost therapeutic activity for me - it boosts my mood and allows my creative juices to flow. For me, pursuing my passion in the culinary arts still seems like a childhood dream come true.
While I whip up all sorts of complicated dishes at work, at home, life is still simple. My favorite thing to make still remains the traditional modakas we prepare every year for Ganesh Chaturthi. The simple process of sitting on the floor with mom and Dadi and molding modak after modak filled with coconut and jaggery sparks a blissful contentment that no fancy preparation can.”
