Building Up: Air Nomad Cuisine - Desserts & Miscellaneous
When conceptualizing Air Nomad cuisine, I took inspiration from dishes of the Himalayas, primarily Tibetan. Since Air Nomads spend much of their lives living in high altitudes, I felt their cuisine should reflect the needs of that lifestyle. It would also take advantage of the dairy that sky bison could likely provide. In short, while all dishes shown will be vegetarian, many will not be vegan. If you’re interested in trying any of these foods, click on the name of each dish for a recipe or product website.

A cheesy dessert pasta from Tibet. The primary ingredients are gnocchi-like noodles, dried yak cheese, butter, and sugar. As always, I imagine sky bison milk would be responsible for providing the dairy portion of the meal.

A sweet rice dish from Tibet. It’s eaten during special occasions and holidays, particularly the first day of Tibetan New Year. Traditionally, it is made with Basmati rice, sugar, yak butter, and droma---which is a sweet, edible root native to Tibet. In areas where the latter two ingredients are not readily available, cow butter, cashews, and raisins are used instead.

A Tibetan no-bake cheesecake made from dried yak cheese, brown sugar, and unsalted butter. Sadly, the cakes we see in ATLA resemble New York-style cheesecakes more than Tibetan-style ones.
Miscellaneous Goodies
Because both dairy and grain flours are common in Tibet, there are many different kinds of cheeses, yogurts, breads, and pastries in Tibetan cuisine. If you’re interested in further researching Tibet’s food culture, I’d recommend checking out the YouTube channel Palden’s Kitchen and the website Yowangdu.
Overall, I think Air Nomad cuisine would be predominantly Tibetan in inspiration, with some Bhutanese and Nepali influences added in.

History of National Cheesecake Day
Although the original National Cheesecake Day was conceived and first celebrated in 1985, it didn’t really take off until 2001 when the power of the internet helped its cause. It then gained traction and became a sensation that is now celebrated all over the world!
Dating back to its invention by the Ancient Greeks, probably around  200 A.D., cheesecake was believed to have been one of the first “sweet”  desserts in the world. Or at least, it was one of the first to be written down! In its earlier time, this dish was originally made from a  soft cheese but was probably very different from what we now know as  cheesecake.
Over the centuries, cheesecake moved around the world and popped up  as different expressions in different regions. For instance, cheesecake  in Italy is traditionally made with their favorite, ricotta cheese. Cheesecakes in Germany and Poland are often made with a special kind of soft cheese called “quark”. And, of course, American cheesecake uses its own home invention: cream cheese.
But no matter the variation, cheesecake is a tasty invention that has  developed and evolved over time into something that almost everyone in  the world loves to eat!
How to Celebrate National Cheesecake Day
Celebrating National Cheesecake Day is super easy! Just eat, bake and  enjoy cheesecake of any variety. Try these ideas for getting creative  with celebrating the day:
Eat Some Cheesecake  
The most obvious way to celebrate is to grab a piece to-go, pick up a  whole cheesecake at a bakery and take it to the office to share, or  even get a boxed mix and make an easy refrigerator cheesecake at home. No matter how it’s done the most important thing on this day is to  somehow, some way, get cheesecake into that belly!
Make a Cheesecake  
Depending on the recipe chosen, making cheesecake can either be simple or a little bit fussy. A true cheesecake recipe will be made from ingredients such as cream cheese, sour cream, and eggs, then baked in  the oven for about an hour or more. It is important to bake it slowly on a low temperature to keep it from cracking. This is the way cheesecake is made at a bakery or at a specially themed restaurant such as The Cheesecake Factory.
Some simpler versions of cheesecake recipes are no-bake, which  instead use the refrigerator to get cream cheese, whipping cream or other ingredients to set up into a dessert. These recipes typically do not include eggs as the cake is not baked. But they are still deliciously tasty!
Get Creative with Cheesecake Recipes  
A slice of classic, New York style cheesecake is nothing to complain about! But some people like to mix things up a bit and get more creative with the way they make their cheesecakes. Try these unique styles of cheesecake for fun, or make up your own:
Chocolate Chip Cookie Dough Cheesecake. Enjoy the fun of this classic American cookie alongside the beauty of a delectable cheesecake! It includes actual chocolate chip cookie dough in the batter, and is topped with actual chocolate chip cookies.
Chocolate Covered Strawberry Cheesecake. A  tasty strawberry flavored cheesecake is poured into a graham cracker crust, then finished off with a chocolate ganache topping reminiscent of chocolate covered strawberries. It’s a dessert-lover’s dream.
Nutter Butter Peanut Butter Cheesecake. Another  American favorite, peanut butter and Nutter Butter cookies are included in this recipe that is baked and then topped with a yummy peanut butter sauce and then garnished with peanut butter cookies.
Cannoli Cheesecake. Channel that inner Italian baker with this yummy recipe that embraces ricotta and mascarpone cheeses on a graham cracker crust and is topped with mini  chocolate chips.
Host a Cheesecake Gathering  
While friends, family and neighbors can be invited, the guest of  honor at this particular event must be the venerable Cheesecake! Get a bunch of folks together for this day and have a few different people bring a plain cheesecake each. Ask some others to bring along some toppings for a toppings bar, and then get to eating!
For a cheesecake toppings bar, include different fruit, candy or  sauce options that people with different preferences might like to try. Canned pie fillings make easy and tasty toppings in cherry, strawberry or blueberry. Fresh strawberries or mandarin oranges are also a great  idea.
Sauces for the cheesecake toppings bar can include chocolate, caramel  or peanut butter. Add some dishes filled with nuts such as pecans, peanuts or slivered almonds. Some toasted coconut would also make a lovely addition.
And don’t forget candies such as chocolate chunks, ice cream  sprinkles, pieces of snickers bars or even gummy bears. The options are basically endless!
Head to New York for Some Cheesecake
Maybe it’s not the actual place of origin for cheesecake, but New  Yorkers would argue that it’s the only place to get a real slice of the good stuff! This style of pure cheesecake, with no fancy ingredients, became popular in New York in the early 1900s and the recipes really have not changed much since then.
In order to get access to the best cheesecakes in New York, it will  likely be necessary to visit a few different bakeries or restaurants, including:
Veniero’s Paticceria and Cafe. An authentic Italian Bakery located in the East Village since 1894, this bakery does the New York cheesecake just perfectly.
Junior’s Restaurant. Since  1950, Junior’s Restaurant has been making cheesecakes at the same  family owned location in Brooklyn. It’s now a chain with storefronts in a few other locations throughout the NYC area.
Eileen’s Special Cheesecake. In business for more than 45 years, this bakery began with a recipe that was passed down by Eileen’s mom. Her Nolita location offers at least 20  flavors but, of course, the classic New York style is always on offer.
La Cheesecake Bake Shop. Aptly named, this takeout counter in Queens has been offering “light as air” cheesecakes, along with other delicious baked goods, since 1985.

You seem to really enjoy cheesecake so do tell me sir what kind of cheesecake you like.
I had a cheesecake phase where I would bake a cheesecake with my sister every week a few months ago, and my mom had us stop because there was just so much fucking cheesecake in our fucking house and she was getting annoyed about that. this lead to the free cheesecake movement of my household.
I am long past those days, and now I live in peace with cheesecake. my favorites are

cheesecake with poppy seeds (I've never seen this anywhere except the local Polish market. look for sernik z makiem if you'd like to try some!)

chocolate cheesecake
the difference between New York cheesecake and classic cheesecake, of course, is that New York cheesecake is richer because it has more cream cheese, and in some recipes, more sour cream. depends on how it's made, and it's honestly up to the discretion of the chef!

Hello, every birdy. Today we are going to be looking at my birthday cake. Obviously, I am not saying that I make my own cake. Jeez, no… my mom wouldn’t do that to me. No. what I am saying is that this recipe has been my favorite recipe since we got an Instant Pot. And I like it because no matter what it always tastes amazing.

Nilou is a stage dancer from Sumeru. She says that her favorite food is anything sweet, honestly, this is one of the easiest things people could say.

We got sour cream, cream cheese, and a box of white chocolate chip macadam nut cookie dough from the truck this week. And after studying these ingredients and making the cookies by themselves, we had a bunch of cookies left over.

My mom and I made the “Instant Pot New York Cheesecake #17” by Amy & Jacky. This recipe is one of my favorites.

However, because we had so much cookie dough, we decided to make the cookie dough into the crust. We baked the cookie in the pan we were going to place in the instant pot and we baked it according to the instructions on the box. I should note that we used a small springform pan that will fit into the instant pot. And we also have a sling that helps us get it out when it is done.

What you will need for this recipe:
Cream cheese
Eggs
White sugar
Sour cream 
Cornstarch 
Vanilla extract 
Sea salt

The first thing that the recipe states are to use a hand mixer instead of a Stand mixer. This is because the stand mixer is most of the time more powerful and it is easy to over-mix and add too much air to the cheesecake. This would make the cheesecake more souffle-like.

30-40 minutes prior to making the cheesecake, you will want to bring your cream cheese, 2 eggs, sour cream, and 3 - 4 tablespoons of melted butter at room temperature.

This helps your cheesecake be the yummiest, so make sure not to skip this step. 
Because we are using cookie dough, we are going to skip the graham cracker crust instructions. But if you want to make the graham cracker crust feel free to check out the recipe down below.

Now we are going to make the cheesecake batter. 
In a small mixing bowl, you are going to mix together 2 tablespoons of cornstarch, 2 pinches of salt, and ⅔ cup of white sugar.

In different medium sized mixing bowl you are going to briefly break up the cream cheese for about 10 seconds with a hand mixer on low speed.

Now you are going to add half of your sugar mixture to the cream cheese, for about 20-30 seconds. Make sure that you scrape down the sides of the bowl. Add in the remaining sugar mixture and beat it until everything is just incorporated on low speed, about 20-30 seconds.

Add in half of a cup of sour cream and 2 teaspoons of vanilla extract to the cream cheese mixture. Beat everything on low speed for 20-30 seconds.

Next, you will add in your two eggs. Mixing them together one egg at a time. Mix until just incorporated, about 15-20 seconds. Try not to mix in this step.

Fold everything together until fully incorporated. 
And then pour the batter into your pan with the crust in it.

On the counter you are going to let the air bubbles rise to the surface and with a toothpick or a knife you are going to burst the air bubbles. Repeat this process until you are satisfied with it.

Now onto the baking part of this recipe. This recipe does use the instant pot. 
Pour 1 cup of water into your Instant Pot. Place your pan in your sling, if you have oen, and place it on a steamer rack making sure that it not touching the water.

Close the lids and pressure cook on high for 26 minutes. And wait for it to do a full natural release. Which will take about 7 minutes. Open the lid gradually, making sure not to add any moisture to the cheesecake. 
With a paper towel or a clean kitchen dishcloth, you are going to carefully absorb any condensation on the surface by lightly tapping it.

Allow the cheesecake to cool completely at room temperature. After about 10-15 minutes you are going to carefully run a thin knife between the sidewall and the parchment paper to release the cheesecake from the pan.

You will want to make this recipe a day ahead of time so that it can completely chill. The recipe says that it needs to be refrigerated for at least 4-8 hours, most preferably it needs to be chilled overnight. We placed this cheesecake in the freezer until we were going to serve it, and it tasted just as good.

We have had an Instant Pot in our house since about 2018 I want to say. And as soon as my mom found this recipe I knew that it was going to be my birthday cake for a while. Just because I love cheesecake. I mean, this recipe is so versatile, and it can change so much. One of the versions I had for this cheesecake was a dirt cake version.

What I mean by this was, I told my mom that I really wanted a grown-up cake. A dirt cake. A cake that had crushed up Oreos, chocolate pudding, and gummy worms. And yes I was an adult, I was celebrating my 25th year on this planet.

I haven't shared stuff here in a while time to change that :)
There have been a lot of foods in rotation the last days, rather quick recipes or I have been cooking off other recipes, not mine.
Here is a little assortment of food I made for Easter:

First for all I used up a bread box mix I had for quite some time to make pretzel buns. And then i finally tried my hands on making hot cross buns =)

They are easier to make than it seems and I had them with selfmade strawberry jam. I can recommend it!

Then earlier in march I tried my hands on making a cheesecake (New York Style), this is the recipe I used:
It was a bit inpatient and had a huge crack in the cake but just added some cherry compot to it which helped with the sweetness. The cake was super creamy and rich.

Other than that I went super wild on comfort food with little effort the last weeks. For Breakfast I have been trying to get different stuff like Smoothie bowls, millet porridge, oat porridge, french toast etc. onto the plate. For dinner it was rather quick recipes, mainly one pots or meals I could prep in batches as I was at the Bookfair and in before I was super stressed and yeah...

Oh well I made up a super quick crepes recipe!
2 tsp Chickpea Flour
2 Tablespoons regular Flour
4 Tablespoons of Water (or more depending on how runny you want your batter)
Oil a pan and add a thin layer of batter, bake on medium heat and flip once the crepes is bubbling up. Done. Filled mine with some chocolate. yummy.

Add half of remaining sugar (one other scant 2 Tbsp.) and proceed beating till sugar is dissolved and combination is fluffy, 1–2 minutes. Add remaining sugar and beat till sugar is dissolved and meringue is shiny and thick and holds medium peaks (it ought to look marshmallowy), about 2 minutes. Step 8 Add about one fourth of meringue to reserved cream cheese combination and blend with a rubber spatula till mixed.
