Parmesan pasta with bacon, scallops, and roasted asparagus 🥲 INGREDIENTS @eatbanza chickpea gemelli 2 cups of sliced asparagus (into 2 inch pieces) 3 slices of turkey bacon 4 @sizzlefishfit scallops . Sauce - 1 tbsp butter 1 tbsp GF all-purpose flour 1/2 cup of grated parmesan cheese 3/4 - 1 cup of pasta water Generous pinch of salt *2 servings . DIRECTIONS Cook pasta as directed and remember to salt the water and reserve some for the sauce later. In a large pan, heat the butter. Next, add the flour and salt and stir for about 30 seconds (it’ll be a thick paste). Then add in around 1/2 cup of the pasta water at a time and stir for a few mins on medium heat to get desired consistency. Bake the bacon in the oven at 400 for 20 - 25 min. Remove from the baking sheet and add the raw asparagus to the same sheet. Coat with the bacon grease (I didn’t have too much but if there’s a lot from your bacon pour some out) and roast at 400 for ~15 min. Pour the cooked pasta, scallops (just seared these in butter for ~2 min each side), crumbled turkey bacon, and roasted asparagus into the pan with the sauce. Mix well and top with more parm, salt, pepper, and drizzle of olive oil. Credit- @kissmywheatgrass_ . . . . . . Pan-seared garlic chicken with sautéed zucchini & chickpea spaghetti🥲 INGREDIENTS Chicken thighs Zucchini @eatbanza chickpea spaghetti Cherry tomatoes Kale Mozzarella Olive oil Minced garlic Pecorino Romano . . DIRECTIONS Heat 1 tbsp olive oil + minced garlic in a pan & then add cut up chicken thighs. Cook for 4ish min (until browned) then repeat process on other side until cooked through. Cut up zucchini and steam. Once tender, sauté in olive oil & minced garlic (same process as the chicken). Cook pasta as directed & once done, add in a handful of kale, roasted tomatoes (mine were pre roasted- check my highlight for deets!), mozzarella, pecorino Romano, and a drizzle of olive oil. Chili onion tofu over a shiitake mushroom stir fry ⏩ INGREDIENTS @woodstockfoods organic frozen shiitake mushrooms Frozen zucchini noodles @traderjoes frozen riced cauliflower Extra firm tofu Green onion . Sauce: @traderjoes chili onion crunch, coconut aminos, honey, rice vinegar, salt, and some corn starch (thickens it up a little) . DIRECTIONS I used all frozen veggies but refrigerated would work too! Just thaw out in a large pan with a splash of water & the top on. Once soft, drizzle in sesame oil & add coconut aminos & salt & cook on medium heat. For the tofu, put a paper towel under the block, place a plate on top, and something heavy over that. This is to get rid of the water. Let it sit for 30 min while you make the stir fry, sauce, etc. Once done, heat sesame oil in a pan, cut the tofu into cubes, and add to the pan. Let sit for 5 ish min or until it starts to brown, then flip them over and pour in some of the sauce. Let sit until both sides are browned. Serve over the stir fry & top with sesame seeds & green onion. Didn’t measure this one out- just winged it! Credit- @kissmywheatgrass_ . . . . Bruschetta chicken tenders INGREDIENTS 6 chicken tenders 3 tbsp shredded mozzarella, divided Olive oil 3 Roma tomatoes 1/2 of a small red onion Fresh basil 1/2 tbsp Italian seasoning 1/2 tsp salt + pepper 1 1/2 tbsp Parmesan 1/2 tbsp balsamic vinegar 2 small zucchini *Serves two . DIRECTIONS Dice tomatoes & red onion & chop basil. Add those three to a large bowl, along with parm, balsamic vinegar, s&p, Italian seasoning, and a drizzle of olive oil. Let sit. Trim the chicken tenders & coat each side with olive oil and salt + pepper. Heat olive oil in a large pan then add the chicken tenders. Cook for 3-4 min each side. When you have about 30 seconds left, add about a little bit of mozz on top of each tender & put the top on. Plate the chicken & add the topping. Drizzle balsamic glaze on top, more basil, and salt & pepper. I served the chicken with sautéed zucchini- steamed in a pan with a splash of water + the top on for ~5 min or until soft. Then, upped the heat, added olive oil & once they started to brown, I sprinkled in the last tbsp of mozz. . . Credit- @kissmywheatgrass_ . . .
