Sweeteners figh
OBJECTIVE
Test different sweeteners with a cake recipe that I am really used to.
MATERIALS
Bought xilitol, eritritol and esteviol (in portuguese) from a local store. The rest of ingredients are the same as usual.

METHODS
I weighted the amount of each sweetener following the conversor internet told me to use:
Xilitol: same weight as sugar would be
Eritritol: 70% of the weight of sugar
Steviol: 2% of the weight of sugar ~\_(°.°)_/~
I prepared the same batch of cake without sugar or sweeteners. Then, I weighted it in 3 different bowls to mix each sweetener to each third of the batch. Poured the batches on cupcakes trails making sure to differentiate each one by color.
BLUE: xylitol
PINK: erythritol
GREEN: stevia

RESULTS
None of the cakes was fluffy.
Xylitol and erythritol were good.
Steviol wasn't sweet at all, to the point it has a salty taste.
CONCLUSION
Either it's a lie that steviol has 200x more sweet flavor than sugar or the local store sold me a diluted one.
No aftertaste on xylitol and erythritol recipes.
Probably sugar helps the cake to rise, it's acidic and may react along with baking powder. For future tests I'll try orange cake to test the acid hypothesis.
