When is it ok to complicate a #classic dish like Cacio e Pepe? What is a “#tweak”and what is #sacrilege? Tough question. It’s really hard for me to answer it Changing pastas is a tweak, changing ingredients is a problem I guess it also comes down to what you want to call it If its not a #CacioPepe don’t call it one, or call it one and be sure to serve any extra items on the side, so there is separation Like we see here But for sure it has to be ONLY #pecorinoRomano and pasta water coating the pasta itself In the center is a classic #cacioEpepe, which is then surrounded by a “Bloody Mary” sauce and garnished with smoked fish, and Pecorino is the only cheese that goes with fish so it all works, and the smoky goes easily with the sheepiness of the cheese, its not a stretch #ImConstantlyThinkingAboutThis #SoManyFineLines #WithTheseHistoricDishes #PeasantCuisine #Restraint #DontPissUsItaliansOff #ThisCuisineIsSacred #ChasingGhostsAndAncestors (at Il San Pietro di Positano)

#PiciDiToscana There are few #handmade pastas that get me this excited, well actually maybe more than a few lol #Pici is a hand rolled “spaghetti” that originated in #Siena It is served just about every way #spaghetti is. It is made with #flour, #water and #oliveoil. I hate being disappointed but it’s real and I should share it For over 15years I’ve been going for the #tastingmenu only lunch at #CastelFragsburg during the #MeranoWineFestival and every single one of those meals have been #extraordinary Outstanding execution. Simple gorgeous presentations. Laser guided combinations. Brilliant flavor creativity. Stunning maturity and restraint.
