It’s been so long time😅 it’s time to post and active again.
Today I made Japanese version of croquettes❤️😋
I made 2 different one (potato beef croquette and cream croquette)
Recipe for potato croquette
- potato (I used 5 small ones)
- ground beef (300g)
- flour
- egg
- panko
- salt and pepper.
Boil water and put the potato until they are soft. Meanwhile hear the pan with oil and fry ground beef and add salt and peer. Once potato are done, smash them in a bowl and add the beef and mix.
*Divide into 4 to 6 piece and made them round. Prepare flour, egg and panko in separate plates and dip them in order. (Flour →egg→panko) Heat fry oil, then fry them until they turn to golden brown.
Recipe for cream croquette
- corn (canned)
- half onion
- flour (3 table spoon)
- salt and pepper
- milk
- butter
Put the butter in a pan and add onion once butter is melted. Add flour (add 2,3 times not all one go) then mix. Add milk a little by little until whatever the softness you want. Leave them until it’s cool down.
Repeat * from the potato beef croquette (cream croquette is more sticky so maybe you can use spoon or something to make them round.)
One of the most popular mom’s dish in Japan is called humberg (ハンバーグ)
Here is the recipe
Patties
- 500g Mixed ground beef and pork
- 3 tablespoon Panko
- 1 tablespoon Milk
- 1egg
- 1 onion
- Salt and pepper
- Nutmeg
- 1 tablespoon olive oil
- Tablespoon Worcestershire sauce
Sauce
- A bit of red wine
- 2 tablespoon checkup
- 2 tablespoon Worcestershire
- A bit of butter
- A bit if sugar
1. Chop onion, put olive oil and cover with plastics wrap and microwave for 2 mins. Take off the plastic wrap and microwave again for another minute. *very important to chop the onion finely small pieces.
2. Remove the 1 tablespoon of onion in the side ( it will be used for the sauce) Mix panko, egg, salt and pepper, milk and the onion
3. Mix ground beef and pork and add Worcestershire sauce and mix until they are mixed well
4. Mix 2 and 3 and put the oil in your hand
5. hold the meat in your hands to form hamburg patties, letting the air out of it if any. The oil will cover the patties so that juice wont come out while cooking.
6. Place the patties in the pan without oil
7. Put the medium heat and cook for 5 min
8. Flip them over gently and leave them for 2 to 4 mins
9. Cover pan with a lid and Turn off the heat and steam for 5 mins.
10. Move the patties in the plate and put the ingredients for sauce in the pan. (Don’t clean the pan after you cook the patties)
- veggie ( I used shimeji mushroom, onion, carrot, broccoli)
Marinated sauce
- 1 tablespoon of miso (traditionally white miso) but you can use mixed miso
- 1 tablespoon of mirin
- 1 tablespoon of sake
Mix all together and put of top of the salmon.
Place the salmon and veggies in the aluminum foil and add a bit of butter on top.
Close the aluminum foil and place in a pan add water to in the pan just 1cm from the bottom of the pan and turn the medium heat. Cover with a lid and sit for about 12 mins.
