Avoid Sticking with Water
Wet a metal sheet pan or other surfaces under your stuffer to keep the casings from sticking as they come off the machine. You don't want so much water that they slide right off the surface, but you do want enough that they can slide away without sticking together and bursting or breaking.
Casing
The sausage is held together by a skin that looks like a tube. It can be made by nature or by people. Most homemade sausages聽are made with natural casings, which are the cleaned small intestines of a pig, lamb, or cow.

Get the meat from the refrigerator and put it on the hopper plate. Turn on the power and carefully push some sausage mixture through the grinder until it just starts to come out of the nozzle, then stop. Turn off the power.
Pull a small piece of the casing off the end of the sausage nozzle and tie a knot there. If you tie a knot in the end before the meat has gone through the grinder, the power of the motor will create air flow and blow up the casing like a balloon.
Turn the power back on when the knot is tied. Keep one hand under the nozzle and use your thumb and forefinger to tighten the casing so that it comes off the tip of the nozzle slowly and not all at once. Put the mince into the grinder with your other hand.
This will take some practice, but the most important thing is not to fill the casing too quickly at first. Slow and steady always wins! Leave a couple of centimeters of the casing at the end of the sausage, but don't tie it off yet.
