Homemade Pea Pesto on Sourdough Bread 💚 Recipe on the website alchemyeats.com (link in the bio). We wanted to try out an alternative to smashed avocado on toast. While we love avocados it's probably time we mix it up a little. So instead we made a homemade garlic and pea pesto topped with garlic mushrooms and sriracha chickpeas. Vanilla and Raspberry Cheesecake Pot ❤️ a delicious cheesecake pot perfect for a quick and healthy dessert ❤️❤️❤️ Compote Ingredients: - 3/4 cup frozen raspberries - 1 tbsp water - 1 tsp maple syrup Cheesecake filling: - 1/2 cup coconut milk (left in the fridge overnight) - 2 tsp coconut condensed milk - 1 tbsp @unicornsuperfoods Vanilla Cake Plant Protein Powder - 2 tbsp vegan creme freche - 1 tsp maple syrup - 10 lotus biscuits Method: 1. Prepare the coulis by heating the frozen berries, water, and maple syrup. Heat for 10 minutes on a medium heat. Then remove from the hob and leave to cool. 2. In a medium sized bowl, add the thick part of coconut milk into the bowl and the leave the liquid part aside. 3. Add the coconut condensed milk, vanilla powder, maple syrup, creme freche, and maple syrup into the bowl and using a electric powdered whisk combine the mixture. When whisking the cheesecake mixture should become thicker. 4. Break up the lotus biscuits and place them in the bottom of the pot. 5. Pour the cheesecake mixture on top of the lotus biscoff biscuits. 6. Once cooled, add the coulis on top. 7. Add any fruits and enjoy! Use #alchemyeats to tag us in your recipes. Coconut and Strawberry Mojito Mocktail. 🥥 In London we have been getting some lovely sunny days to finish off summer ☀️. So we thought we should share this refreshing mocktail recipe with everyone 🥥🧉🌻 Recipe: 250ml coconut water 5 fresh strawberries 1 cup ice 1 lime Method: 1. Squeeze the lime and blend the lime juice with your strawberries for around 30 seconds. 2. Add Coconut Water into the blender along with the ice, and blend for another 30 seconds. 3. Blueberry Oat Pot 💜 Recipe BELOW. This morning we wanted a simple but tasty breakfast option so decided to make this blueberry oat pot. There are now a few different versions of this recipe on alchemyeats.com (link in bio) including a plum compote oat pot and apple pie oats. 💜💜💜 Recipe Blueberry Compote: -3/4 cup frozen blueberries -1 tbsp coconut sugar -1 tbsp water -1 tbsp dairy-free yogurt Oat filling: -1 cup oats -1 1/2 cup dairy-free milk -1 tbsp maple syrup -1 tsp vanilla essence Method: 1. Add the blueberries into a medium sized pot with 1 tbsp water, coconut sugar, and an optional 1 tsp lemon juice. 2. Heat the blueberry mixture until boiling and then drop to a medium heat. Keep stirring and cook for around 10 minutes. When finished, add 1 tbsp dairy-free yogurt. We added the yogurt to make the compote creamy and lighten the colour to the purple in the picture but this is optional. 3. Add the compote into the bottom of the serving pot. 4. Now to make the oats. Add the oats into a medium-sized cooking pot with the maple syrup, vanilla, and milk, and cook on medium heat. Make sure to stir occasionally to avoid the oats sticking to the bottom. This process should take around 5-10 minutes depending on the type of oats you have. 5. Remove the oats from the heat. 6. Peanut butter pie ❤️ Recipe below! The pie filling is soft, creamy, and rich and is one of our favourite recipes 💛💛💛 Ingredients (makes 7” pie): * 2 tbsp peanut butter mousse * 1 can coconut milk (leave can in the fridge overnight) * 2 tsp condensed coconut milk * 1 packet of Oreos * 1/3 cup vegan butter Method: 1. Start by making the base. Crush the Oreos into fine crumbs. Then in a small bowl combine the Oreo crumbs with melted vegan butter. Stir until you have a sticky mixture that sticks together. 2. When you have your mixture ready, spoon it into tart case. You can press it down with the spoon or your hands to get a nice flat surface. 3. Place the base in the freezer. 4. Meanwhile, get a large mixing bowl and add in a can of coconut milk. Whisk the coconut milk a little. We use an electric hand whisk for 1 minute. 5. Add in the condensed coconut milk and peanut butter. 6. Continue to whisk until you have a smooth and even mixture. 7. Pour this into the tart base. 8. You will need to leave this for around 1 hour to set. 9. Remove the pie from the freezer and cut yourself a slice. 10. We decorated the pie with broken fruit and vegan whip. Note: We recommend storing this pie in the fridge or freezer. If you store in the freezer then ensure you leave to defrost for 10 minutes. We decide to make our favourite matcha smoothie recipe and topped it with a selection of fruits, seeds, and nuts 💚💚💚 Ingredients (1 smoothie bowl): - 2 frozen sliced bananas - 1/4 cup frozen pineapple - 1/4 cup vegan vanilla ice cream - 1/4 cup dairy-free milk - 2 tsp matcha powder - 2 tsp agave syrup Method: 1. In a small bowl, combine the matcha powder with 10ml of boiled water. Whisk to combine and add the agave syrup to create a thick matcha syrup. 2. Add fruit, ice cream, and milk to a high-speed blender. Blend for a 2 minutes to ensure the texture is thick and creamy, then add the matcha syrup and blend for another 30 seconds. 3. Serve quickly, adding into your bowl and topping with fruits, seeds, and nuts.
