Brown Cookies (Norwegian kneppkaker):
4 eggs
200 g (1 US cup) of sugar
0.75 dl (5 tablespoons) of golden syrup (light treacle)
0.5 dl (3 1/3 tablespoons) of milk
1 1/2 teaspoon of baking soda
300 g (1 1/2 cups) of flour
Whip together eggs and sugar. Stir baking soda into the milk and add to the mix. Whip in the syrup (pour it in slowly). Sift and stir the flour into the mix.
Cover a tray with baking paper and use two spoons to make the cookies (make sure to leave some space between each cookie, as they will grow in size). Bake at 200 degrees Celsius (Fahrenheit 392) for 10-15 minutes until the cookies are brown.
Simple and tasty. No wonder the old colonel was a bit protective of them.
