HOW TO STOCK YOUR KITCHEN FOR A SATISFYING PLANT-BASED DIET

We’ve never been so attuned to what’s in our kitchen, keeping a close eye on our favorite pantry staples and seeking inspiration for satisfying meals that will put the contents of our refrigerators to good use. Eager to know what an expert in plant-based cooking keeps on hand to make healthy and delicious meals, we recently reached out to Victoria Dodge, co-owner of the Wilmington and Los Angeles-based Yoga Salt studios and co-author of the plant-based cookbook The Yoga Plate, for advice. In addition to outlining pantry essentials, freezer must-haves, and more, she discussed the many benefits of taking a plant-based approach to dining. “Your digestion will be better with all the added fruits and vegetables, and in turn your skin will be clearer, your sleep will be better, and your energy will be higher,” Dodge says. As an added bonus, a vegetarian diet has the wonderful side effects of decreased environmental impact and preservation of natural resources like food and water. All the more reason to add the following items—many of which have long shelf life—to our next grocery list.
WHAT TO KEEP IN YOUR PANTRY According to Dodge, these are the items that form the backbone of a plant-based diet, from essential legumes and grains to nuts and baking supplies.
BEANS & GRAINS From canned to dried, beans are the primary source of protein in a plant-based diet. Brown rice, quinoa, and oats are a great alternative to other carbs with a high glycemic index.

An Expert’s Guide to Travel: A Conversation with Megan Winslett

Meet Megan Winslett, owner of Megan Winslett Travel, an independent affiliate of Brownell Travel, a luxury travel consultancy. Megan’s professional background includes stints as executive director of the Wilmington Chamber of Commerce’s foundation, and in executive-level leadership development partnered with the Center for Creative Leadership.
Travel has always been an important aspect of her life. She grew up in a military family, and she always thought of a travel career as a dream job. Two and a half years ago, Megan made the leap and established her own travel advisory business affiliated with Brownell.  For Megan, it’s the perfect mix of being an entrepreneur designing custom travel itineraries for clients with the ability to tap into the resources of a well-established, premier travel company. Brownell luxury travel consultants have been advising clients since 1887, and their network of independent advisors expands around the entire globe. Brownell consultants have guided clients through wars, global pandemics, and everyday hiccups that can happen while traveling.
We caught up with Megan to get her thoughts on the topic on every traveler’s mind, COVID-19, commonly referred to as coronavirus, as well as the benefits of working with a travel advisor when planning your next vacation, or altering plans when unexpected challenges come up!  Here are her recommendations.

TSG: We're heading into a busy time of year for travel. How are you advising clients who are planning or have already planned a trip during this period when we are experiencing uncertainty when it comes to the coronavirus?
MW: Truly, it’s a case-by-case situation. I’ve looked through my list of clients with upcoming travel and have been reaching out with updates, giving them the time and space they need to think through their travel plans, as well as their own risk threshold and preferences. For instance, I’ve talked to clients who are more susceptible to the virus- families with children with a compromised respiratory system, and those who are going overseas and over 60- and gave them facts to evaluate the options available so they can make the best decisions for themselves and their families.
For some people, the risk isn’t about the virus itself, rather the consequences of travel that could hold them up in an airport or postpone their return from a trip. While there’s always a risk of viruses like the flu or general travel delays, it’s more about trying to take the emotion out of the news and discuss reality on a factual basis. 
In times where there are major disruptions like this, I see it as our time to shine.
TSG: Walk us through the process of working with a travel consultant like yourself right now.  What’s involved? 
MW: I start the process by having a “discover call” with each client, not just to talk about the nuts and bolts of their trip, but also to cover key topics like their travel style, and what they are looking to get out of the trip. Lately, I’ve been leading with the fact that we’re in unknown times, but many of the people who are planning right now know and understand the climate, and are moving forward with plans. Some people have made adjustments to their itineraries, but what’s most important from the advisor role is communication that many partners are loosening cancellation policies and some waiving fees to accommodate the needs of travelers. The companies that Brownell works with are not looking for the quick sell, it’s about building relationships with our clients through thick and thin.
In times where there are major disruptions like this, I see it as our time to shine. We are able to provide the best service possible for our clients, and the partners we work with are really able to build a relationship with travelers that will last longer than the trip. One small example is the Brownell Travel Air Desk, which helps with flight changes, and the use of an emergency number for any after-hours flight cancellations or disruptions. From the minute they leave their home, my clients are backed with 24/7 global support that is part of the service.

TSG: What are some of the places people are interested in traveling to right now, and where are you recommending people visit?
MW: It’s all changing so quickly, but as of right now I would say that the United States, Central and South America, and the Caribbean are the “safe” destinations, but I’m still booking Europe and have several trips for clients on the horizon for the summer in Italy. A key right now is managing the changes that are happening all the time. I get updates three times per day, which helps me have the most up-to-date information to share with my clients. The main partners that we use are focused on making everything easier for people to move on with travel plans and minimize any risks. 
One thing I always recommend is travel insurance to protect your investment. It is, of course, a personal decision, but the best insurance is CFAR insurance, aka “Cancel For Any Reason,” which allows travelers to cancel their trip as needed when problems like an epidemic or pandemic arises.

TSG: If somebody did have to change their plans on short notice, are you recommending any in-state or regional trips?
MW: I’m working with a family who has had to adjust their spring break plans which they’ve switched to Colonial Williamsburg, Washington, DC, and Charlottesville, VA. It is going to be a great trip for them, and an added bonus is that they’re able to work in some college visits. 
Florida is also an option for a quick-change getaway. The Florida Keys are a great place for spring vacation. My own family is headed to southern California for spring break, and I am planning to travel to Mexico and the Caribbean in the coming weeks, as well as a multi-week trip to Europe this summer. I would never want to put myself or my family at risk for any potential issues, but I’m moving forward with my own plans to visit probably four countries in Europe this summer, and of course heeding the advice that I’m giving to my clients when planning personal travel. 
People who move forward with travel always have my full support and that of Brownell, which can provide peace of mind when something, anything, comes up during travel no matter the status of any high-importance travel watches.

TSG: Finally, are there any websites that you recommend for people to follow during what seems to be a crisis?
MW: It’s all about getting the facts. I’m recommending to clients (and following myself) the World Health Organization (WHO), The Centers for Disease Control and Prevention (CDC), as well as Johns Hopkins University, which has a tracking map updated in real-time and informative blog. I also always recommend registering with the State Department and checking for advisories in case anything happens, we know our citizens who are abroad.

TSG Tip: Renew the Skin You’re In

Winter can be harsh and wreak havoc on your skin: from head to toe. With the change in each season and for some — a change in footwear (goodbye sandals, hello booties), it is essential to adapt a new skin care routine. Cooler outside temperatures (or yo-yo temps as we experience here in the South) coupled with indoor heat and lower humidity levels can cause both the air and skin to become drier. Skin conditions such as psoriasis, eczema, dermatitis, and rosacea can flare up during the dry, cooler months. As a result, we must remember to hydrate and protect our skin. To help you combat winter skin, make you feel your best self, and keep your skin hydrated, protected, and glowing— here are a few winter skin care tips: Use Tepid Water. During cold winter months, hot showers and baths can be very tempting. It is best to avoid the hot water habit — instead use tepid (lukewarm) water and limit your showers to 5-10 minutes. Hot water can damage the surface of the skin and strip your skin and hair of the necessary oils, which in return can cause dryness, dehydration, and skin irritations such as redness. Tepid water is best on your body; however, for the face, cool water is overall the best option especially for those with rosacea and/or sensitive skin as cool water will tighten pores and constrict blood vessels. Switch to a Cleansing Milk. Protect your skin by utilizing a gentle, cleansing milk and avoiding alcohol-based cleansers — even in the shower. Applying a milk cleanser to your skin creates a physical, protective barrier between the water and your skin. Cleansing milks are gentler on the skin and have moisture built in. Once the milk cleanser is removed from your skin, it creates a protective film to assist in nourishing the skin and preventing moisture loss. Exfoliate Less. Exfoliating your skin is an essential component to your skin care regimen as it removes the dead skin cells to make room for new cells — promoting cell turnover. In the winter months, your skin is already compromised, thus, you may want to cut back to exfoliating your skin only once a week instead of the recommended 2-3 times per week. Over-stimulating the skin can strip the skin’s protective barrier and cause trauma to the skin, which can trigger inflammation, dehydration, sensitivity, and flakiness. It is best to utilize a chemical or physical exfoliant, but never in conjunction with the other. Dry brushing is a great tool to utilize on the body as it not only removes dead skin cells, but it stimulates circulation, eliminates toxins, and invigorates the skin. Use a Serum. The use of serums are essentially even more important during the winter months as they contain active ingredients and assist with locking in moisture. A great serum to utilize in the winter months is one that protects your skin from TEWL — transepidermal water loss. Upgrade Your Nighttime Moisturizer. During the winter months, you may find that you need a little extra moisture — hydration is key. The drier air can deplete the skin of its own natural oils, thus a heavier creme moisturizer is recommended in the evening. The best time to apply a moisturizer is either after cleansing or applying a serum as this helps to lock in moisture. Freshly cleansed skin tends to absorb moisture better — always remove your makeup. If you still see that your skin needs some added moisture, try utilizing an overnight hydrating creme masque. When hydrating your skin, don’t forget to moisturize your hands and your lips. Pro tip: Invest in a humidifier for your bedroom to add moisture to the air and to retain moisture in the skin. Protect Your Skin. It is important to protect your skin year-round, even in winter. Whether it’s sunny or cloudy, snowing or raining, the UV rays from the sun can still damage your skin and cause premature aging. Choose a sunscreen with mineral based ingredients — titanium dioxide or zinc oxide — instead of chemical based. Just as you protect your skin, it is essential to protect your hands, ears, and your eyes from the UV rays — wear your sunglasses. Re-Hydrate your Skin. Grab yourself a hydrating mist, preferably one that is TSA approved. Hydrating mists are useful throughout the year even on planes, but especially in winter as it will replace moisture, refresh the skin, and protect against environmental factors. The best hydrating mists contain vitamins and antioxidants to energize the skin. Pro tip: Spritz throughout the day to rejuvenate your skin and after a makeup application to lock in any mineral foundation and to maintain a more glowing, radiant complexion. Eat healthy and stay hydrated. A healthy diet and adequate water consumption is crucial to your skin health. Drinking at least half of your body weight in ounces of water each day can assist in moisturizing your skin from the inside out. In addition, drinking warm water in the morning can be beneficial for your gut health and assist in removing toxins in our body. 3 HEALTHY AND DELICIOUS WINTER SOUP RECIPES

Short days and chilly temperatures call for simple, warming suppers. Enter: soup, a dish that’s practically synonymous with winter. Eager to add a few go-to options to our repertoire, we reached out to Victoria Dodge, who with her husband, Tamal, founded the Los Angeles, California, and Wilmington, North Carolina-based Yoga Salt studios, and coauthored The Yoga Plate, a collection of more than 100 simple and nourishing vegan recipes. Here, Dodge shares three delicious and satisfying one-pot dishes that will carry you through the cooler months and well into spring. 
COZY WINTER WHITE BEAN SOUP
“Full of nutrients and loaded with protein, this soup will warm your heart and nourish your body on a cold winter day,” says Dodge of this delicious, hearty dish.
Serves 6 to 8
INGREDIENTS:
2 cans white beans
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 stalks celery, diced
2 medium potatoes, diced
2 large carrots, diced
1 tablespoon parsley, finely chopped
6 cups vegetable broth
1 cup water
1 teaspoon sea salt
Pepper, to taste
INSTRUCTIONS:
In a large soup pot, heat olive oil over medium heat. Add onion, celery, and garlic and cook until tender. Add the beans, potatoes, carrots, parsley, salt, and 6 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about one hour, adding more water as necessary. Season with salt and pepper to taste.

GREEN SOUP
“This warm, savory soup is light, but packed with lots of vitamins and minerals and loads of fiber,” Dodge says of this bright and flavorful green soup. “It takes only 30 minutes to prepare, so it’s great when you are in a pinch but want something satisfying.”
Serves 6 to 8
INGREDIENTS:
1 tablespoon grapeseed oil
1 cup onion, coarsely chopped
2 cups celery, coarsely chopped
4 cups broccoli
1 medium size zucchini, coarsely chopped
2 cups baby spinach
4 cups water
1 tablespoon sea salt
Pepper, to taste
INSTRUCTIONS:
Heat one tablespoon of grapeseed oil in a large soup pot. Add the chopped onion and celery and sauté until slightly tender. Add the broccoli, zucchini, water, and salt, and bring to a boil. Cover and simmer until all the vegetables are soft but not overcooked (they should still be vibrant green). Turn the heat off.
In a high-speed blender, scoop out half of the soup mixture and blend until smooth. Pour into a separate bowl. Blend the remaining soup, and then pour all blended soup back into the soup pot and heat to desired temperature and serve.
Note: This recipe can be adapted to include different vegetables—Dodge sometimes uses 2 cups cauliflower and 2 cups broccoli, or kale or chard instead of spinach.

BOMBAY RED LENTIL SOUP
“The beauty of this dahl is that it is simple, and only takes about 30 minutes to make. The aroma from all the spices will warm your house and make you feel like you are in India,” Dodge says. “Plus, it’s filled with fiber and protein, and there are antioxidant elements and immune-boosting ingredients as well.”
Serves 6 to 8
INGREDIENTS:
1 tablespoon coconut oil
1 cup onion, diced
1 glove garlic, minced
1 teaspoon turmeric
1 teaspoon cumin
2 teaspoons salt, plus one pinch
1/8 teaspoon cayenne (optional)
1 cup red lentils, washed and sifted
1 carrot, diced
4 cups vegetable broth
2 cups water
1/4 teaspoon pepper
2 tablespoons lemon juice
2 cups spinach
1/2 cup diced tomatoes
1/4 cup fresh cilantro, torn
1/4 cup scallions, diced
Heat the coconut oil in a large soup pot on medium heat. Add the onion, garlic, turmeric, cumin, a pinch of salt, and cayenne (optional, for those who like a little heat), and sauté until the spices are blended in and the onion becomes tender. Next, add the lentils, carrot, vegetable broth, water, two teaspoons of salt, and pepper, and bring to a boil. Reduce heat and let simmer uncovered for about 20-30 minutes, or until the lentils fall apart. Add the lemon juice, spinach, and tomatoes just before serving. When the spinach is wilted, stir all ingredients together before ladling into bowls. Top with cilantro and scallions.

After a nearly four year hiatus, I am so thrilled to bring The Scout Guide back along the Cape Fear Coast. The reception has been incredible!  If you are just discovering TSG, you will immediately notice that it is beautifully photographed and thoughtfully designed.  I have to give a special note of appreciation to Michael Blevins, Mary Raynor, and Chelsea Hollis for their fine photography work, along with lead designer, Rebekah Bonds for making Volume 3 a stunner!  We hope you enjoy it as much as we do.

The Vietnam Traveling Memorial Wall, a 288- foot replica of the Vietnam Veterans Memorial, is coming to Mayfaire Town Center, 1055 International Drive, July 26 to July 29, 2019 and will be open 24 hours a day and FREE to the public.  The Vietnam Traveling Memorial Wall honors the more than three million Americans who served in the U.S. Armed forces during the Vietnam War and its walls bear the names of the more than 58,000 men and women who made the ultimate sacrifice. American Honor Guards of North Carolina and Vietnam Veterans of America, Chapter 885 are proud to be able to bring the healing Wall to Wilmington. Opening Ceremony will begin at 10:00 AM on 26 July & Closing Ceremony will begin at 8:00 AM on 29 July.

At The Wrightsville Beach Museum is designed to reflect how life was lived in a typical summer cottage at Wrightsville Beach.  They have a bedroom, bathroom and kitchen showing typical furnishings of the time. Other rooms feature exhibits showcasing various periods of history, events, or items that reflect a lifestyle of times past. Visitors can view slideshows of photographs and postcards in our collection and an oral history video, where longtime residents reminisce about Wrightsville Beach and Lumina pavilion of the 1940s.
On July 13 there will be games, music, swing dancers and a book signing with Mary Flinn, author of the new novel Lumina set in 1920s Wrightsville Beach.

Scouting ILM: Independence Day Edition!
CELEBRATE
RED WHITE & BLUEGRASS  Come celebrate the 4th this Thursday on the water at Port City Marina in Downtown Wilmington! Enjoy live Music from Massive Grass on Pier 33, BBQ, Drinks + MORE! This event is FREE for all to attend.Located behind Marina Grill - The Pier at Port City Marina.This free event starts at 6PM, music starts at 6:30, and fireworks start at 9:05. Live music will continue after the fireworks until 10PM.                                                           
LISTEN
The Downtown Sundown Concert Series presented by Outdoor Equipped run each Friday night from May 24 through August 30, 2019. The free concerts are from 6:30pm to 10pm and feature both local performers and touring bands. This Friday’s headlining band is Hey Johnny Park and is a Foo Fighter’s tribute band. Opening band starts at 6:30pm, Headliner at 8pm. Food, beer and wine are available for sale. Outside beverages, food, coolers and dogs are prohibited.

Enjoy a weekend Japanese Calligraphy workshop at the Cameron Art Museum on July 20th. Students will learn to write and draw kanji characters through the traditional Japanese art of “oshuji” or Japanese calligraphy. Learn how to write your name of choice with Japanese character and large letters. This class is for adults of all skill levels. July 20, Sat., 10:00 a.m. - 3:00 p.m. & July 21, Sun., 12:00 - 3:00 p.m. Museum members are $92 and non-members are $115 plus a $15 material fee.

Scouting ILM: 6.28.19
LEARN: Cape Fear Museum has two new exhibits opening this Friday! Dinosaur Discovery and 20th Century Gallery will both be admission free June 28th-30th. Dinosaur Discovery explores the world of modern paleontology and the discoveries that reveal how dinosaurs lived, moved and behaved. The revamped 20th Century Gallery is the final chapter of the Museum’s core exhibit, Cape Fear Stories. The new exhibit paints a picture of New Hanover County and the dramatic social, cultural and economic transformations that shaped life in the 20th century and beyond.
MEET: There will be an artist’s reception Water Ways: Paintings and Drawings of Land and Sea by James Horton at Bellamy Mansion this Friday from 6-8 p.m. Light refreshment will be provided. Horton is native to Wilmington and his latest work is influenced by the history and vibrancy of the Carolina coastal and River Towns. You have the opportunity to see his beautiful works in-person which are currently on display June 10th-July 21st at the Bellamy Mansion. 
VISIT: Airlie Garden’s Butterfly House is open seasonally May 15 – October 15. You don’t want to miss this magical experience! Surround yourself in serenity by walking through the Tranquility Garden, home to Airlie’s 2,700-square foot native butterfly house. Butterflies can be seen in this seasonal, screened structure. Admission to the Butterfly House is included in the Airlie Garden admission.
