Yessir! here you go:
for the “wrapper”:
250 grams white flour
250 grams of lard
15 grams of granulated sugar
1 egg
a pinch of salt.
5 grams of unsweetened cocoa powder
dry marsala
white wine
cannelli (2 cm diameter and 12 cm long bamboo or tin tube )
For the ricotta cream:
1/2 (half) kilogram of VERY fresh ewe’s ricotta
150 grams of icing sugar
a pinch of powdered cinnamon
50 grams of black chocolate (optional)
2 candied cherry for a cannolo
candied orange (optional)
How to prepare:
wrapper:
Mix flour, zugar, cocoa and salt. Add the lard and stir until well amalgameted , then add the eggs, mix and continue to stir adding marsala and a little white wine until the compound is pretty solid.
Form a ball, and cover it with a towel for an hour, at least.
Level the dough with a rolling pin, powdering with the flour.
When the dedired thickness is reached, make some 10 cm diameter discs.
Envelop the discs in the cannellas greased in the lard, merging the opposites, and brushing with albumen.
Fry in abondant and very hot oil, two or three at times. Once that the dough will be dark golden (inner and outer), drain and cool on blotting paper.
For the ricotta cream:
Drain the ricotta very well and pass it in a sieve.
mix it very well with the icing sugar and let it rest for an hour.
add cinnamon and chocolate (if wanted)
Fill the wrappers with the cream and level both holes, add a candied cherry (and orange maybe) and add the icing sugar on the top.

Da Il Secchio e l’olivaro si possono mangiare più di 40 tipi diversi di bruschette. Il pane casereccio viene sfornato dall’antico “Forno Renella��� di Trastevere e le fette di pane vengono guarnite con leccornie cucinate secondo tradizioni romane e non, con verdure, ortaggi e salumi di prima scelta.
Io ve l’ho detto, poi fate ‘n po’ come ve pare.
