One thing that I will always love about Mina Harker is how truly important she is in the meta textual context of the novel itself.

We are reading the epistolary novel Dracula because Mina compiled every single diary, letter, newspaper, and phonograph recording of the events at the speed of light with her typewriter. Meta wise, without Mina we wouldn't have the novel itself that we have read before.
