Would a melanistic eevee result in a "regular looking" umbreon if it evolved at night?
pretty much, yes. you might see some difference in eye color, but the color of the bioluminescent pattern is determined by the structure of the luciferin they produce. excess melanin won't affect that!
shiny umbreon, on the other hand, produce blue light because the shiny gene modifies how they produce luciferin slightly, giving their light a different color.

"I know well that it is apart of me know but there are many things I still miss. I know my friends and my family but I know I'm not seeing them growing with me. My brother was a Dartrix last I had seen him but now he's evolved again."
He paused from his rambling, looking in the general direction of Allen once more.
"But do not pity us, we are no less than our able bodied counterparts. Always remember that. Difference is not weakness."
