Plant-based diets have taken root in American culture in recent years, mostly thanks to the growing realization about the health benefits of this eating pattern. But contrary to what some people think, plant-based doesn’t necessarily mean you must forego all animal products. Rather, you might just eat meat or dairy products less frequently, or in smaller portions. To replace those lost calories, you should eat more beans and legumes, vegetables, whole grains, and fruits. These mostly low-fat, nutrient-rich foods have been linked to improvements in many health-related issues, including high blood pressure, diabetes, and heart disease. Better for your budget and the planet A plant-forward diet also can help reduce your food budget. And there’s yet another reason to feel good about this eating pattern: it helps preserve our planet’s health. A diet that contains only small amounts of animal foods requires a fraction of resources such as water, energy, and land to cultivate, and it generates fewer greenhouse gases. What’s more, by eating unprocessed or minimally processed foods, you avoid the additional energy and packaging that go into the production of processed foods. “Following a plant-based diet may be an important way to reduce your carbon footprint,“ says Teresa Fung, adjunct professor at the Harvard T.H. Chan School of Public Health. Research suggests that diets high in red meat account for five times the emissions of plant-based diets. How much plant food should you aim for if you want a truly sustainable diet? In early 2019, the EAT-Lancet Commission on Food, Planet, and Health — a multidisciplinary group consisting of 37 leading scientists from 16 countries — described the type of diet needed to support a world population of 10 billion by the year 2050 in a healthful, sustainable way. Its report urged people to double the amount of fruits, vegetables, and nuts they eat, and reduce consumption of red meat and added sugars by at least 50%. The recommendations are quite a departure from what most Americans eat — allowing for only a single 3.5-ounce serving of red meat per week. The commission included a graphic representation of its “planetary health plate” that shows just how much of a person’s overall diet should come from plant-based sources. Easy plant-based dinner recipes If you need some inspiration for moving toward a plant-based diet, try these easy recipes from Monique Tello, MD, MPH. Both contain a variety of veggies and are very adaptable — simply swap in your favorite vegetables or those you happen to have on hand. Frozen or low-sodium canned veggies are a convenient and still nutritious alternative to fresh produce. Print Easy Frying Pan Frittata This recipe works very well with frozen veggies. For dinner, this can serve two to three people. Add a side salad, if possible. Course Dinner Ingredients 1/2 small onion, chopped 1 cup red and green peppers, sliced thin or chopped small 4 cups spinach and/or other leafy greens, torn or chopped (1 cup if using frozen) 1 tbsp extra-virgin olive oil or canola oil 1/4 tsp garlic powder 1/4 tsp black pepper 1/2 tsp dried oregano and/or basil (or 2 tablespoons of chopped fresh herbs) 4 eggs Instructions Use a medium-sized frying pan over medium heat and heat oil until shiny. Add the onion, stirring until just soft Add the peppers. Stir until the onions and peppers are very soft and just browning. Add the spinach/greens to the pan and stir until wilted and hot. Crack the eggs into a bowl and whisk them up with a fork until they’re uniformly yellow and a little foamy. Pour the eggs over all the veggies, turn the heat to low, and cover the pan. Shake the pan a few times during cooking, which more evenly distributes the eggs and prevents sticking. Check frittata after three to four minutes. If the eggs look done, loosen it with a spatula to make sure there is no runniness. If there is, cook thirty seconds to a minute longer, covered. Using a spatula, slide frittata gently onto a large plate and serve. We slice this up like a pizza.   Print Make-Your-Own Soft Tacos This recipe will serve six people if some of those people are young children. For hungry teens and adults, expect it to feed three or four. Course Dinner Ingredients 1 15-ounce can of unsalted black beans 1 can corn niblets, unsalted 2 avocados 1 red bell pepper, sliced thin 1 tablespoons lemon juice 1 cup of salsa (fresh or jarred) 1 cup shredded cheddar or Monterey jack cheese 1/2 cup of plain Greek yogurt 1/2 cup pepitas (pumpkin seeds), unsalted (optional) 1/2 cup green olives (optional) 8-12 corn tortillas (made without lard) Instructions Dice the avocados and gently mix with the lemon juice. Heat the beans in the microwave or the stovetop; stir. Heat the tortillas (you can wrap them in a clean towel and zap them in the microwave on high for 30 seconds). Why do the fairies in my Mother’s garden leave notes for the children? I think it is because they know my mother, a former teacher, appreciates that the children have to read the notes and respond to them by writing back. If you don’t have a garden, or live in an apartment or condo, as I do, think about a planter or a terrarium. If your child has severe seasonal allergies, or is hyper-sensitive to sunlight, then consider creating a plant free fairy environment. Even the tooth fairy needs a small doorway into our world. Non Pro-Tip A Fairy Light Catcher In my Mother’s backyard, the most magical feature of her “fairy garden” is created by the most unbelievably simple process. In my first pass on Etsy, I didn’t come across any of these Fairy Light Catchers, but I can tell you how to make them in a snap. And give you a link to a supplier than can provide the raw materials you will need. Items Required: Small mirror pieces (Clear or Colored), any shape, approximately the size of a quarter or smaller and one or more reflective glass beads or clear/plastic bead from your stash. Fishing line or other clear string, if you prefer to use a natural thin rope that is weather proof, you can still achieve a similar effect. A paper clip or ornament hanging hook. Hot glue gun or strong permanent weather-proof adhesive. How To: Take two pieces of mirror (or a reflective glass bead) and place the two pieces so that the non-reflective sides are together. Create 5-8 pairs of mirrored pieces. Take a long piece of fishing line, approximately 2 meters (2 yards) in length. Place a bead (any sort) on the string and fold the entire string in half. Knot the string, or tie it, so the bead is secure. Open one set of mirrors and add glue to both back (dull) sides of the mirror. place the string over one of the mirrors, just a few inches (8cm) from the bead, then place the paired mirror over the string so both reflective sides are facing out. Continue this pattern, adding mirror pairs up the length of the fishing line string. Finish the strand by placing the ornament hook or paper clip at the top end of the string, tie it firmly in place. You now have a strand of reflective garden fairies or Fairy Light Catchers. Hang from a planter hook, branch, or other object in the garden so that the strand can move gently in the breeze and catch sunlight. Light reflected from the mirrors will appear to “dance” over your garden, fence, and trees, and plants. It gives the appearance of small moving “fairies” over the surfaces in your garden. You can experiment with length of strands, beaded accents, and size and number of mirrors to achieve the effects you desire. These Fairy Light Catchers hard to detect from a distance, as they blend in with the leaves and trees around them, and that is why they appear to be so magical. If you are big on the Upcycling, and we all should be, try using broken shards of old DVDs or CDs, or any other reflective do-dads instead of mirrors. You can also create really long strands, several feet in length, that you can drape over a long tree branch or fence post or wall. It really depends on what you have to work with in your area. Enjoy! La Gran America
Teresa Margolles’ “La Gran America (The Great America)” is an installation that consists of many pebbles attached on the wall. The small square pebbles almost fill the whole wall of the exhibition space, and as a whole they form a rectangular. The pebbles are made out of mud from Rio Grande, where endless immigrants died in an attempt to go to United States, crossing the border. Rio Grande thus symbolizes the tragedy that immigrants must have faced, in order to survive. As immigrant issues are still yet to be resolved, and additionally as International Organization for Migration reports that the number of deaths has increased, Teresa Margolles’ work deals with a historical but also contemporary issues.
The strongest visual element that enthralls the viewers is the work’s uniformity and scale. As same shaped monotone pieces are assembled in a row in a large scale, it feels like the pebbles on the wall create a space that invites the viewers to the tragedy of Rio Grande. In this regard, the work even reminds me of Stonehenge or other stone cultures from the prehistoric era. Like the Stonehenge, which the stones surrounded create a round space inside, “La Gran America” also creates an imaginary space though the work is planar. The scale is also an important element in this work, as the color and scale resemble nature landscapes such as Grand Canyon. The viewers lose sense of the time and just look at the piece for a while, overwhelmed by the scale of it.
The work is surprisingly ironic because the artist does not use large sculptures or special strategies to convey his message. When people usually think of artworks that are significantly inspiring or impactful, they imagine large scale, weird looking sculptures or really well drawn painting pieces. Yayoi Kusama’s pumpkin pieces, Do Ho Suh’s house series all overwhelm the viewers because they are unique and really well uses the advantages of making 3 dimensional installations. However, Teresa Margolles just uses monotone squares to create similarly powerful mood. His works are not fancy, but the impact is really strong. I guess this style well conveys the messages of immigrant issues, because the issues ubiquitously exist. People do not recognize what immigrants go through until something actually happens. The ignorance of people towards immigrants issues and his style of making his work not fancy but impactful are parallel in my opinion.

The Orlando Improv presents, a true king of comedy, D.L. Hughley from today until July 22 in his Unapologetic Tour, based on his own one-hour special for HBO entitled Unapologetic. The special, D.L.’s fourth for the network (the others were in 1992, 1994 and 1999), premiered in September and is currently available on DVD. In its review, the Hollywood Reporter says the likable Hughley is the real deal, a guy who comes with his A-material and nails every line with smarts and savvy….connecting with the audience from the first minute through the last.
