Emmanuel Mounier

Fue un filósofo francés nacido en Grenoble en abril de 1905, fundador del personalismo comunitario, corriente filosófica que valora a la persona como un fin en sí mismo, buscando la liberación del individuo desarraigándolo de cualquier forma de materialismo.

Emmanuel nace en una familia de la pequeña burguesía y de origen campesino. Su padre era farmacéutico y muy estimado por su laboriosidad y dedicación familiar, y su madre igualmente entregada a la familia y al hogar.

Emmanuel tuvo una hermana quien estaba internada cuando él era pequeño. Acostumbrado a estar entre gente mayor, desarrollaría una actitud reflexiva bastante precoz.

Cuando Emmanuel tiene 13 años, sufre un accidente en el cual un compañero le lanza una piedra y pierde un ojo. Esto aunado a la sordera que padecía por una otitis mal curada influiría de manera importante en su carácter melancólico y tímido.

A pesar de los deseos de su padre de que Emmanuel fuese médico, al cabo de tres años, cambió los estudios de Medicina por los de Filosofía.

Con la filosofía se enriqueció la vida social e intelectual de Mounier, se interesó por el pensamiento de René Le Senne y leyó entre otros a André Gide y a Charles Péguy, quedando atrapado por este último.

En 1928, presentó el examen de agrégation junto a Jean-Paul Sartre, Simone de Beauvoir, Jean Daniélou y Raymon Aron. Pidió una beca para iniciar el doctorado y la disfrutó durante un año y posteriormente una beca de tres años a la Fundación Thiers la cual no termina dedicánsose a la enseñanza.

Al ver que la enseñanza no es su vocación, concibe la fundación de una revista de pensamiento, que convocase en torno a ella a intelectuales, artistas, científicos y personas inquietas, con diferentes visiones del mundo pero animados todos ellos por la convicción de que existe un primado de espíritu entre los seres humanos.

En respuesta a estas inquietudes funda la revista y el movimiento Esprit en agosto de 1932. El movimiento comenzó teniendo un cierto carácter político y se llamó Tercera Fuerza, subrayando así el rechazo tanto del comunismo como de la sociedad burguesa. Al    cabo de un año, la rama más política del movimiento se separaría de Mounier y de Esprit  en 1934.

Al estallar la segunda guerra mundial, el primer numero de Esprit sale en octubre de 1939 y se presenta bajo el titulo de Esprit et le voltigeur hasta junio de 1940. Mounier es llamado a los servicios auxiliares del escuadrón de Cazadores de los Alpes, cerca de Grenoble en donde su esposa y su pequeña hija se trasladan a Dreux, en tanto su hija Francoise atravesaría una enfermedad discapacitante provocada por una encefalitis provocada por una vacuna.

Durante un tiempo en 1942, se abrió un proceso en su contra y estuvo preso en la cárcel de Lyon, y posteriormente, fue preso politico en la prisión de Saint Paul en donde escribió su “Tratado del Carácter” y tras una huelga de hambre es absuelto. 

En 1944, tras la liberación de Paris, Mounier regresa a la capital y entre 1945 y 1947 estudio marxismo y el diálogo con esta corriente seria crucial en los años venideros.

A partir de 1946 y hasta 1949 Mounier viajó a diferentes países ofreciendo un diálogo con el cristianismo, y durante la guerra fría, Esprit se opondría al Pacto Atlántico porque confinaba a Francia y a Europa a formar parte de uno de los bloques.

En su teoría del personalismo comunitario, Mounier sugiere que el hombre sufría una doble alineación: la alineación idealista que se manifiesta en el plano de la reflexion y de las dialécticas sin fundamento, de los pensamientos gratuitos y de los ideales ineficaces. Un idealismo sin arraigo en el que la vida personal equivale al egoísta repliegue en uno mismo, y la alineación al activismo, que lanza a la persona al reino de las cosas impidiéndole encontrarse a sí mismo en su interioridad. 

El personalismo de Mounier venía a situarse así entre el existencialismo y el marxismo, en donde comparte con el primero el interés por la existencia del hombre concreto, recalcando que la existencia individual se caracteriza por una apertura y disponibilidad hacia los demás, muy alejada del individualismo, y con el marxismo comparte el rechazo la lucha a favor de la justicia social, en una organización política básicamente igualitaria y en donde se tenga en cuenta a los mas desfavorecidos.

En marzo de 1950 y tras dos crisis cardiacas previas Mounier muere repentinamente de un ataque al corazón a la edad de 44 años.

A zonzo per la Francia: Gaston Lenotre

Il maestro della pasticceria francese nel Novecento… Gaston Lenotre nacque il 28 maggio  1920 a Saint-Nicolas-du-Bosc  in Normandia, primogenito di due cuochi che fin dalla sua infanzia lo condussero nel meraviglioso mondo dell’arte della cucina francese. Poco più che ventenne Gaston dovette affrontare il terribile periodo della Seconda Guerra Mondiale, anni dove il settore gastronomico in gran parte del mondo crollò totalmente. Nell’immediato dopoguerra, il giovane cuoco dimostrò una grande forza d’animo e iniziò a girare Parigi con la bicicletta vendendo i suoi cioccolatini a chi incontrava per strada e nel 1947 riuscì, con la prima moglie Colette, ad aprire la sua prima pasticceria nel leggendario 16esimo arrondissement. Gaston si fece notare da subito, infatti nelle sue ricette ridusse le quantità di zucchero e farina, oltre a sostituire a classica crema pasticcera con una mousse aromatizzata anche con frutti tropicali come la guava, il lime e il mango. I suoi dolci erano  leggeri, freschi e il burro utilizzato era sempre il migliore sul mercato oltre ad aver portato, primo in Europa, la cultura culinaria giapponese soprattutto per l’arte dell’impiattamento, dove  il dolce deve apparire accattivante ed elegante nascondendo la tecnica e la precisione necessarie a realizzarlo. Tra le sue innovazioni tecniche ci furono il raffreddamento controllato veloce e l’utilizzo della gelatina nelle mousse, oggi usate dai più grandi pasticceri e che permettono una migliore conservazione del dolce. Dalla fine degli anni sessanta Gaston aprì una società di catering, oltre a diversi ristoranti che conquistano le tre stelle Michelin e una scuola di cucina a Parigi da dove sono usciti  fino ad oggi quasi tremila professionisti che sono ancora parte del mondo gastronomico francese. Amava spesso dire che  “La pasticceria è il miglior allenamento anche per gli chef grazie alla precisione e alla perfezione necessarie; il pasticciere invece deve conoscere i sapori e giocare con gli abbinamenti andando anche oltre la classica dolcezza“ al punto che Paul Bocuse, suo grande  amico e collega, dopo aver assaggiato l’Operà, la torta di mandorle farcita con crema al caffè e glassata al cioccolato di sua invenzione, disse che “Gaston sorprende come Monsieur Dior nella moda“. Nel 1982 il pasticcere fondò, con  Bocuse e Roger Vergé, il Pavillon de France pressò il Walt Disney World Resort di Orlando, in Florida. Gaston Lenotre morì l'8 gennaio 2009 nella sua casa di Sennely ed è sepolto nella basilica di Notre-Dame-de-la-Couture, a Bernay e suo nipote Patrick continua la sua storia come rinomato chef e pasticcere.
