I have a question I just thought of. I remember reading that the potato is something that you can discuss at length. I'm curious about the Irish potato famine (as it's called by many people) of 1845 - 52. The potato blight killed a whole load of potatoes, and blight warnings are still a thing today. But... honestly, why? Was just one variety of potato grown? If not, wouldn't different varieties have resisted? The only thing I'm even remotely familiar with is Panama Disease, which is killing off Cavendish bananas because they're all genetically identical - was that the case for the potatoes being grown at the time?
Oh boy. Okay, this is a huge complicated topic and I can only do the Cliff Notes version and even that is absurdly long, but here we go.
The cause of the Irish Potato Famine were, in order:
A) the British
B) the British but moreso
C) still the British but also capitalism
and
D) monoculture
I am not nearly so equipped to talk about A-C as many, many other people, so let’s talk about D.
Now, the humble potato is frankly one of the most glorious products of agricultural science ever created, for which we must thank the indigenous people of Peru, who produced some goddamn geniuses at potato breeding (and also figured out how to freeze-dry potatoes centuries before Idahoan.) The Incas had literally thousands of potato varieties, every size, shape, color, growing condition, right down to sacred potatoes only for consumption by the royal family. They did seriously epic shit with a weird little tuber, a feat perhaps only surpassed by the geniuses who made corn out of teosinte.
Quite a long time later—by which I mean about ten thousand years after the potato was domesticated—the Irish were growing a potato variety called the Lumper. It was a big, coarse, ugly-ass potato which apparently didn’t even taste that great. Irish farmers had other potatoes that they liked a lot better! But the Lumper had three things going for it—it gave huge yields, tolerated nutrient-poor soil, and it didn’t mind wet feet.
(Wet feet is the gardening term for plants with their roots in waterlogged soil. Most potatoes do not actually like wet feet and will rot. But the Lumper was fine with it, which meant that basically you could grow the things in poor soggy soil, which large swaths of Ireland had in generous supply.)
Because of a whole lot of really abusive shit by various landowners, a lot of Irish people ended up dependent on the Lumper for their diet, and I mean dependent. You can live for a really long time on cow’s milk and potatoes if you have to, and a potato that would produce massive yields in crappy wet soil was a godsend. So you had vast areas that were planted with just the Lumper. (There are some reports that other, better-tasting potato varieties were grown for the landlords, but while the workers dug them, they were not allowed to eat them. I can’t speak to the truth of this or not, but it’s definitely worth looking up a full history of the socioeconomics of the famine, if you ever happen to be feeling too good about the world and want to be crushed.)
Unfortunately, the Lumper has one other significant trait—it is extremely vulnerable to potato blight, a disease caused by Phytophtora infestans, which is a weird little thing called an oomycete. It’s more like a fungus than it is anything else, but it’s actually in a separate kingdom called Chromista. (Currently, anyway. Taxonomy is where idealistic young scientists go to become old before their time.) Nevertheless, for our purposes, let’s just call it a fungus. (Also, Chromista is a great name for an alicorn in My Little Pony.)
P. infestans loooooves members of the Solanum clan, which include tomatoes and potatoes. This love is not returned. In a tomato, it’s usually called late blight, in a potato, it’s potato blight, no matter what you call it, it’s bad news. It likes damp, cool conditions, and of course Ireland is basically one big damp cool condition, so once the blight got established, it was in heaven.
Blight on a potato takes about five days from start to finish. This sucker is FAST. One day there’s a blotch on a leaf, next day there’s some whitish stuff under a leaf, then the tubers are suddenly turning black and mushy and stink to high heaven. You may even think you got a good tuber and put it in storage and then you open the door to the root cellar and the whole bin has rotted practically overnight.
The spores can spread by wind, and once it landed on a potato plant, all it needed was like two days above fifty degrees with high humidity, and it was off and running. And it gets in the soil. But worst of all, it lives in the tubers themselves.
Potato cultivars, for those who don’t know, are almost always a clone of the parent. All Yukon Golds are basically the same Yukon Gold. You pop a tuber off a plant, you pop it in the ground, it grows another plant just like the first one, asexual reproduction at its finest.*
Now, potatoes can and do set seed, but there’s some variation even in a seed with two parents of the same variety. Two Yukon Golds might give you Yukon Goldish. Mix up multiple varieties and you don’t always know what you’re gonna get.** (I have grown potatoes from mixed seed and thus made my own cultivars, it’s fun, but the results are wildly variable. Some don’t set tubers at all, some contain high levels of solanine.***)
If you want specific, uniform varieties that all perform the same way, you probably use the tubers. More importantly, tubers start growing right away once you wake them up, whereas potato seedlings can be finicky and often won’t do anything impressive the first year.
To make matters more confusing, the little tuber clones are referred to as seed potatoes.
Anyway, back to the blight. Everybody was growing from little tuber clones, which could be infected with the blight. This means that if your seed potatoes are infected with blight, even if they look fine, if you plant them, your whole crop is infected. The minute you get a cool wet day, the oomcyte wakes up and goes to town. And if you leave an infected potato in the ground, it infects everybody else—and if you’ve ever dug potatoes, you know that you always, always miss one.
Well. The blight came, it hit the Lumper, and it spread like wildfire. The Lumper grew in the wet conditions the blight loved, and was also really susceptible to it, so it was a match made in hell. There were potato varieties even then that were more resistant to the blight, but they were tiny islands and a sea of blight was washing over them daily, so they eventually succumbed. Even if you planted a different potato, if it was in soil that had previously held the Lumper, it was likely doomed.
This is the problem with monocultures. You plant all one variety and it’s susceptible to some particular bug, when that bug hits, you have no fall back position. And potatoes, being more or less clones, are even more vulnerable than most seed-grown crops, and this bug is particularly nasty and the spring of ‘45 was exactly the right weather and the British government was being particularly evil and ultimately a million people starved to death because of a perfect storm.
The Lumper still exists. Somebody turned up some heirloom seeds back in 2008 and grew them out, and what they got is probably pretty close to the original. Being seed grown, it doesn’t carry the blight. It’s an ugly, watery, kinda waxy potato that even its champions think tastes sorta okay, I guess. Cultivariable, one of the few sources I can find, says that in addition to not being resistant to blight, it’s not resistant to anything else either, and there’s not much point in trying to grow it unless you have long dry summers and no local blight.
And that is the saga of the Lumper, the blight, and why I personally always plant at least four varieties of potato.
* There’s some subtleties here, but for layman’s purposes, we’ll go with this.
** It’s actually way complicated, but this is already hella long.
*** Same stuff that makes green potatoes toxic. Super bitter, so you know right away it’s inedible and spit it out. We still refer to taste-tasting the new crop from seed as “the Potato Suicide Pact” but it’s not actually dangerous.

EMERALD CITY / EVERGREEN STATE / FOGHORN NITES & THE SNOWS OF TAHOMA
Hey again! Here we are in the new year, 2024, how time has gone ticking… The 4th anniversary of the great plague is on us, disorientingly, and life has hobbled on, with fresh catastrophes of the zeitgeist gathering on the year's horizon like so many sloppy thunderclouds. On the other hand, the year looks pretty harmonious from a numerological point of view, doesn't it? Strap in kiddies, we're bout to find out.
As for me, I'm entering month four of living on the West Coast, bout time I shared a bit about what that's been like. Grand! Feeling quite good about things. Not the most interesting time storywise - a blend of introverted busywork and vulnerable newness, I reckon - well, but let's keep this structured. First off, why Seattle?
If you want to understand it at a glance, open up Google Maps, search for "Seattle", click on the Layers button, and set it to "terrain". Then zoom out a little. Water first, jagged water and islands and passes, the jigsaw logic of the Puget Sound - or the Salish Sea, if you'd like the name to encompass a bit more water as well as its rightful human heirs. There's whales in that water, orcas, dolphins, seals, all manner of fish and scuttling things, and down in the depths of the sound - frighteningly deep, 450 feet on average, a fjord estuary carved by glaciers - down in the deep there are giant pacific octopus, the biggest ones there are, them big red 'uns. Zoom out a little further and you see how the mountains lay. To the west the Olympics, a vast protected area with alpine landscapes up top and temperate rainforests further below in the mountainshadows that catch the wet sea air. These forests are of the fluorescent-green, moss-matted, soggy, mushroomy, enchanted variety, with a damp mossy smell that soothes instantaneously. Head further west to the Pacific coast and you get to the wild shoreline with huge craggy rock formations that meet the forest in a thin driftwoody strip swarmed with seals and albatross. If you travel east out of Seattle you'll run into the Cascade Mountains, more wild & spread-out still, with snowy peaks and misty passes and good ol burly redneck America within an hour's drive of the soft prosperity of the big city, allowing for both cuddlin' and cussin' types of mood within close proximity, as well as winter sports and mountain hikes, and beyond those mountains you'll find the desert, oddly enough. To the south you have a goddam snow-covered volcano, Mt Rainier, or old Tahoma we'll call her, the vastness of which will stop you in your tracks on any day clear enough to bring her out.
And then there's Seattle itself, an introvertedly wacky revolutionary western boomtown obsessed with fish, filled with naturelovers, and recently becrusted with a lot of dinky glass skyscrapers and a two-decade spigot of digital tech money. Moving here feels similar to moving to New York in the way that the locals will unanimously report that it used to be a lot better, and also in the way you're quietly thinking damn - even better? as they tell you. The city has been transformed by tech money, tis true, the rents are frightful, the weird ones are struggling, and soulless commerce is tightening its cords and rising up glassy & alien … sure … But at the same time her personality is still very distinct, and all that new prosperity seems to express itself quite gently, it's like the Norway of the USA, with a sane feeling to the infrastructure and investment and a good deal of compassion in the social policies. The bus drivers will wave you on for free while you're rummaging for money. Your bills come with information on subsidies and plans if you can't pay them. The tenant protection laws are a distant dream for New Yorkers. Much of this thanks to the socialists and anarchists and union organizers and eco-warriors protesting and picketing and recruiting on streetcorners with a seriousness that'd be hard to imagine in wacky individualist NYC. It's a town in suspense between many energies. Out in the open the political tone is heavily left - it's almost comically inclusive of whatever type of individual weirdness you'd like to express - but structurally speaking the money rules, and always wins, and like in all of the USA's great cash engines, life gets harder every day that you're not making enough of it.
But in fairness, coming from NYC it feels downright cuddly with what a warm welcome I've had. The busking has been just grand. No interference from the law whatsoever, a few gentle nudges from businessowners to turn it down or point the other way, and mostly a huge wave of enthusiasm and generosity from whoever happens by. It's good vibes! The music scene - the art scene in general - has had some knocks, esp the covid period hit hard & long out here, the place still feels in recovery - but that has given me the gratifying feeling that for a change I'm in a place where demand for music is larger than supply.
Delightful circles out here, too. I made my first set of friends busking at Pike Place Market, a surprisingly big complex & wonderfully situated by the water, a tourist trap in some ways but also a geniune place of congress & free expression chock full of artists & freethinkers & a century of ghosts. Shoutout to Alex Rasmussen, who introduced me to a number of circles, venues, and open mics. Shoutout as well to the Conor Byrne open mic and its host, Sheldon, who has been going out of his way to plug me into the local folk scene. I just had my first proper Seattle indoor show there last Wednesday and it was lovely. Huge grin to everyone who came out. Scary to start a city fresh wondering if you're gonna draw. It went good! There'll be more shows! It's looking sustainable!
Which is a relief, because I was worried about sustaining the house we landed in, a weird miracle… We didn't exactly save on rent compared with Bed-Stuy, but still… Two floors! And a basement! Bats living in the attic, praise be! A quiet self-enclosed feeling, but close to the center … Incredible ! We'll see if it lasts - knock on wood - plenty of wood to knock on - hope it doesn't come loose. But it's just grand. Ten minutes on foot and you're swimming with the seals. The great fogs & drizzles come pattering down around us over the eaves. Two enormous overgrown douglas firs, hated by the landlord, grow out of the neighbor's yard and sort of envelop the house in a big green dusk. The shingles and the gutters hang loose. It's lovely! I've always wanted to live in a creaky wooden house by the sea. As I mentioned in my earlier post, we spent much of our first few months here just getting it shipshape - painting, repairing, finding furniture. I've been decking out my studio room. A separate studio room! Bless, bless!
So for the rest of the winter the idea is to let the dust settle a lil, get smart, get fit, study the banana slug, learn more medieval frog songs, and hopefully write a couple tunes meanwhile … For songwriting updates, you might like to follow along on Patreon!
Over & out, big grin, R.

Sowing Seed for the Harvest
This was the week to plant my cauliflower seeds, a little later than usual because of a vacation. I’m thinking of the large heads of Romanesco, Amazing and DePurple cauliflower of other years and the ones I’ll harvest in a few months.
I’ve written about The Pleasures of Growing From Seed and many other pieces on the subject. Check over a dozen other blog posts about growing from seed at ediblegardens52.
Over the years I’ve started seeds in six packs for later transplant in a variety of ways. I learned from other gardeners, blog posts and books. Eventually, I settled on a way that works for me. We all do that. But maybe I’ll learn or invent another alteration down the line. Gardening is about experimentation. I hope this brief tutorial can be helpful for you.
Here’s how I do it (for USDA Zones 9 and 10). Check Johnny’s Seeds Guidelines for Starting Seeds Indoors if you garden in cooler USDA Zones. 1. Select an organic seed starting mix. No garden soil or compost. That’s for later. 2. Wash and scrub your six packs or other containers with a small brush. Sanitizing with bleach solution is usually recommended. Honestly, I don’t take the time and usually splash bleach on my clothes. 3. Moisten your seed starting mix with warm water, mix and fill the containers. Seed mix should be damp but not soggy. Level and pat down lightly. Refill as needed to bring the level up.
4. Check the seed packet for planting depth and choose an implement to make a small hole(s) in each cell. For cauliflower, planting depth is 1/4 inch so I used the eraser on a pencil. I could easily gauge the depth of my mini plunge. For tiny seeds like lettuce (1/8 inch planting depth), I just make a slight depression in the seed mix and place my seed. 5. Sift some of the seed starting mix into a container to remove larger chunks. I have various retired kitchen and lab items items that are useful.
6. Then with a small spoon or your fingers distribute some of the sifted compost—the amount depending on the seed size and depth of planting. Press down lightly for good seed to starting mix contact. 7. Place starter packs in water-tight tray and add about 1/2 inch of water for the seed mix to absorb. If not absorbed in a day or so, empty tray.
8. Choose a location to await germination. The optimal temperature for seed germination and your options will determine your choice. My cauliflower seeds are in the garage on a counter where the temperature ranges from 70-80 degrees F. In the past I’ve put the tray in a shady location outside but then need to cover to prevent the cells from drying out. A sunny window in the house is often my winter option.
9. As soon as some of the seeds germinate move the six-pack to bright light outside to avoid leggy growth. Attend to moisture needs. Often a spray bottle can keep soil surface appropriate for germination. 10. Transition plants to bright shade/part sun/sun over time and protect appropriately. This time of year in Southern California cabbage moths will lay eggs and their worms can heavily damage young seedlings. Check seedling leaves for damage frequently. Here’s one method that works for my brassicas.
11. When seedlings develop their first true leaves (the second set of leaves) water with a diluted liquid organic fertilizer like fish emulsion or seaweed-fish emulsion. When your seedlings reach 3-4 inches they can be transplanted to the garden.
Another tip: Sometimes, I have leftover seed from previous seasons and its viability is questionable. I could do a germination test but instead I usually plant old and new seed in the same cell. Later, I select for the strongest seedling and snip the weaker plant with scissors.
For more pro tips check Successful Seed Germination at San Diego Seed Company. Johnny’s Seeds has an excellent Grower’s Library.

How to Plant and Grow Croton This easy-care houseplant adds plenty of color to any space through its foliage. By Nadia Hassani
Croton, a perennial with woody stems and roots, features leathery, smooth-edge, oval- or lance-shape leaves in bright colors. These colors are often combined in patterns involving blotching and striping, and sometimes the color changes as the plant ages. Native to Malaysia, the Pacific Islands, and northern Australia, crotons are most often grown as houseplants but can be brought outdoors for the summer. In warm climates, croton can also be planted in the landscape to be enjoyed year-round.
All parts of the plant are toxic to humans and pets.12
Toxicity to pets - Croton is a common name - Codiaeum variegatum. Ingestion may cause mild oral and gastrointestinal irritation resulting in mild drooling, vomiting, and/or diarrhea. Skin irritation may also occur after exposure to the sap but tends to be mild.
Croton Care Tips Light Indoors, find a sunny window for the plant. While croton can tolerate medium light, bright light is necessary to bring out the most intense and vibrant colors. In too much shade, the colors can become washed out and muted and the plant's leaves will be much greener. If you are planting a croton outdoors, select a spot with dappled light. Too much direct sunlight can cause leaf burning and scorching, especially on the lighter-color varieties.
Soil and Water Crotons enjoy being kept evenly moist during summer months, with reduced watering during winter months. Choose a well-draining potting mix and make sure not to overwater the plants, as that can lead to root rot. Let the top 2 inches of soil dry out slightly between waterings.
Croton is easy to propagate from stem cuttings. Using gloves, cut a stem 3 to 4 inches long with 3 to 5 leaves. Dip the cut end of the cutting in rooting hormone powder and insert the cutting in a 4-inch pot filled with damp potting mix. Keep it moist at all times but not soggy. At a temperature between 70 and 80 degrees F, roots should form in about one month. Wait until you see some vigorous vegetative growth before transplanting the cutting to a larger container.

What Should I Learn About Terrazzo Tiles in Malaysia?
Terrazzo, a Latin term for "land" that means "ground," is a classic composite material that lends a beautiful, Mediterranean vibe to any home. The same can be said with Niro Granite. The fundamental instructive exercise for using terrazzo tile at home is provided here.
Making use of Terrazzo
In order to recycle extra stone, the Italians created terrazzo in the sixteenth century. Terrazzo is a composite material comprised of marble pieces embedded in concrete. It might be pre-assembled into slicable blocks and then simply poured nearby, or it might be. On the other hand, you may purchase it in the form of quick tiles that are simple to apply directly to walls and floors.
What would make it a good idea for me to use Terrazzo?
Its strong points are especially available in an almost infinite variety of colors and materials, including marble, quartz, glass, and metal. According to John Krause, the managing director of stone company Diespeker, terrazzo that is more over 100 years old should typically be maintained. Because it is made from many elements, terrazzo tile is also a completely eco-friendly option.
What conditions could terrazzo be utilized for?
It is probably going to be applied to any inside wall or floor, including bathrooms and kitchens, once it has got to guarantee water hindrance. Terrazzo is an incredible choice for underfloor warming since it holds heat effectively. It can likewise effectively fill molds, making it a typical material for making furniture and other family things today.
Might you at any point basically stay aware of it?
You just need a direct steam mop or nylon scouring brush to clean it. Anyway, segmented terrazzo is bound to break more than terrazzo that has been poured. Yet again a confirmed proficient must re-ground the floor and appropriately clean it to reestablish it.
There are different sorts of terrazzo flooring.
Assuming that is the plan you favor, you ought to give terrazzo serious thought for your new development project. The cost ($12-$35 per SF) is more than that of elective deck materials like wood, tile, overlay, and covering, however assuming you need a story that won't ever break down and can support weighty maltreatment, the expense may be sensible.
The valuing range for terrazzo flooring is very wide because of the enormous assortment of materials and organizations. Everything relies upon the system you want and how it will be utilized.
Here is an assessment of the different terrazzo floor sorts to help you in settling on your decision.
Regular
This choice is regularly the most costly, breathable (will not delaminate like epoxy in that frame of mind of dampness), needs sealer, is made of the heaviest terrazzo, is the hardest both all around, has a large number of variety and example choices, and requires a substantial groundwork. It is likewise typically the most costly relying upon the kind of system utilized. To suit specific advancement prerequisites, it is additionally accessible in supported and unbonded options.
Polyacrylate
It is more reasonable, breathable, needs fixing, sets up more quickly, requires a ton of setting, and just little chips are required.
Epoxy filth
Most reasonable, practically boundless variety blends, solely for indoor use (obscures in daylight and could develop soggy from an absence of breathability), repulses dampness, needs no getting done, needn't bother with a huge establishment, and can be laid on wood subfloors
What adjustments have as of late been made?
Pitch is presently applied to make terrazzo in a similar way as customary cement. While costing more, this decision offers a more pleasant completion and is especially versatile to scratches and breaks.

Mastering Squash Seed Germination: Expert Tips and Methods
Here are tips and methods to help you germinate squash seeds successfully: Choose quality seeds: Ensure you have fresh, high-quality squash seeds from a reliable source. Start indoors: Begin by germinating the seeds indoors before transplanting them outdoors. Soak the seeds: Place the seeds in warm water for 1-2 hours before planting to soften the seed coat and promote germination. Use seed trays or pots: Fill seed trays or small pots with a well-draining seed-starting mix. Plant at the right depth: Plant the squash seeds about 1 inch deep in the soil. Maintain proper moisture: Keep the soil consistently moist but not waterlogged. Avoid letting the soil dry out or become soggy. Provide warmth: Place the seed trays or pots in a warm location with temperatures between 70-85°F (21-29°C). Use a heat mat: Consider using a heat mat underneath the seed trays to provide consistent warmth, especially if the environment is cooler. Optimal lighting: Place the seed trays in a well-lit area or under grow lights. Squash seeds require adequate light for germination. Ensure good air circulation: Proper air circulation helps prevent damping off and fungal diseases. Use a small fan to promote air movement around the seedlings. Be patient: Squash seeds usually germinate within 5-10 days, but some varieties may take longer. Be patient and maintain optimal conditions. Thin out seedlings: Once the seedlings have developed their first true leaves, thin them out to allow sufficient space between plants for growth. Harden off before transplanting: Gradually acclimate the seedlings to outdoor conditions by exposing them to increasing amounts of sunlight and outdoor temperatures. Transplant carefully: When transplanting squash seedlings outdoors, handle them gently to avoid damaging the roots. Plant them in well-prepared soil. Provide support (optional): Some squash varieties benefit from trellising or support to prevent sprawling and save space. Consider using stakes or trellises. Remember to consult the specific instructions provided on the seed packet, as germination methods can vary slightly depending on the squash variety you're growing. How to Avoid Mistakes When Cooking creamy Mushroom soup.
To avoid mistakes when cooking creamy mushroom soup, here are some tips:
Select the right mushrooms: Choose fresh, high-quality mushrooms for the best flavor. Popular varieties for mushroom soup include cremini, white button, or shiitake mushrooms. Ensure that the mushrooms are firm, clean, and free from any signs of spoilage.
Clean and prep the mushrooms properly: Clean the mushrooms gently with a damp cloth or a soft brush to remove any dirt or debris. Avoid soaking them in water, as mushrooms tend to absorb moisture and become soggy. Trim off any tough stems and slice or chop them according to your preference.
Sauté the mushrooms properly: Heat a pan over medium-high heat and add a small amount of oil or butter. Add the mushrooms and cook them in batches if needed, allowing them to brown and develop a rich flavor. Crowding the pan can cause the mushrooms to release excess moisture and steam instead of browning.
Build flavors with aromatics: Along with mushrooms, incorporate aromatic ingredients like onions, garlic, and herbs such as thyme or rosemary. Sauté these ingredients together with the mushrooms to enhance the overall taste of the soup.
Use a flavorful stock or broth: A good-quality vegetable or chicken stock serves as the base for the soup. Homemade stock or a high-quality store-bought version can add depth and richness to the flavor. If you prefer a vegetarian option, vegetable stock or broth works well too.
Control the consistency: After adding the stock, simmer the soup until the mushrooms are tender and flavors meld together. If you desire a thicker consistency, you can blend a portion of the soup or use a potato masher to break down some of the mushrooms.
Add cream or a substitute: For a creamy texture, you can add heavy cream, half-and-half, or a non-dairy alternative like coconut milk or cashew cream. Incorporate it towards the end of cooking and heat gently without boiling to prevent curdling.
Season appropriately: Taste the soup and adjust the seasoning with salt, pepper, and any other desired spices or herbs. Be mindful of the flavors and add seasonings gradually, tasting as you go.
Garnish with care: Finishing touches like chopped fresh herbs (parsley, chives, or dill), a drizzle of truffle oil, or a sprinkle of grated Parmesan cheese can elevate the soup's presentation and taste.
Remember that recipes can vary, so feel free to adapt and experiment with different ingredients and techniques to suit your preferences. Enjoy your creamy mushroom soup!

Can the tortillas be frozen?
The tortilla is one of the most helpful storage room staples. It very well may be broiled into a chip, collapsed into a taco, heated into an enchilada and immediately changed into a messy quesadilla. Whether you like corn or flour, locally acquired or natively constructed, keeping a heap of these unleavened flatbreads on hand is brilliant. If you truly have any desire to be ready for taco night, you may ponder: Could you at any point freeze tortillas? The response is yes! Peruse on for tips on the most proficient method to hold up and warm them so they're all around great — then, at that point, give them a shot in Ree's Green Chile Enchilada Goulash, Seared Hamburger Tacos or Chicken Tortilla Soup!
Can the tortillas be frozen?
It tends to be pretty much as basic as hurling an unopened bundle of locally acquired tortillas in the cooler. (Lay them level, obviously, to save their shape.) In the event that the pack has previously been opened, bend over with a cooler safe resealable plastic sack, then press and eliminate any overabundance air. For hand crafted tortillas, simply ensure they've cooled totally prior to putting away and freezing, as the temperature variety might make them fall to pieces or become soft as they defrost.
Reward Tip: Slide sheets of wax or material paper between tortillas prior to freezing, if involving them in more modest amounts. Corn tortillas will generally be a touch more sympathetic while isolating them while frozen, though flour tortillas might tear during the division cycle.
How would you defrost frozen tortillas? Thaw out frozen tortillas short-term in the cooler or forget about them at room temperature. Contingent upon the thickness of the tortilla stack, it can require around 10 minutes for a singular tortilla or as long as an hour for a sack of unopened tortillas. Whenever crunched for time, eliminate the tortillas from the pack and microwave the stack in 10-second additions — simply know that the top and base tortillas are probably going to tear or dry out. In certain circumstances, maybe where there is just a single salmon decision on the menu, it will be grasped that lox = smoked salmon. In different circumstances, where an entire scope of smoked and restored salmon sorts are offered, mentioning lox may not yield the smoky outcome you're anticipating!
GRAVLAX Gravlax is in the boat right close by lox, as it is likewise restored and not smoked. What sets gravlax separated, nonetheless, is that as opposed to being restored in plain salt, the relieving system is energized by the expansion of sugar, flavors like coriander or white pepper, and a lot of new dill. Numerous recipes for gravlax additionally utilize fragrant spirits like aquavit or gin.
These extra fixings in the fix make gravlax more tasty than lox, and it is by and large less pungent too. By and by, gravlax will be unmistakable from smoked salmon in that it will neither taste nor smell smoky.

Despite which type it is, all chilly smoked salmon is smoked beneath 80℉ and will have a smooth, rich surface and smoky flavor which might go from gentle areas of strength for to.
HOT SMOKED SALMON Otherwise called kippered salmon, hot smoked salmon will likewise have that pine for commendable smoky fragrance and flavor, yet the surface of the fish will be emphatically not quite the same as chilly smoked salmon. This is because of the way that it is smoked hot rather than cold.
Where cold smoked salmon has a smooth surface, more like that of crude salmon, hot smoked salmon takes on a firmer, more flaky surface which is like that of cooked salmon. Hot smoked salmon is for the most part smoked around 130℉, which brings about a delicate cooking of the fish tissue, changing its surface and leaving it dark. In view of these distinctions, kippered salmon doesn't yield similar paper-flimsy cuts as cool smoked salmon or lox. Thusly, kippered salmon is by and large sold in an entire piece as opposed to pre-cut.
The special handling of hot smoked salmon commonly makes it rack steady, no refrigeration required! Similar as canned fish or vegetables, fixed hot smoked salmon can keep going for a considerable length of time.
