This is our 68% Dark Chocolate, Marañón, Peru being sieved. This is a 2-ingredient chocolate and very very thick! It’s a difficult chocolate to temper because of its viscosity and definitely helped me grow a few muscles. The flavours make it all worth it though, one needs to be a little bit patient to let the chocolate melt because we didn’t add any cacao butter, but you will be rewarded with a longer journey whilst the chocolate melts and there is no hiding from the flavours: this bar is full of honey notes, dried fruits, no bitterness, natural creamy chocolate and a pleasant aftertaste. Our 68% Dark Chocolate, Marañón, Peru chocolate bar is in today’s The Observer! To save you some trouble finding it, see the second photo to read it. You can find it in the middle part of The Observer Magazine. This chocolate bar was one of our very first bars and has been going strong since the beginning. It has natural floral, honey and dried fruit notes and ends in red grapefruit. It’s a 2-ingredient chocolate (no added cacao butter) and we pushed this percentage as low as it could go whilst still being able to temper it by hand. Hand tempering this chocolate is always a of a challenge because this chocolate is so viscous/ thick, but very well worth it, proving it by the many awards it won and the many positive testimonials it received, always a favourite. For #tttt_emotions I want to shine a light on our 68% Dark and 60% Dark Milk Marañón, Peru. Unfortunately I missed out on #tttt_mylk last week, but hopefully I can make up for it with this post. All of our Marañón chocolate bars we hold especially dear because they were the first beans we bought from actual source. In those days it was much harder to find cacao and these beans were especially good. It took us a lot of headaches to figure out the right roast with a notoriously temperamental cacao and at times it drove us nuts not being able to get consistent results. We came close to throwing in the towel. When we finally did manage a good and stable end result we posted the bars to Dan Pearson of @maranonchocolate and he was just so lovely about our chocolate, it filled us with pride and confidence and new hope to carry on on this road. This means that is takes a bit longer for the chocolate to start melting and during the entire length the melt will be slower, which means that you’ll enjoy the chocolate for a longer time. This, in turn, will allow you to focus on the flavours in the chocolate more and you might find that the flavour will jump from grapefruit to honey to herbal notes, maybe even licorice or red fruits.
