Each Para in Kolkata has their local celebrity Phuchkawalah/Phuchka-seller. They are the most sought-after street food. Phuchkas, also known as Golgappas or Panipuris. The feeling of Phuchka in Kolkata is different with Aloo/Potato, so is the Tetul Jol/Tamarind Water which smells of Gondhoraj Lebu/Bengali Lime. To add a touch of health and elegance to leftover phuchka, and Aloo/potato try making this Churmur Chaat and Aloo Kabli. Over the last few years that somehow Churmur and Aloo Kabli lost its popularity, it’s not that crazy stuff between the school-goers anymore. It was one of the top selling foods in our school days; I used to eat Aloo Kabli every day from one Aloo kabli wala when the school got over. I’d tell him “Please Kaku (Uncle) don’t add green chilli into my Aloo Kabli”, and he used to nod his head. . . .
