I think Tubbo needed to be the only parent for Sunny. I think Tubbo was purposely put with people who wouldn't want to parent Sunny (for varying reasons) so Tubbo would be the only one available. No other choice

Tubbo is dealing with grief and he does not deal with it well. He needs a project to distract himself, to not think about Fred Purgatory loneliness everything he's been dealing with, to push it all down. He's the only one Sunny has, he can't let them go through the loneliness he has, not knowing who really cares

So he pushes everything down even more. Focus on Sunny. Focus on the Tubchunk. Focus on anything but himself. Even when he tries something to help himself move on, no one but Fred's coworkers come to the funeral
