Keeping things on a positive note with this nourishing lunch. Salmon salad lettuce 🥬 wraps with two fried eggs 🍳, half an avocado 🥑 and cherry tomatoes 🍅. To make the salmon salad you can use either canned or fresh baked salmon. Flake into a bowl and add fresh lemon juice 🍋, chopped red onion 🧅, chopped celery, fresh chopped dill and parsley 🌿, a spoonful of capers and salt and pepper to taste. The salmon had enough natural oils in it so I didn’t have to add any oil but feel free to add a drizzle if needed. So fresh and delicious. “We have less access to food due to the COVID-19 pandemic. Are canned, frozen or shelf-stable foods ‘healthy’?” One word - YES - and a reminder that “healthy” is a relative and somewhat loaded term ❤️ Will you tag a friend who may like this? Don’t worry friends, they’re exactly the same 😂 #weseeyou As families prepare to stay home due to school/work closures or to practice social distancing, many are purchasing foods that last longer. This includes canned, frozen and shelf-stable products and sometimes foods we don’t typically buy. We hope you’ll remember some things: 1) Canned and frozen foods have wonderful nutrition! Frozen produce can actually have more nutrients than fresh because they’re frozen at the peak of ripening, not picked weeks before they’re ripe like most fresh produce. If you want to maximize your canned food purchases, try to choose fruits packed in water or juice instead of heavy syrup, and opt for lower sodium canned veggies. 2) ➡️ Some cans are lined with BPA, so try to choose BPA-free cans when available/affordable and avoid heating food directly in the can. However…your access to food may be limited - get what you can! 3) • 4) 2) Many families do not have the privilege of using all fresh ingredients during “normal” circumstances. So many parents rely on convenience foods year-round to help their children grow, thrive and stay well. These foods are not “quarantine” foods - they’re real life, real people foods. They allow us to navigate work, financial restraints, mental health challenges, tight schedules or just wanting a break while still ensuring our kids are fed. Dark Chocolate Banana Bread Muffins 🍫 Full recipe below, send it to a friend who’d love this!⁣ By: Tasty, Mercedes Sandoval Ingredients (for 12 muffins) 3 bananas 2 eggs ½ cup greek yogurt (125 g) ½ cup milk (120 mL), we used almond milk ½ cup maple syrup (170 g) 1 teaspoon vanilla 1 cup whole wheat flour (130 g) ½ cup dark cocoa powder (60 g) 1 teaspoon baking soda ½ teaspoon salt ½ cup dark chocolate chips (90 g) Preparation Preheat oven to 350˚F (180˚C). Mash bananas in a large bowl. Add eggs and combine thoroughly. Then mix together remaining wet ingredients: Greek yogurt, milk, maple syrup, and vanilla. Next, add in dry ingredients and mix until fully incorporated. Fold chocolate chips into the mixture. Pour mixture into a greased muffin tin, filling each up about ⅔ full. Bake for 30-35 minutes, or until a toothpick comes out clean from the center of the muffin. Allow to cool for 10 minutes. Enjoy!
