White Bean Chili with Duck Bacon

This one pot easy to make white bean chili and duck bacon is full of flavor and so good.

White bean chili topped with chunks of duck bacon is a nice twist from the usual beef or turkey. The only way to describe this meal is luxury in a bowl. Have you tried duck bacon? When it cooks up it's not as greasy as standard bacon and has a hefty texture. 

This chili is hearty and makes a great make ahead meal for any game you may be watching this weekend. A lot of the flavor in this chili comes from the mixture of duck bacon and tomatoes. There are not a lot of spices but carefully chosen to bring out the best in the minimal ingredients. Simple to make and ready in under an hour. Make this delicious pot of hearty goodness. Serve with a few toppings and you are all set. 

Serves 4-5

Ingredients

12 ounces duck bacon, chopped  (I used Maple Leaf Farms)

1 cup chopped celery

1/2 tablespoon chili powder

1 teaspoon cumin

2 (15.5-ounce) cans great northern beans, drained and rinsed

1 (14-ounce) can tomatoes ( I used Fire Roasted)

1 cup chicken or vegetable broth

Handful chopped cilantro plus extra for garnish

salt and pepper to taste

Toppings optional

cheese

cilantro

onion

sour cream or plain yogurt

Directions

To a large soup pot add chopped duck bacon and cook over medium-high heat 6-10 minutes stirring occasionally. 

Add celery, chili powder, cumin, beans, tomatoes, and broth. Heat 15-20 minutes over medium-high heat. Add salt and pepper to taste. 

Serve hot with optional toppings.
