Tonight's dinner Garlic Rosemary lamb loin roasted in a cast iron skillet. Accompanied by buttery mashed potatoes from my garden, young peas, garlic bread and a creamy pan sauce. I'd never had lamb before but since I plan on raising my own I thought it would probably be a good idea to try it first. It was so good and so easy. If there's any secret it's to use a digital thermometer that you can set to alarm at a certain temp. Then you can just leave the roast to rest while you pull together the rest of the meal.
