Born on the bayou, Laurent Laramie Brossard is a native New Orleanian. His father was a sixth generation fisherman and trapper, and his mother co-owned a seafood/fast casual restaurant with her sister that has been in the family for decades. “Ya cook whatcha catch” was a frequent phrase from his mother directed at him and his siblings. He was unsure if it was a proverb passed down through the years or something she uttered to spare herself from cooking on certain evenings. For whatever reason, he was raised in an open kitchen with fresh food and surrounded by individuals who were willing to teach him. He doesn't know when he first began cooking; it has just always played a significant role in his life.

Upon their divorce at the age of 14, his mother and father offered him the option to either remain in New Orleans or relocate to Dallas, Texas, where he would live with his mother. She was presented with an offer to work as a recipe developer for a new chain of restaurants at the time, and it was too wonderful to pass up. He felt obligated to accompany his mother in order to keep her safe, even if his brothers stayed with their father. He knew she needed someone because they were always so close, and it also provided him a chance to experience what life was like in a different state in terms of food.

A different southern state equated to new culinary techniques. His mother's boss introduced him to the world of barbecue. He mentored him, teaching him all there is to know about Texas barbecue, including rubs, sauces, and meat cuts. He joined his pit crew as soon as he reached legal age and later started his own. At the age of 25, he launched his own fusion restaurant, Crawfish & Roux, in Dallas. A few years into the firm, he began catering, and soon had a solid clientele that included both the Dallas Cowboys and the San Antonio Spurs. Upon its establishment, Laurent accepted an opportunity to become the AEW head chef, a role he has proudly maintained ever since.

Orange Cassidy. He’s the type of guy who knows his worth but does not have to prove it. He treats each day he goes out into the ring as if he’s clocking into his nine-to-five; he does what he has to do, the match ends, and he clocks out.

It’s a carefully hard-crafted gimmick he’s made work of by lots of hard work and countless hours put into his craft. It’s not that he’s lazy; he’s smart and intelligent. Everything he does has a purpose. You won’t see him doing something flashy, for the hell of it. You’ll see him get into the ring and win a match, just as he’s expected to do.

Behind the denim, the graphic tee, and the laid-back demeanor of Orange Cassidy, you’d find James (or Jim). He’s college-educated, having a BS in architecture. He often downplays his niche interests and knowledge, not wanting a whole lot of attention on him. However, he’s outspoken and never backs down from hard conversations.

James loves the art of professional wrestling and those with a passion for it. He'd do anything he could to help someone in that pursuit. He’s got a huge presence backstage at AEW, which is truly a dream job.
