It’s Muffin Monday! Start off your day with this yummy zucchini muffin. This recipe is so easy and quick to make. Enjoy! - - - - Zucchini Bread Muffins Prep Time 15 minutes Cook Time 20 minutes Servings 12 muffins Ingredients 1 1/2 cups flour 1 cup sugar 1 teaspoon cinnamon 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 large eggs 1/2 cup oil 1 teaspoon vanilla 2 cup finely grated unpeeled zucchini Instructions 1. Preheat oven to 350 degrees 2. Spray with nonstick spray 3. Dry bowl: mix flour, sugar, cinnamon, baking powder, bakingsoda, and salt. 4. Wet bowl: mix eggs, oil, and vanilla. 5. Add wet bowl to dry bowl ingredients. (The batter will look very thick and so 6. Fold zucchini into the ingredients bowl. 7. Spoon 3/4 batter into each muffin tin. 8. Bake for 20-25 minutes. To check if done, insert toothpick into muffin. Once a week, I like to go to Malibu to relax and eat at my favorite restaurants. One restaurant that I just discovered was re-opened for outdoor dining is Tra di Noi. I’ve been going to this Italian restaurant for years and today I tried a new dish, Oreccchiette al Tartufo. It’s homemade orecchiette pasta with peas and mushrooms finished in a pecorino cheese wheel. Topped with shaved black truffles. I Initially thought that my first wheat zucchini bread was a disaster, but after letting it in the fridge for a couple of days, I ended up enjoying the taste better. What I realized about baking with wheat flour instead of white was that the texture wasn’t as smooth and bouncy like other zucchini breads. Now I know the difference between baking with wheat vs white flour. ❤️🍽🙏 Ingredients: 3 cups all-purpose wheat flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 3 teaspoons ground cinnamon 3 eggs 1 cup vegetable oil 2 cups white sugar 1 cup brown sugar 1 tablespoon vanilla extract 2 cups grated zucchini Method: 1. Spray grapeseed oil on a non-stick 9x5 inch pans. Preheat oven to 350 degrees 2. Dry bowl: flour, salt, baking powder, soda, and cinnamon together in a bowl. 3. Wet bowl: Beat eggs, oil, vanilla, and sugar together in a large bowl. Add dry ingredients to the wet ingredients, and beat well. 4. Stir in zucchini until well combined. Pour batter into prepared pans. 5. Bake for 60 minutes. 6. Insert a toothpick into the center. It’s done if the toothpick comes out clean. 7. Cool in pan on rack for 10-15 minutes. Remove bread from pan, and serve. I love a good old fashion grilled cheese sandwich, but what makes one good? Is it the bread? The cheese? Is it the spread? I like to keep it simple and fast. 🥪 🍽😋❤️ - - - Grilled Cheese Recipe Ingredients: 2 tablespoons salted butter Shredded Fontina Cheese Shredded Sharp Cheddar Italian Country Bread - - - Method: Step 1: In a 10” pan, add 2 tablespoons of butter on medium heat. 2 minutes Step 2: Spread a light coat of butter to one side of the bread. Once the butter is melted in the pan, then add the two pieces of bread with the butter side up. 1 minute Step 3: Add shredded fontina to one slice and the shredded sharp cheddar to the other. 1-2 minutes Step 4: With your spatula, flip one slice on top of another, then press down so the cheeses melt evenly. 1 minute or until cheese is melted. Step 5: Flip the sandwich and press down to melt the cheeses evenly on both sides. 1 minute or until cheese is melted. Step 6: You’ll see how the toast looks buttery and toasted while the cheese is perfectly melted.
