One of our favorite parts about the Super Bowl (Feb. 12, 2023) is how it can bring people together, united over one common goal—watching Rihanna in the halftime show. 😉 We jest, obviously we’re talking about the food! Whether you’re in it for the sports, the wild commercials, the Puppy Bowl, or the halftime show, everyone can unite over some winning apps for Super Bowl LVII. We have all the classics, like next-level wings, dips, and sliders, plus some show-stoppers like pull-apart breads and football-themed desserts.
There’s really something for everyone, from last-minute party throwers to hosts with the most. Short on time? Throw some chips or crackers in a bowl, serve next to an epic dip like our Nashville hot chicken dip or our football field dip, and call it a day. Looking for something a little easier? Main Chick started out at 626 Night Market and specializes in Nashville Hot chicken. The Pasadena brick and mortar just opened in the new food district area of Old Town. It’s a small space with counter seating. Order at the counter. The chicken is fried to order, so expect at least a 15 minute wait. They don’t have any vegetarian sandwiches. It’s very much chicken focused. All they have are combos, sandwiches, leg & thigh, fries and fountain drinks. Specify your desired hotness level from naked to supreme.
Combo #1: I felt like trying everything so combo #1 seemed like a good choice. You get a chicken sandwich, chicken tender, seasoned crinkle cut fries, & MC sauce for $13. The chicken sandwich is made with a chicken tender, which I didn’t realize until I received my food. The sandwich is better than the tender because the other elements add texture and flavor. The fried chicken tender (white meat, I believe) had a light coating with crispy edges – it wasn’t that crispy and the spices (I chose the spicy level) were flavorful but very strong on the cayenne. I thought the chicken was good but the sandwich elements were average (sweet slaw of cabbage and carrots, sweet soft bun, sweet sauce, pickles). The balance wasn’t there for me (Howlin Rays has spoiled me). And the fries – the seasoning was too salty. The dipping sauce was sweet, so that helped. The fries were on the soft side and not that crispy. A fried chicken sandwich is small but filling.
Prices are reasonable. A chicken sandwich is only $5.50. The place is cute and the service was very friendly. A combo would feed two people who aren’t starving but want more than a snack.

In recent years, hot chicken has become a staple for locals and tourists alike. Chefs across the city have developed their own interpretations of the signature dish, and kept their recipes closely guarded. Vegan Nashville Hot Chicken Tacos

Let’s taco ’bout tacos for a second. Is there seriously anything better?! I definitely wouldn’t mind if #tacotuesday was every damn day, but the internet would probably combust if that happened. Anyhoo, for the grand finale of my vegan cookbooks vegan chicken series, I figured I had to come through with tacos! These vegan chicken recipes over the last couple weeks that have knocked yer socks off, and this one’s gonna be no different.
Remember last week’s ultimate fried chicken sandwich that I made to settle the great chicken sandwich debate? We’re bringing that insane, crispy batter that y’all fell in love with… and using it again for this hot recipe! If you’re a regular in the #hotforfood world, you’ll know creating killer vegan taco combos is basically in my blood. I’ve got versions using jackfruit, cauliflower, ground round, and that’s just the BEGINNING. I figured some vegan chicken tacos were exactly what my roster was missing!
And SURPRISE! The oyster mushrooms we know and love are making a comeback in this recipe. They’re a perfect lobster substitute in my lobster roll, and make my po’boy tooootally irresistible. Is there anything these shrooms can’t do?! Load ‘em up with cabbage, red onion, pickles and a creamy avocado ranch sauce for the best vegan chicken taco of ya life!

VEGAN NASHVILLE HOT CHICKEN TACOS
4 to 6 C vegetable oil, for frying
about 3 C / 8oz oyster mushrooms, separated
8 soft flour tortillas
3 C packed shredded napa cabbage
1/4 C thinly sliced red onion
2 garlic dill pickles, sliced thin into rounds
avocado ranch sauce (recipe below)
BATTER
1 C unsweetened nondairy milk
1 tbsp apple cider vinegar
1/4 C buffalo style hot sauce
2 tsp flax meal
2 tsp cornstarch
2 C all-purpose flour
1 tbsp sea salt
1 tbsp chili powder
2 tsp garlic powder
2 tsp onion powder
1 tsp ground white pepper
1 tsp ground sage
1 tsp ground coriander
1 tsp smoked paprika
1 tsp celery salt
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp ground cumin
1/2 tsp ground allspice
BUFFALO-STYLE HOT SAUCE
3 tbsp melted vegan butter
1/4 C buffalo-style hot sauce
AVOCADO RANCH
1/2 C vegan mayonnaise
1 tsp fresh or dried dill
1 tsp fresh or dried parsley
1/2 tbsp roughly chopped chives
1 tsp apple cider vinegar
1/2 tsp onion powder
1/4 tsp sea salt
1/4 tsp ground black pepper
1 tbsp unsweetened nondairy milk
1/2 an avocado, pitted and peeled
instructions
The oyster mushrooms should be separated into individual large pieces, but group the smaller mushrooms into groups of 2 or 3 connected by the stem.
Prepare your dredging stations. To make the liquid batter, combine nondairy milk with apple cider vinegar, hot sauce and flax meal in a large bowl. Mix the cornstarch with a small amount of the vegan milk mixture to make a slurry and then add it back into the bowl. Add the mushrooms and let them soak for at least 15 minutes. In the meantime, continue on with the rest of the recipe.
In another large bowl, combine the flour with the sea salt, chili powder, garlic powder, onion powder, ground white pepper, ground sage, coriander, smoked paprika, celery salt, ground nutmeg, ground cinnamon, ground cumin and ground allspice.
To make the avocado ranch, in a small food processor add vegan mayonnaise, dill, parsley, chives, apple cider vinegar, onion powder, sea salt, ground black pepper, unsweetened nondairy milk and the avocado. Blend until very smooth.
In a medium to large heavy bottomed pot, heat up frying oil to between 325°F to 350°F.
Once the oil reaches 350°F, start battering the mushrooms in batches. Remove the mushrooms from the liquid and place them on a separate tray. Work with the first batch of mushrooms and place them in the dry batter to coat evenly. Now place the mushrooms back into the liquid batter and then back into the dry batter to double dredge.
Carefully place only 2 or 3 battered mushrooms into the hot oil at a time, using a splatter guard if desired. Fry for 3 to 4 minutes, flipping halfway. Remove from the hot oil with tongs and place on a paper towel to absorb any excess oil.
Grill flour tortillas in a cast iron grill pan over medium heat for 1 to 2 minutes until grill marks appear, but flour tortillas should still be pliable. Alternatively you can broil the tortillas in the oven on a sheet pan on the top rack for about 1 minute, just until the char marks appear, but the tortillas are still pliable.
To make the buffalo sauce, in medium bowl, add melted vegan butter and buffalo-style hot sauce. Brush the hot sauce mixture on both sides of the mushrooms just before serving.
To assemble add napa cabbage to the tortilla, top with the fried oyster mushrooms, red onion, pickle slices and drizzle with avocado ranch. Serve immediately.

Nashville hot chicken is traditionally spicy, so the above amount is for a medium spice level. If you prefer mild, flip the amounts so that it’s 3 tbsp hot sauce and 1/4 C vegan melted butter.

The Evolution of K2FC, a.k.a. Kenji's Kimchi Fried Chicken Sandwich

I visited the Serious Eats test kitchen in Brooklyn back in October of 2018 to shoot this video about my Korean fried chicken recipe. The date is relevant because now, over half a year later, the fried chicken I cook in the video bears only a slight resemblance to the one I currently serve at my restaurant, Wursthall.
Nor is it very similar to the one I served four years ago at a strip mall in the San Gabriel Valley, during a pop-up event for my first book tour. Or the one you may have seen me make a couple years ago on Guy's Grocery Games. In fact, I've been playing with some iteration of the concept of a kimchi-brined fried chicken sandwich for many years now, so what you're seeing in this recipe and video are really just a snapshot of a dish that's still evolving. Heck, there are two distinct versions in the video alone!
First things first: Calling it "Korean fried chicken" is a misnomer. Korean fried chicken is an actual, defined thing: chicken fried with an eggshell-crisp coating of cornstarch slurry. I even have a recipe for it.
The recipe I'm talking about today is more like Southern-style fried chicken with Korean flavors. It takes some influence from Nashville hot chicken and fast food chicken sandwiches as well. On the menu at Wursthall, we've been reluctantly calling it "K2FC"—Kenji's Korean fried chicken. I get embarrassed seeing my name printed in the menu like that, but my partner insists.*
* Strangely, it's a secondhand kind of embarrassment. I look at the menu and think, Ooohhh, who's that Kenji guy who decided to name a dish after himself? Yikes.
The very first time I made this sandwich, it was at a friend's house in Jamaica Plain, near Boston. The idea of marinating chicken in kimchi brine had just struck me. I already knew that pickle juice makes a great brine for fried chicken—aside from adding flavor, the high salt content alters the protein structure of the chicken so that it retains more moisture as it cooks, and the acidity has a tenderizing effect. The same should work with kimchi brine.
So we tried it. It was a pretty quick-and-dirty affair—essentially my Five-Ingredient Fried Chicken Sandwiches, made with kimchi in place of pickles—but it was promising.
The next batch was a little more involved, using my buttermilk fried chicken recipe as the base. I brought that version to an event my old boss Ken Oringer was throwing for the 15th anniversary of his restaurant Clio (which has since been taken over by his sashimi bar, Uni), featuring a 20-course tasting menu cooked by alumni of the restaurant. Nineteen of the world's leading chefs, and me with a fried chicken sandwich.
I'd been planning on serving it with a mayo spiked with gochujang (Korean fermented chili paste) on mini Martin's potato rolls, but Alex Talbot, half of the husband-and-wife team behind Curiosity Doughnuts and the seminal blog Ideas in Food, suggested making a dill-pickle mayonnaise instead, so I went with that, and boy, was it delicious. My friend Jamie Bissonnette, the chef at Little Donkey in Cambridge, Massachusetts, and Toro in Boston and New York, was at the dinner and texted me mid-service to proclaim the sandwich "totally craveable." High praise!
I decided to keep working on the sandwich, serving it at a series of pop-ups in New York, Boston, Los Angeles, and San Francisco during my book tour, each time offering a slightly different version.
This rendition features Stella's classic biscuits with black sesame seeds folded into the dough.
By the time I brought it to Serious Eats, this was where we were: chicken thighs brined in kimchi juice, along with buttermilk, eggs, garlic, salt (just enough to account for the added liquid from the buttermilk), and soy sauce (soy sauce contains proteases that can help tenderize meat), as well as ground black pepper and gochugaru, a Korean chili flake that offers a lot of floral aroma and a bit of heat. The sauce starts out like a Nashville hot chicken–style hot oil. I combine oil with chilies (more gochugaru), along with black pepper and garlic, then heat it up until it's sizzling and toasty-smelling.
If you want to keep it real simple, this is a good place to stop. The fried chicken dipped in hot chili oil is delicious all on its own.
But I decided to continue by emulsifying that chili oil into a sauce with gochujang, honey, cider vinegar, and a little soy sauce. It comes out with a sweet-hot-vinegary flavor profile—not unlike Buffalo sauce, but with a deeper, toasty chili flavor.
Next, it's time to dredge and fry the chicken. My standard fried chicken dredge is a mixture of flour and cornstarch, along with a dash of baking powder. The cornstarch and baking powder help the chicken to fry up extra light and crisp.
To this base, I add some more gochugaru and black pepper, along with black sesame seeds and garlic powder. (Garlic powder works well in dredges and spice rubs, where fresh garlic is likely to clump or burn.)
The real trick here (and in literally every single one of my fried chicken recipes) is to drizzle some of the liquid brine into the dredge and massage it in with your fingertips, creating little clumps of breading that add texture and surface area to the chicken as it fries.
Some folks like to rest their chicken after dredging and before frying. I find that the flour over-hydrates this way, producing a crust that's a little leathery. Instead, I prefer to fry immediately after dredging.
My frying vessel of choice at home is a flat-bottomed wok. The wide, flared sides make it easy to flip and maneuver the food inside, while also catching spatter before it hits your stove or countertop.
Peanut or soybean oil is excellent for deep-frying, delivering crispy crusts and neutral flavor. Canola or vegetable will work, too, though the chicken won't end up quite as crisp. I aim to keep the oil at 275 to 300°F (135 to 149°C) the whole way through.
Once the chicken is fried, I drain it, brush it with the sauce, and sprinkle it with a spice blend containing gochugaru, black pepper, black sesame seeds, and a touch of sugar.
Serve the chicken on a toasted potato bun, with a smear of kimchi mayonnaise (which is just drained kimchi, chopped and mixed with mayonnaise); plenty of dill pickles; and a pile of shredded cabbage. It's pretty tasty!
Even tastier is the version we made on Stella's biscuits. You can find the basic recipe in her book, BraveTart; here, she tweaked it by folding black sesame seeds into the dough.** For that version, I went extra light on the sauce, omitted the kimchi mayo, and instead added a drizzle of honey.
** Another version of these biscuits involves adding sliced scallions along with the sesame seeds, which you'll hear Stella mention in the video. Her final recipe doesn't include the scallions, but you can go ahead and add a handful if you want.

Folks who've been to my restaurant know that the dish in this video is pretty strikingly different from the fried chicken and waffles we serve daily. But, in fact, the Wursthall fried chicken was directly inspired by the black sesame biscuit sandwich!
The chicken starts out essentially the same, though we also add some gochujang to the brine. I've written previously about double-frying chicken—that is, frying it, letting it completely cool, then frying a second time before serving—and that's the technique we use here.
The idea is that after the first fry, moisture from the inner layers of breading eventually starts to spread out, causing the whole crust to soften a little. The second fry drives out moisture a second time, leaving you with an extra-crisp crust. We fry our chicken in 225°F (107°C) soybean oil, to an internal temperature of 155°F (68°C), then chill it and re-fry it to order, at 300°F (149°C), until it's crisp.
After coming out of the fry oil, it goes for a dunk in chili oil, which we flavor with gochugaru, black pepper, cumin, garlic, and ginger. Then it gets a heavy dry dusting of gochugaru, black pepper, cumin, salt, and sugar.
Instead of a bun, we make scallion cornbread waffles, a modified version of my brown butter cornbread—we increase the ratio of regular flour to cornmeal a bit, and reduce the amount of fat, for a little more structure—to which we add scallions, cilantro, and black sesame seeds, before baking in a Belgian waffle iron.
To finish the dish, we spread the waffles with kimchi butter (kimchi, butter, and gochujang combined in a food processor); place the chicken on top; drizzle it all with honey; and add a pile of our lacto-fermented dill pickles and a big splash of our house hot sauce (which is simple: Fresno chilies, fermented for two weeks, then blended and adjusted for seasoning).

All the same basic flavors and techniques are there; they're just rearranged a bit to fit a restaurant menu and production schedule.
So that's the current State of the Fried Chicken, and it's gonna keep changing. We're now discussing changing our current chicken schnitzel sandwich to a pork schnitzel sandwich and adding a spicy fried chicken sandwich to our menu, which will no doubt start with some past version of this one as a jumping-off point.
Since I'm not really one to keep recipes secret, attached to this article you'll find a recipe for the version of the sandwich shown in the video, plus another recipe for Stella's black sesame buttermilk biscuits. Summerfest 2019
So, another Summerfest has come and gone.  I was soaked from the rain but didn’t care.  
It was a large group, allowing us to try out several vendors.  I was accompanied by my mother (fiancée was out of town) and friends Bo and Jen and their friends, Joe and Jen…
yes…
…really.
Obviously, one takeaway was the tradition/repetition of vendor offerings, serving the same dishes every year.  Although I can see the appeal, there is a level of tiredness about some of them.  I would love it if vendors changed up their cuisine each year.  Offer something new—they are not all one-trick ponies.  I am not saying this to be overly negative; I love Summerfest each year.  I just don’t want people to get fatigued by coming down and picking up the same dishes every time.  
A second takeaway was that because of the first point, I was more open to experimenting with newer cuisine. As a result, I found myself attracted to unique and novel offerings.  
Finally, as a bizarre observation, I found some of my favorite dishes offered by restaurants I seldom visit.  For example, one place I didn’t buy from was Betulla Burning, one of my all-time favorite places, though this could be because their Toscano wasn’t ready to be served until 45 minutes after the event started.
Despite taking issue with their business practices, I thoroughly enjoyed Brown's Social House's Nashville Hot Chicken Sandwich. I also devoured both the flank steak tacos and the crispy calamari from Centennial Foods, which, as you might have guessed, is not a restaurant. They’re a food service provider—they sell to restaurants, which makes their appearance each year plain bizarre. From Col Juicery (which I thought was Col. Juicery…like it was in the military), I enjoy the impressive cookie dough smoothie bowl.  From Cornerstone, another restaurant I rarely frequent, I forked down both the coconut curry beef with biscuit and the churro waffle.  I had to wait a while for the waffle, but the curry was solid.  Cornerstone really did well this year.  From the new Grand Trunk, I had their pannacotta, which was a little on the processed side, but enjoyable.  Likewise, with the waffle sticks from Magel’s Café.  On a bizarre tangent, I ended up skipping both Karahi King and Spicy Greens.
From Nancy’s, I had the falafel taco, and from Northern Lights, the chicken satay.  Of course, speaking of tradition/repetition, one cannot enjoy Summerfest without ordering the deep-fried pickles from Twisted Cork or the garlic parm fries and lobster roll from White Goose Bistro.  However, with the latter, I found it really odd they cut the bun crosswise, making it nearly impossible to eat.  Two of my favorites were the fried chicken wonton and the Hakka noodle from Zen.  
Yes, seriously, I ate all this.  And that’s even including the two chocolate dipped cheesecakes from Rocky Mountain Chocolate Factory as we left.
Were there winners. Yes, and here they are:
Crispy Calamari w/ Tzatziki from Centennial Foods
Coconut Curry Beef and Biscuit from Cornerstone
Falafel Taco from Nancy O’s
Fried Chicken Wonton from Zen.
And the final winner among those is…
