Savory Plantain Casserole

Savory Plantain Casserole
Ingredients
3 yellow plantains (slightly brown)
1 garlic clove, minced
1lb ground beef or turkey
1 yellow onion, diced
salt and pepper, to taste
1tbsp. pure maple syrup to taste
1tbsp. cinnamon
kale or spinach(optional)
6slices uncured bacon/turkey bacon(optional)
Instructions
Preheat oven to 350 degrees.
Remove peel and thinly slice the plantains lengthwise into 3 slices.
Add plantain slices to coconut oil in pan and cook both sides for 2-3 minutes on medium heat until they are slightly browned.
Set aside.
In the same pan, add minced garlic clove, ground beef, onion and salt and pepper.
Cook until meat is done.
Place plantain slices on the bottom of a glass baking dish,  then a couple spoonfuls of the ground beef mixture.
Then add a layer of greens.
Repeat two more times on top of the ground beef mixture.
Drizzle with maple syrup and add cooked bacon strips if preferred.
Cook for 12-15 minutes in oven.

Breakfast Hash Recipe
This hearty, flavorful breakfast hash will make your mornings even more beautiful!

Breakfast Hash Recipe
Ingredients
1lb. ground bison or turkey
diced butternut squash or sweet potato
handful spinach or supergreens
1/2 yellow onion, diced
1-2 minced garlic
sea salt, to taste
cinnamon, to taste
ghee or coconut oil
avocado
Instructions
Heat ghee or coconut oil on medium heat and sautéed onion and garlic until translucent.
Add ground meat and cook until almost done. Add squash or potatoes and cover with lid to soften.
About 4-5 minutes later, add greens + sea salt + cinnamon, and cover once more.
Cook about 3-4 more minutes until greens are softened, stirring occasionally.
Serve with smashed avocado on top.

Breakfast Taco
Breakfast taco is always a good idea. This breakfast taco can be nutritious, filling, fast, and just a heck of a lot of fun to enjoy in the morning. It’s a more balanced meal than you’d expect tacos to be.
Try this breakfast taco recipe.

Breakfast Taco
Ingredients
coconut flour tortillas(siete brand or homemade)
2-4 pastured eggs, scrambled (or turkey sausage)
1-2 slices organic turkey bacon(optional)
guacamole
diced tomatoes, onions, salsa, sauerkraut, dollop of goat's milk or organic plain greek yogurt(optional)
Instructions
Heat ghee or coconut oil on medium heat and sautéed onion if using.
Add eggs to bowl, whisk with a fork until milky, then add to pan to scramble 2-4 minutes.
In a separate pan, cook bacon on medium heat until crispy.
Add eggs and bacon to coconut flour tortilla, along with smashed avocado or guacamole and optional add-ins.

Have a taste with this delightful healthy Garlic Herb Sausage!

Garlic Herb Sausage & Greens
Ingredients
1lb. Ground Turkey
2tsp. Fresh Sage
1tsp. Fresh Rosemary
1tsp. Fresh Thyme
½tsp. Garlic Powder
1tsp. Sea Salt
Instructions
Combine all ingredients except the oil and refrigerate for at least 30 minutes, overnight preferred.
Add the oil and shape into four patties.
Cook in a lightly oiled skillet over medium heat, about five minutes per side or until no longer pink in the middle.
Alternatively, bake at 400F for 25 minutes.
Serve hot.
