Confetti Cookies

Perfect cookies to celebrate Neopets 19th Birthday with! No?
This is an easy recipe! I ended up making this for my own surprise party - I thought we were gonna play board games and my husband did not want me to be suspicious by telling me to stop baking. Perfect birthday treat! Optional garnish; it is pretty without it!
Ingredients
2 c butter
1 c sugar
1 tsp vanilla
1 tsp salt
4 c flour
at least 1/2 c sprinkles (more for optional garnish)
corn syrup (optional)
Recipe
Beat sugar and butter together.
Incorporate vanilla, salt, flour, and 1/2c sprinkles.
Roll out and cut preferred shape.
Bake at 300*F for 8-12 minutes (based on shape)
OPTIONAL: When cool, brush a little corn syrup on a cookie and dredge it in a plate or shallow bowl full of sprinkles. You’re treating sprinkles like glitter and corn syrup like glue. Let dry.
NOTE: Using corn syrup to garnish will soften cookies and alter the flavor a little. But it is pretty!

Simple and delicious! Butter matters here! Because there are less ingredients, the cheapest butter may stand out in ways you might not like!

Walk the Plank

A ferocious beverage served in a stylish glass.
If you go off the picture, this is basically a negroni. Olive indicates dry, campari could cause red color, turned purple by a bluish glass. It was too easy. This is an attempt at something new. I have made a dry cocktail, and a sweet one which I found better.
Both utilize a Marilyn Monroe cocktail base. The dry swaps the grenadine out with Campari. The sweet swaps out the brut with cider. Having done both, my preferred is the sweet, though it is the farthest from the source material based off of visual clues.
Sweet Walk the Plank (better of the 2, imo)
Pour 1 oz apple brandy and 1/2 oz grenadine into a martini glass. Top with 4.5 to 6 oz of your preferred alcoholic cider.
Dry Walk the Plank
Pour 1 oz of apple brandy and 3/4 oz Campari or other appertivo into a martini glass. Top with 4.5 to 6 oz of brut.

I made the dry one first, but wasn’t too happy with it. It doesn’t come across as a memorable cocktail, but it’s closer to the source material in the sweet.
Now the sweet cocktail! That I can make again and again!

Request: Angel Hair Jacket Potato

Mmmm... starch.
Woe be upon you, for that is a very apt description of the final product! I don’t know who at Neopets thought of all the potatoes with unusual fillings, but I hope they are mentally in a better place now.
Weird jacket potatoes include tuna, calamari, carrot stuffed, ice cream topped, sugar sprinkled, and orange filled. Chili cheese jacket potato? Yeah, sounds good. Baked apple potato? Not so much.
This was my first request for the blog. Here you go, anon!
Recipe is so easy. Rub a potato in oil, drizzle some salt. Cut a shallow cross into one side. Bake for an hour at 400*F. For some extra crisp, force it open, put in some butter, sliced garlic, and Parmesan and bake it for 10 more minutes at 425*F
For the pasta, cook 1 box of halved cherry tomatoes in a pot with 4 cloves of garlic, salt, pepper, and a TBS of tomato paste. Once cooked, add in 1/2 a pound of angel hair and some sliced basil leaves. Top it with balsamic if you want some flavor.
Put your pasta in a potato and here is the abomination that results:

It IS starchy! Also, it’s really hard to stuff a baked potato with angel hair pasta. Something I would have never known with certainty, but probably would have assumed.

I pushed back my queue so this recipe comes out next. I had to eat it so now everyone has to look at it. That’s the rules.
I made two cocktails for Walk the Plank over at the Golden Dubloon, and I have pushed that back a week to spread out my posts. Also in the queue are confetti cookies, parsnip pie, and lemon lava cake.

The angel hair pasta jacket potato - carbs on carbs! - will likely be the direction taken. It is not too farfetched to put red sauce on a potato, because gnocchi. A caprese salad style pasta maybe?
I think the potato needs to be crispy and garlicky. With Parmesan, perhaps.

Coffee and Doughnuts Ice Cream

This recipe is my second ever neopets-inspired recipe. While it is not featured on Neopets, I feel like it could easily fit in!
I made coffee and doughnuts ice cream, which feels Neopian in the sense that I took two normal things and threw then together. Like the cheesesteak pizza, or the pomegranate doughnuts.
Ingredients
2 c milk
1/4 coffee grounds
2/3 sugar
6 egg yolks
1 tsp vanilla extract
1/2 tsp salt
6 to 12 doughnuts old fashioned glazed or glazeless cake doughnuts, cut into small pieces and frozen
Recipe
Simmer your milk in a medium or large sauce pan
Put your egg yolks, salt, and vanilla in a nonreactive bowl.
In a French press, prepare 1/4 to 1/2 c coffee grounds. Add as much milk that can fit. Strain coffee grounds. Alternatively, do a pour over.
Whisking constantly, add the coffee milk a little at a time to the egg mixture.
Return the egg mixture to your sauce pan. Heat on medium high until the mixture thickens. Remove from heat and let cool.
Prepare your ice cream maker. Churn until frozen.
Using a spatula, fold in the frozen chunks of doughnuts. Put in a container and move to the freezer.

Invisible Cookie

Its a pity you cant see the delectable cookie!
No one will take your cookies if they can’t see them.
Ingredients
1 c butter
1 c brown sugar
1/2 c sugar
1 tsp vanilla
2 eggs
2 tsp soda
1 tsp salt
2 1/2 c flour
1 c chocolate chips
1/2 c chopped walnuts
Recipe
Cream butter and sugars.
Beat in eggs and vanilla.
Incorporate flour, salt, and soda.
Mix in chips and walnuts
To turn invisible, loudly proclaim you are putting the cookie dough in the fridge for at least 1 hour.
Bake at 350*F for 10 to 12 minutes.

Whole Cheesesteak Pizza

Slices of steak and gooey cheese make a great combination!
This pizza features a red bell pepper sauce with additional caramelized peppers and onions on top! Little messy, some extra juice and oil came off the topping. But it was delicious!
Ingredients
Pizza dough (I use NYT’s normally)
2 whole, 1/2 sliced red bell peppers
1/2 green bell pepper sliced
1 onion, sliced and divided into 2 groups
3 medium tomatoes, wedged
3 cloves garlic
1 tsp salt total
1 tsp black pepper total
1/2 tsp oregano
olive oil
3/4 lb steak cut into thin strips. I used a thinly-cut chuck from Safeway. Sirloin is apparently the go-to but was really expensive.
8 oz cheddar, grated
Recipe
Broil the 2 whole red bell peppers, rotating to let the skin char. Let cool once skin is pulling away from the pepper.
Bake 1/2 of the sliced onion and tomato wedges in the oven at 400*F, about 15 or 20 minutes. Keep an eye on it.
Caramelize the green and red bell slices and remaining onion in a skillet with a little oil. Save for topping.
Peel the skin off the cooled red bell pepper and remove the stem.
Puree the roasted bell peppers, tomatoes, onion, garlic, 1/2 tsp salt, 1/2 tsp pepper, and 1 TBS tomato paste.
Season beef strips with 1/2 tsp salt and 1/2 tsp pepper. Cook on low until browned.
Spread the sauce on the pizza dough. Top with cheese, followed by beef, bell pepper slices, and caramelized onion slices.
Bake at 350*F for 20 to 25 minutes. Allow a little cooling before slicing so it’s not too goopy.

Sloth Spaghetti

Slimy and green...eww!
Heathyish. Whole wheat pasta with a brassica blend pesto! Flavorful and filling! Make vegan by replacing parm with some nutritional yeast, or omit altogether.
Ingredients
2 heads broccoli, trimmed to large pieces
1 bunch kale, de-ribbed and leaves washed
1 bunch basil
3 garlic cloves
1/2 c walnuts or cashews
olive oil, about 1/4 cup
1/2 c shredded parmesan
1 tsp salt
1/2 tsp pepper
juice of 1/2 a lemon
1 lb whole wheat pasta
Recipe
Bring a pot of salted water to boil. Do the following steps, and cook your pasta when the water is ready.
Steam your broccoli florets. Drain and cool.
In a small sauce pan of boiling water, cook your kale greens. Let cool. Drain and strain.
Toast your nuts in a frying pan or in the oven.
In a food processor, puree the nuts and garlic finely. Add in your kale, broccoli, basil and the juice of the lemon.
Once incorporated, pulse in parmesan, salt, pepper, and enough water olive oil to liquify it a little.
Pulse in 1/2 cup of pasta water to further liquify your pesto.
Drain the pasta and coat it in your pesto.

Purple Pasta

The wonderful cheese sauce on top makes it worth it no matter the colour.
Not as colorful at the picture. This is a beet pasta with a cheddar sauce.
Made the beet pasta following this recipe.
The cheese sauce was a roux of 1/2 c butter and 1/2 flour in a small sauce pan. Worked in 1 tsp black pepper, 1/2 tsp mustard, and 1/4 tsp paprika. One the roux was made, I added 2 c milk. Once incorporated, about 5 or 6 oz shredded cheddar cheese.

Pomegranate Doughnut

A freshly baked doughnut smothered with Pomegranate icing and fresh Pomegranate seeds.
There are less doughnuts than I remember on Neopets.
I tried getting a hold of the family doughnut recipe for this. I didn’t want to make this during the work week, so I used this baking blog instead. I will eventually link my great grandmother’s recipe. I made a batch with some ancestral doughnuts, and it tasted better, but my original photo is better.
The pomegranate glaze was a cup of powdered sugar, 1/4 tsp salt, a little vanilla, and enough pomegranate juice for it to come together

Look! I tried and the picture seems good? Doughnuts were tasty, too. Only glazed a few. I’m gonna make coffee and doughnut ice cream with the extras. Also made a cardamom sugar mix for the doughnuts.

Keel Haul

This extra strong cocktail is made from lime juice, bomberries and our secret ingredient.
The secret ingredient is obviously tequila, which I am basing on the name’s sound and also the meaning of the term keel hauling which is a form of torture. Which if that’s not drinking tequila, then I’m out of ideas.
Really good summer drink! I am saving this one. Plus the color was near spot on to the picture!!!
Ingredients
1 1/2 oz tequila
juice of one lime + a slice for garnish
3 oz pineapple juice
1/2 oz simple syrup
1/2 oz midori
1/2 oz blue curaco
a few drops of bitters
Put it all in a shaker with ice. Shake it over the shoulder and strain into a glass.

I’m making ancestral doughnuts today! It’s a recipe from my great grandmother that my grandmother had to write down because my great grandmother wouldn’t. The last time I had these was about 2 decades ago. My dad made a big deal of making them. He rarely cooked, but he was so excited for this recipe.

Turkey Croquettes

Stop hitting them with a mallet! I said croquette not croquet!
A way to use up leftover Thanksgiving dinner! Goes great with lingonberry jam
Ingredients
4 medium yukon gold potatoes
1 lb ground turkey
2 cloves garlic, minced
1/2 leek, sliced
1 tsp salt
1 tsp pepper
flour
3 eggs, beaten
breadcrumbs
oil for frying, alternatively an air fryer
Recipe
Boil your potatoes in salted water or chicken stock.
Push through a potato ricer into a large mixing bowl.
Sauté leek in a skillet until soft. Add to potatoes.
Cook turkey with your salt and pepper, breaking it apart with your spatula.
Add the garlic and stir to combine ingredients.
Shape into small balls onto a cookie sheet. Put it in the fridge to cool.
Once cooled, roll in flour, followed by egg, followed by bread crumbs.
Fry in oil until cooked on all sides.
