Super Star found in development files for The Legend of Zelda: Link's Awakening. It is unknown whether it would have been related to an enemy, as most Mario franchise references in that game, or if it would have been some sort of trade quest item, like the Yoshi Doll.

In the Super Mario 3D World game style of Super Mario Maker 2, it is possible to become stuck inside a crate if it falls on top of the player character in the manner seen in the footage. Despite crates normally being able to be picked up or broken, neither of those are possible from that position and the course must be reset to continue.

Error screen that appears in Mario vs. Donkey Kong for the GBA if too many objects are present in a course. This is not usually possible during regular gameplay but can be achieved with the unused level editor feature present in the game's data.

The kiosk demo for Super Mario 3D World + Bowser's Fury contains unused files for the motion, collision and other behaviors of the Blokkablok block snake enemy from Super Mario 3D Land, missing only its model. If the model from Super Mario 3D Land is imported into the files, the enemy works correctly.

Design from an officially licensed 2008 Mario T-shirt. Note that the mushroom in the image is actually a Mushroom Block from Super Mario Bros. 2, which unlike the vast majority of mushrooms in the Mario series, cannot be eaten by Mario and can only be thrown as a projectile.
Whether this is an oversight or a deliberate choice to imply that the Koopas are being kept away by throwing mushrooms at them is unknown.

An early preview of New Super Mario Bros. contained a curious block that is completely absent from the finished game. It appears as a rotating Yellow Block from Super Mario 64 until it is hit, whereupon it changes color to green, now appearing identical to a Metal Cap Block from that game, and dispenses a Super Mushroom.
Unfortunately, no other footage of this block is available so it is unknown what would have happened if it was hit again in its green state. It is possible that it was removed from the finished game since, while looking exactly like a preexisting block from Super Mario 64, it acts in a way that is so different that it might have confused returning players.

In Super Mario Strikers, the Super Team is a team composed almost entirely of identical robots called "Supers", and which is unlocked by beating them in the Bowser Cup.
Due to every team's goalie being a Kritter and the developers likely not wanting to spend time adjusting the Kritter's animations to a Super so that the team can be entirely made of Supers, a design compromise was made whereby the Super Team's goalie is a "Robo-Kritter" that has the same model as the regular Kritter, but robotic textures.
It is difficult to see the Robo-Kritter up close in-game. Above is a detailed look at the design.

Development files for Super Mario Kart contain what appear to be tests for various facial expressions of the Bullet Bill obstacle that appears exclusively in the Match Race mode (which, due to its unusual frontal-only view, resembles either a Chain Chomp or a Flame Chomp).
