Random thought I had:

The omori/undertale crossover fics I have seen put sunny in a similar role to frisk. Given how much of a shut in sunny is pre-cannon I think it would be funny + plausible if sunny only finds out about monsters years after they leave the underground. One of Sunny's friends filling in Frisk's role could also enable additional shenanigans
