Cookie Cake, with cookie dough frosting, topped with even more cookies.
Sharing this recipe because alot of people love it and ask me to make it. Not a recipe/food blog but here we are.
*Chocolate Chip Cookie Dough, you can use store bought or homemade. A store bought tub of cookie dough will yeild 2 cookie cakes. Or one of those large tubes will also work. You'll need around 4 cups of cookie dough for 2 cakes.
Preheat oven to 325°. Press room temperature cookie dough into a greased pan, I usually use two 9 inch pizza pans. Chill the cookie dough in the fridge or freezer before baking. Bake until golden on top (my time was around 15 minutes each. And I baked them one at a time) take cakes out and cool completely.
For the frosting:
◇1 Pint Heavy Whipping Cream
◇1 Pint EDIBLE chocolate chip cookie dough. Can either be store bought or homemade, but make sure its EDIBLE and safe for raw consumption.
◇1/2 cup brown sugar
◇1 teaspoon vanilla extract
Put the cookiedough and heavy whipping cream in a standmixer and beat on low/medium speed until they start to combine. Add the brown sugar and vanilla. Beat on medium/high speed until it starts to thicken and forms stiff peaks (it will be thicker than a regular whipped cream)
Pipe or spread the frosting over the cooled cookie cakes. The frosting yeilds enough for a 3rd cake easily, I usually store the remaining frosting in the freezer for later. (It tastes amazing frozen as a sort of ice cream treat)
For the cookie crumb topping:
I use store bought cookies, but homemade would also work. Recommended to use crunchy cookies for the topping. Crush/break cookies to add ontop.
