My entry into #worldcuisinepizzaweek 😁😜🤘... I headed off to Jamaica 🇯🇲 for this one! Sweet potato base loaded with slow cooked jerk chicken, coriander, scotch bonnet and bbq jerk sauce with added mozarella, cheddar and fior di latte 😋 absolutely a-mazing!! I would have added deep fried plantain slices on top if I lived in a City where it was accessible, but I live in Mid Wales... so no chance! 🤣👎Thanks for organising this Tim @scratchmadepizza ... it got me to think of new things to load up my dough with 👍😁👌

The dough was a 67%💧, 3% salt batch made with Caputo Nuvola flour which was left covered at RT for 7 hours before balling up an hour before use 😁👍

100% Biga... no idea on the hydration as had to add flour to get it to bind together... Dallagiovanna flour really doesn't like high hydration does it!? Biga made with the girls this morning... a quick and easy pizza pre-ferment. 1kg 00 flour, 450g tepid water, 5g active dry yeast, 5g honey. • Place flour in a large flat container • Dissolve yeast and honey in water in a jug • Pour water/yeast/honey mixture over flour then shuffle the container in circular & back/forth motions to achieve clumps of biga 'no stress'. Now for 24-48 hours in the fridge before starting to make the dough 👍 There...
