A huge part of growing up is to experience new things, meet new people and even go to other places far away from where you live. I thought I should do something different and break my boring routine

I have always loved the adventure of travel. The unknown, something different, something new. And I feel the same way today. I have been extremely lucky to continuously feed my passion and love of travel. But, why do I love traveling so much? Simply because it relax my feelings.

I love the excitement of it all. Feeling like an explorer, discovering a new land, a new language, new money and all the little challenges that go along with it. When I travel, I am more spontaneous and don’t live for the future or the past, just in the moment. Being impulsive and saying ‘yes’ to nearly everything is part of the fun.

Pork Monggo

Pork monggo is not your typical ginisang monggo dish because it was prepared differently. You just need to wash the beans after removing it from the packaging and cook it immediately – no soaking needed. This saves you time, which you can use to do other things.

I like the idea on how monggo dishes can stretch my budget. Mung beans are not expensive and a few cups of these along with meat and other key ingredients would be enough to feed a family of 6 (or even more).

Pork Monggo Recipe

This is a recipe for Pork Monggo or stewed mung beans with pork

Course Vegetable

Prep Time 5 minutes

Cook Time 45 minutes

Total Time 50 minutes

Ingredients

1 cup mung beans

6 ounces pork sliced into thin small pieces

1 Knorr pork cube

1 bunch spinach washed

1 cup malunggay leaves

2 medium tomato cubed

1 medium onion cubed

1/2 cup chicharon crumbled

4 cloves garlic chopped into small pieces

1/4 teaspoon ground black pepper

1 to 2 tablespoons fish sauce patis

6 cups water

3 tablespoons cooking oil

Instructions

Heat oil in a cooking pot.

Saute garlic, onion, and tomato.

Add the pork. Cook until the color of the pork turns light brown.

Pour water into the pot. Let boil

Add the pork cube. Stir.

Add the mung beans. Cover and adjust the heat between low to medium. Continue to cook until the mung beans becomes tender. Add more water, if necessary.

Put the malunggay leaves and spinach in the cooking pot. Stir and cook for 2 minutes.

Add ground black pepper and fish sauce. Cook for 2 to 3 minutes.

Transfer to a serving bowl. Top with chicharon.

My Incredible Grandmother

I consider myself very lucky to have who I consider the coolest, most generous and loving grandmother around. Yeah, everyone says theirs are 'the best,' but I'm serious - my grandmother are as good as it gets. She have all shaped who I am and make me want to be a better person every single day. I feel extremely blessed to say I have grown up with my incredible grandmother.

Thank you for standing by my side and supporting every decision I make. It's nice to know that as I'm deciding who I want to be and where I want to end up, I will have unconditional support and love from you.

Thank you for basically turning your homes into mini museums of our family. From baby to graduation pictures, she remind me of all of our memories and offer me a sense of comfort that I can't find anywhere else.

Thank you for raising my parents and instilling positive values like integrity, commitment and faith in them. Because of you, they've provided me with a loving home and continually prove to be the best role models I could ever hope for.

Thank you for making sure I never (ever, ever, ever) leave your house hungry. Whether it's a big holiday or just a pop-in visit, I'm always guaranteed to be treated like a queen and fed amazing food.

Thank you for showing me what it means to rely on God and practice my faith. Your constant prayers mean everything to me and have helped me through difficult times in life.

Thank you for teaching me to worship God first. Me and my grandmother, we have an officer in our Church.

These thank you's don't even begin to describe the love and gratitude I have for my grandparents. You all mean more to me than you'll ever know, so thank you for just being you, Mama.

My Own Travel

There is nothing quite like traveling, like seeing a new place for the first time or returning to a favorite place. People of all ages, from all countries, travel to foreign places for many different reasons – namely work, family and leisure. Whether by plane, train, ship or automobile, travel is generally a pleasurable experience, at least for the people who can financially afford comfortable and safe methods of travel. But it has more benefits than satisfying one’s need to make money, as well as to see loved ones and enjoy one’s self on vacation. There are other benefits of traveling that many people often overlook.

This picture is about my travel in Morong, Bataan last summer. It makes me feel happy because i saw anither beautiful place here in our country.

Travel reminds those paying attention that they are not the only ship in the sea, that this is a huge world and that they are only a small, insignificant pea in it. This is quite a humbling experience – to go to another country and see large numbers of peoples living differently, and coming to understand how large the crazy world actually is. When people who learn return home, they keep with them this perspective for the rest of their life and they benefit from this is knowledge and perspective.

My Wonderful Teacher

A teacher is the person who shapes the future of everyone by providing best education to her/his students. Teacher plays a great role in the education of every student.

A good teacher has many qualities and fully able to make his/her students successful in life. A teacher is very intelligent and know well that how to draw attention of students towards study. She uses creativity while teaching students so that students may concentrate.

Teacher is a good conductor of knowledge having lots of patience and confidence who take responsibility of the future of students. Teacher knows the ability of each and every student and tries for them accordingly.

Ma'am Bitancor, thank you for teaching me a subject I thought I could never understand or be interested in. Thank you for making learning fun.

Even though you were a strict teacher and held us to high standards, I know that I have learned more from your class than any other class I have had. You pushed me to do my best, and I am better for it now.

I consider you not only the best teacher I have ever had, but also the best mentor I have ever had. I learned a lot in your class because you took the extra time to explain things clearly. You gave me the extra help I needed.

Thank you for giving me your time. You have and will continue to be a great influence on me. Thank you for the great work you do and the huge impact you make in young people’s lives as a teacher.

Mrs. Bitancor, you are the most important things you ever taught me weren't the lessons about the class material, but the lessons about life that you taught. You have been a great mentor and role model for me. If all teachers were like you, there would be “no child left behind.”

If I could nominate you for teacher of the year, I would. You have had to do so many special things to help me learn the material last school year.

You are not just a teacher Ma'am. You are also a mentor and a friend. Thanks for all you do for me.

Most other teachers don’t look out for their teachers the way you do. Thank you for really caring about your students and knowing when there is something wrong. You are more than just a teacher.
