Not donuts... but had to share these low-key vegan cupcakes I made to celebrate Valentine’s Day. When I was growing up my family had a tradition of making strawberry cupcakes with candy hearts on top. Then we would doorbell ditch plates of them at friends’ houses. If there were any cupcakes or candies leftover, I loved munching on them almost as much as I enjoyed doorbell ditching them! I used regular boxed cake mix and frosting for these, just swapped the usual wet ingredients with a can of soda water so they could be vegan. My Recipe for Box Mix Cake Donuts:
Makes 24 donuts
20 minutes for prep time
45 minutes for baking time
Read below the line for the ingredient lists, instructions, and my thoughts on how it all turned out. Included are recipes for a glaze and frosting, which you can use based on your preference.
Donut Ingredients:
1 full box of cake mix (about 16 oz)
2/3 cup buttermilk
2 tablespoons oil
2 eggs
Glaze Ingredients:
2 cups powdered sugar
2 teaspoons vanilla
4 tablespoons milk
Alternatively...
Frosting Ingredients:
2 cups powdered sugar
2 teaspoons vanilla
5 tablespoons heavy whipping cream
Donut Directions:
Preheat oven to 350 degrees Fahrenheit
Spray 2 donut pans (6 donuts each, 12 total) with non-stick cooking spray
Empty the cake mix into a large bowl
In small bowl, whisk all wet ingredients
Add wet ingredients to dry ingredients and whisk until combined
Pour batter into a pastry bag (or ziploc bag with one corner cut off)
Fill each donut pan cavity about ½ full (erring on the side of less full)
Bake for approximately 10 minutes
Allow donuts to cool in the pan for 5 minutes, then remove from pan and place on wire rack to cool completely
Prepare the frosting while donuts cool
Glaze/Frosting Directions:
Whisk all of the ingredients, adding the milk/cream for your desired consistency.
Bathe the donuts in the glaze... or... dip the tops of the donuts in the frosting
Place the donuts on wire rack for glaze/frosting to set
My Thoughts:
This recipe is sort of cheating because it isn’t from scratch, but these do in a pinch when I don’t want to spend as much time making them. The consistency of the batter is different and prone to rising more which is why you want to avoid overfilling the pans like I did the first time.

These red velvet donuts were tasty but shaped more like mushrooms. And of course, they have a more cakey texture than I get when I make donuts from scratch.

The picture at the top (showing Birthday Cake Donuts with Sprinkles) has the thick frosting made with heavy whipping cream. It’s much thicker and doesn’t coat the entire donut, but I enjoyed it a lot. And the usual glaze is also simple to make and turns out nicely (pictured below on a Strawberry Cake Donut).

As you can see, the glaze is a lot thinner than the frosting and creates a protective barrier that locks moisture into the donut. Whether you are using the glaze or frosting, I think it helps to bring out the flavor of the donut so I tend to use one or the other. 
This recipe has pictures of donuts made with three different flavors of cake mix (Birthday Cake, Red Velvet, Strawberry) and I’ve made donuts with Spice Cake mix as well, and using different brands of cake mix. The flavor/brand doesn’t require any different ratio of ingredients, so go ahead and use your favorite cake mix for this. As promised here are the recipe books I own. So far I’ve only used the untested recipes in The Donut Cookbook, which I’ve had the longest. If you would like some entertaining reading, check out the one star reviews for it on Amazon... 😝 I cannot recommend the book to anybody, but I’ve had fun trying it’s recipe and making my own improvements. I am very excited to try out the new Donuts recipe book I bought last week. It has recipes for yeast/fried donuts and cake donuts, as well as recipes for standard donut toppings and glazes. It looks really well edited and I suspect that the recipes have been tested before publishing haha. Pumpkin Cake Rings with Dark Chocolate Ganache - An update on the last donuts I made. It’s been a while since I’ve baked, so I figured I should try to fix the #pumpkindonut recipe I used last time. I added more flour and pumpkin purée and used a #chocolateganache instead of the original frosting recipe. As you can see, these turned out way better. Dark Chocolate Frosted Pumpkin Cake Rings - The “frosting” didn’t do anything magical overnight, but my husband decided to dip the cake rings in the chocolate sauce anyway. 😆 Here is the finished product packed up and ready for the drive to our grandparents’ house for Easter dinner.
