is Apollo truly blond? I found that greek ethnic characteristics are dark hair and olive skin, just a little group of them are white and blond. I think that the fact Apollo is the god of sun not means he is blond, for example, Ares is the god of war but he doesn't take the victory in wars all the time.

Well I don’t think Apollo was given golden hair because he was seen as the sun god. As I had once read, golden hair (and gold in general) was a symbol of high status, nobility (divinity) - something that set the people possessing it apart from most of the crowd. Apollo is more frequently described as having golden hair, but he’s not the only one. Leto, Demeter, Dionysus are also sometimes seen having such hair. Among mortals, Achilles, Helen also have golden hair, this is to show that they are extraordinary, and different from rest of the mortals. Anyway, that’s all my knowledge on this topic. If you have further questions, you can ask @coloricioso about it, who is much more knowledged than me about ancient Greeks.
