Interesting! In my opinion, some of the things you mentioned is why the couple is so popular:
1) Good kind of surprise: Yes, it came from nowhere, from the fact that Toriyama wanted a second generation of half-saiyans and Vegeta was there, and he was well-liked by the fans, and Bulma had been there from the very beginning - and they have this interesting characteristic of not making sense as a couple (they’re so different!) and making all the sense in the world (they are so similar!). I remember when Future Trunks revealed who he was, my reaction was: “WTH?? Wait. I am kind intrigued by the idea of these two together. How did it happen? How would their life together be?” - so there you had romance, and mystery, and even comedy.
2) They are canon, but we don’t know much about them: The fact that we didn’t see how they fell in bed together became such an intriguing mystery that had resulted in so many fanfics about THOSE THREE YEARS, and the following SEVEN YEARS, we see tidbits from their lives in the anime/manga but nothing that would explain the whole picture and filling up the blanks turned out to be quite fun.
3) And also it’s a little bit like the Beauty and the Beast. Vegeta’s arc was the closest thing to “classical storyline” that you can find in Dragon Ball, in the sense of a bad man that gets redeemed. The fanfics about V learning to become a father to Trunk are adorable to itself (and to Bulla as well, in which he’s already quite a decent father/husband).
4) Also, all the possibilities: Namek AU? Time travels AU? Bulma gets to wish for his ideal boyfriend/prince and he appears!
I’ve always found it fascinating how in Dragon Ball, a series with a cast that’s 95% buff dudes who constantly loose their shirts while fighting each other, by far the most popular pairing in the entire fandom is… the very canon and very het ship of Vegeta/Bulma.
Like, even on ao3, where slash tends to be far more over-represented than other websites, Vegebul has double the amount of fanfics than any other ship (even more than Goku/Vegeta, the hero/rival ship, which is THIRD in popularity on AO3 of all places!!).
And it’s really interesting because, technically speaking? Bulma/Vegeta is a pretty poorly developed ship in canon. It’s literally a crack couple Toriyama threw together to give Vegeta a baby-mama, a couple that had little to no build-up or foreshadowing in the manga and ultimately broke up what had been up to that point the series’s longest-lasting and most prominent couple. A break-up SO devastating, it permanently reduced one half of the ex-couple to eternal irrelevance, who only gets screen time these days to be mocked or bashed.
And yet somehow this kooky crackship is the flagship of the Dragon Ball series.
I think about this a lot, guys.

DID YOU KNOW??
Relationship Tags on Ao3 are made for people who want to search for a specific pairing. So when you tag something there (and it CAN be multiple) it better be a focus. There are some authors that have an over-arching story that features multiple pairings. That’s fine. But if you have one focus and then the other pairings are kinda just there, in the background, not the focus at all, they exist but you’re not worried about giving them much attention, or they’re barely mentioned, they’re a setup for a breakup to lead into another pairing, etc…
