Yesterday’s dinner! 👀 Wee little fried shrimp, sautéed cabbage, and my riff on Charleston red rice. Not insanely authentic since I made it Puerto Rican by adding sofrito but I did use Roger Wood sausage because that’s the only sausage that belongs in red rice. 😉 Surprisingly, this was my first time making red rice at home but I love that it always reminds me so much of the rice dishes I grew up eating. High five for a solid diaspora moment courtesy of my favorite kind of Friday takeout plate. No recipes here, just vibes. 👌🏽 . . . . #sofritoproject #puertoricanchef #chsfood — view on Instagram https://ift.tt/3D5I6CT

Thanks to seeing @kierawrr’s gorgeous cheeseburger dumplings the other week, I wanted to make my spin on them pero in empanada form (she totally gets credit for this genius move, btw). These came out so damn good! Everything I love on a cheeseburger but stuffed into dough and deep fried. I really do love how each culture has a form of dumpling or turnover in its cuisine. And it’s dope to see all of us so connected by them. Want the full recipe? Join my @patreon. New recipe on the blog! 🔥 Whipped up these super delicious Ginger-Scallion Pork Patties with @spicetribe’s Long-Tail Sunset spice blend the other day. Tons of depth, heat, and a tang thanks to coconut, Thai chili, tamarind, and lemongrass. Y’all. You’re definitely gonna want to make these as soon as humanly possible: the patties taste just like pork dumplings without the wrapper. Perfect for a quick weeknight meal when paired with coconut-ginger rice and a sautéed veggie like zucchini. Totally missed the #nationalguacamoleday roundup yesterday but let’s be real, with the algorithm would you have seen this post anyway? 🥴 I love all things aguacate and in my opinion, guacamole is always best when it’s kept simple. Personally, I like my guac very green: no tomatoes, no red onions, and no randomness. Don’t put peas in my guac, bro. I’m serious. Pro tip: put a little bit of fresh sofrito in your next batch, ditch the tortilla chips, and use plátano instead. Shout out to the @thekitchenista for our shared love of plantain and guacamole. She just gets it! 🤌🏽 Search the blog for my spin on this amazing dip and you won’t make it another way again, I promise. Anyone who has tried my guacamole will agree! 😏 . . . . #sofritoproject #ontheblog #nationalguacamoleday #caribbeaneats #puertoricanchef #chsfood #chsfoodwriter #foodwriter #foodculture #shareyourtable #thewayweeat — view on Instagram https://ift.tt/3lyhhA3

New on @patreon: these sweet little guava and cheese parfaits are now live! Yay! 👏🏽 Layers of Maria cookies, a tangy whipped mascarpone cheese mixture, and guava jelly all come together for a familiar sweet tooth craving. As y’all know, I’m not really big on sweets but my love for guava and cheese has always been strong. After a few rounds of testing, these came out just how I imagined. Ahh, the perfect topping-to-chip ratio! It does exist. Long loved by nacho enthusiasts everywhere. 😍 Personally, I’m not a fan of piling up chips into a mountain and then drowning its peak in toppings because that means when everything gets eaten off the top, there’s nothing left for the chips on the bottom. Distribute the wealth, folks. Literally and figuratively. 🤌🏽 Nothing like crushing a sheet pan full of generously covered and perfectly layered nachos with your loved ones (recipe’s on the blog for those who want to make this soon). What does your perfect serving of nachos look like? Let me know in the comments! 👇🏽 — view on Instagram https://ift.tt/2X7bBoz

My last vacation was a trip to Seattle and Vancouver back in January 2020, where I absolutely fell in love with the food scene, particularly all of the hole-in-the-wall food spots around the two cities. Most notably, was the Kauai Family Restaurant in Seattle where I crushed a to-go plate of loco moco after partying a little too much the night before. Beef patties smothered with brown gravy on top of white rice and topped with a fried egg. Perfect hangover food! 😅 Each culture has their own partying cure and I really love how similar both Hawaiian and Puerto Rican foods are (thanks to the many chats and lessons with my culinary school friend Cherelle). I talk more about her, what she taught me in our culinary school days, and shared my take of loco moco over on @patreon today. Link in bio to join me! ♥️ — view on Instagram https://ift.tt/3n9fFiW

And another one! 👏🏽 Head on over to the blog to get your hands on this Spiced Sweet Potato Wedge recipe courtesy of my ongoing partnership with @spicetribe. I wanted to make a simple and relatively quick side dish (along with a cool and tangy dipping sauce) using their Marrakesh Sitar spice blend. Similar to the warming flavors of ras el hanout, ginger, cinnamon, cardamom, allspice, and more punch up the simple sweet potato in about 30 minutes flat. Click the link in my bio for the full recipe! Also, how do y’all enjoy preparing sweet potatoes? Hey, y’all. 👋🏽 I’ve been doing alright. A simple PSA: entitlement aimed towards content creators is getting out of hand. 🧐 It doesn’t show up often (I’m truly thankful for the majority of you who don’t do this) but lately, I noticed that it’s been ramping up. I’m certain it’s due to how everything has mostly been a collective dumpster fire for many of us and people are simply lashing out. But let’s establish a few boundaries for those who find it necessary to type out “recipe?” and hit send before thinking of what that really means to me: ✨I am a whole ass person behind this account. Simple pleasantries go a long way if you have somehow managed to find your way in my DMs, especially since I am not named Google. A quick hello does wonders when you’re wanting me to provide free labor. ✨I am not a machine that lives on your phone to churn out free recipes for you. Granted, I absolutely love what I do. And I’m very passionate about it. What I don’t love? Folks who feel entitled to content from me and literally nothing else. Sometimes, I get burnt out and uninspired. Life happens outside of this phone. I delete apps to force myself to sit my ass down and take a break. And this is all totally normal and okay! So if you want a new recipe while I’m taking a break, hit my Cash App and we can work from there. Otherwise, you’ll get the free content when I decide to share it. ✨My DMs are entirely too chaotic and I don’t check the request folder because it’s mostly spam, angry people who found an essay I wrote a while ago who find it necessary to tell me that they’re angry, or creepy dudes. So if you want to work with me and have a legit business inquiry, hit the email button on my profile. As I’m getting back into the swing of work things again, I wanted to re-establish these boundaries for the new folks here. I run a tight ship when it comes to how I’m treated and respected (by folks and brands alike) so tough shit if that makes you feel a certain way. 🤗 To my lovely @patreon babies, I have a brand new post for you about this amazing pepper mill and some other kitchen tools I’ve been enjoying recently so go check it out. New recipes are coming for y’all soon! ♥️ — view on Instagram https://ift.tt/3gItYXr

Y’all know I love a good and crisp vegetable moment, but sometimes you just need a bowl of pure comfort and tenderness. Especially nowadays. 🥲 Growing up, I’d always get plates from my friends’ grannies to bring home for my mom and family, so I wanted to share my take on a Southern classic that was always part of a solid meat and three plate. 🤌🏽 Just hit the bowl with a little smoked sea salt and some hot sauce and you’re golden. Anyone else not a huge fan of really lightskin foods? Lol! You know what I mean, right? 🤔 I love a good char on vegetables, crispy and very burnty edges on eggs, and toasting up rice before it steams, which is what I did here for my homemade take on the classic box of rice-a-roni. 🔥 Ditch the boxed stuff and make your own right at home! It’s much simpler to make than you think. I’ve shared two brand new recipes on the blog today for y’all so head on over and check it out! Summer on a plate! 🌞 Decided to play around with my food today and made myself a quick squash salad. Smeared an herby Greek yogurt dressing I whipped up onto the plate. Topped it with ribbons of shaved yellow squash, blanched haricot vert, scallion, and a teeny bit of cilantro. Drizzled some good extra virgin olive oil and a sprinkle of smoked sea salt. No recipe, just vibes this weekend. 🍃 . . . . #sofritoproject #summersalad #squashsalad #puertoricanchef #chsfood #chsfoodwriter #foodwriter #foodculture #shareyourtable #thewayweeat — view on Instagram https://ift.tt/3k1MkUq
