A couple weeks ago I showed what looked like tamales. Sure, on the surface they looked like tamales, but inside corn husks is better. They’ve been vacuum sealed and have been inside a fermentation box. The box was heated up to 104°F and allowed to remain at that temperature for about 60 hours. After the 60 hours, I checked to make there wasn’t too much moisture inside the sealed husks. The ones that had water droplets were opened and allowed to dry. Once they were dried, they are vacuum sealed a second time. The temperature is then reduced to 85°F, and allowed to sit in darkness for 4 months. April 20th 2020 is gonna be quite special.
