Where are my basic avo toast girls at ? 🥑 🙋🏼 Today was a big celebration for my family back in Paris but I couldn’t make a day trip so my friends took me an a surprise brunch with avo toast, chai and spéculos spread brunch to make me feel better ☀️ and it doesn’t hurt that Le Pain Quotidien is one of my go to address back in Paris too

It’s a homemade cereal kind of morning. I went for both rawnola and crispy granola today with lots of juicy fruit. I started my day right with a morning run and now four hours after getting out of bed I am eating my favourite meal of the day, breakfast! I don’t have too much planned for this Sunday but I want to do a lot of reading and start on my journal for the week because I keep forgetting to fill it out. I had such a good day yesterday and I hope this positive attitude continues on through the week. Of course I have woken up with horrible back pain that makes it very difficult to stand or really do anything but I won’t let that get in my way of a good day. I hope everyone else is having a decent weekend too 🦄

Lunch today was another bowl of veggies, tofu and potatoes 🥔 I like my food really plain and simple so I just added a garlic sauce on top and sriracha (my everything).

Mint Chocolate Nicecream by @earthyandy 🍦
What You Need:
1 cup cashew
1 14-ounce cans coconut cream OR full fat coconut milk
¼ cup cacoa nibs/koko samoa OR Vegan chocolate chips
¼ cup coconut sugar
½ cup fresh mint leaves
¼ cup baby spinach (you can’t taste it, its just for color and added nutrients)
optional: 1 tablespoon juiced mint leaves

How To Make:
PREP THE NIGHT BEFORE: Blend mint and spinach and coconut milk together until completely smooth. Then add all ingredients except cacao nibs until smooth and freeze in a ziplock bag laying flat or into ice cube trays the night before . Once frozen break into chunks and blend once more in blender . At the end mix in cacao nibs and put back in freeze for an hour + ! Scoop up your creamy dairy free guilt free heavenly ice-cream!
